How To make Barbecued Alligator Tail 1
4 Alligator tail steaks,
-about 3/4" thick Milk for marinade 1/2 ts Fresh ground black pepper
1/4 ts Cayenne pepper
1 tb Rosemary
Red pepper flakes Place milk in a deep bowl, add pepper flakes and rosemary. Season meat with black and cayenne peppers. Place meat in the bowl, add milk as needed to cover. Let marinate 3-4 hours. Remove meat from marinade, discard marinade. Pat the meat dry. Re-season the meat, if desired, with black and red peppers. Add salt to taste, if desired. Brush meat with olive oil to reduce sticking, and grill over hot coals, or over medium heat in a gas grill for about 10 minutes each side, brushing with oil again when turning.

Here are step-by-step instructions for cooking pre-marinated Louisiana Crawfish Company alligator legs on an outdoor grill:
1. Preheat your grill to high heat. Clean the grates thoroughly so that the alligator legs don't stick. ????
2. Take the alligator legs out of the refrigerator and let them come to room temperature for about 20 minutes. ????
3. Place the alligator legs on the grill and let them cook for about 8-10 minutes on each side.⏲
4. Use a meat thermometer to check the internal temperature of the alligator legs. They should reach an internal temperature of 165°F (74°C). ????
5. Remove the alligator legs from the grill and let them rest for 5 minutes before serving. This will allow the juices to redistribute and the meat to become even more tender.????
6. Serve with your favorite dipping sauces or sides. Enjoy! ????

Cooking Directions
Prepare gator tail in manageable pieces then season with favorite
2 TBSP Creole Seasoning
2 TBSP Garlic Powder
2 TBSP Onion Powder
Wet Marinade
2 cups of buttermilk
1 egg
1 Tsp creole seasoning
1/4 cup Franks red hot wing sauce
Let gator tail Marinate for at least 30 mins
Flour Mix
2 Cups of Flour
2TBSP Creole Seasoning
1 1/2 cup of Mayo
1 tsp garlic powder
2 TBPS cup ketchup
1 TBSP worcestershire sauce
1 TBSP Hot sauce
pinch of salt
1 tsp lemon juice or half lemon squeeze
Refrigerate for at least 30 Mins
Heat oil to 350 degrees. Cook 4-5 mins until golden brown.

Get your smokers fired up! It's time for some Cajun Gator Filets! Gator has grown a lot in popularity in recent years, and for good reason.... they're delicious. If you can't find Alligator meat locally, you can order meat or even whole Gators online. Or you can call the Landry family and go on a guided hunt in Louisiana (yes that's a real thing). However you can get your hands on some Gator meat, do it ASAP, it's well worth it! I'd take these filets smoked over fried any day of the week.

INSTRUCTIONS:
-Brine your filets in fridge overnight- water, salt, brown sugar
-Rinse off and pat dry the next day
-Cover your filets in your choice of cajun seasoning- you can find my homemade recipe here:
-Get your smoker to temp- between 250-275f
-Use your choice of wood- im using hickory
-Smoke your filets for 30minutes - 1hr (or longer depending on thickness) if you're more comfortable with internal temp- go for 165f- I pulled mine after about 45 minutes
