Written Ingredients:
BBQ Chops:
Lamb Chops 1kg
Salt 1 tsp
Mustard Paste 1tbs
Lemon Juice 1
Red Chili Flakes 1tsp
Red Chili Powder 1tsp
Garlic Paste 1tbs
Oil 4tbs
Cumin 1.5tsp
Coriander 1.5tsp
Marinate for 4 hours in Fridge
Bake 30 minutes in oven

Grilled Lamb Chops with Rosemary Salt

Total: 1 hr 25 min (includes marinating time)

Yield: 4 servings
Ingredients
2 tablespoons fresh oregano leaves
3 cloves garlic, minced
Zest of 2 lemons
Juice of 1 lemon
Olive oil
8 frenched lamb loin chops (about 2 pounds)
Kosher salt and freshly cracked black pepper
1/4 cup flaky sea salt
1 tablespoon finely chopped rosemary
Directions
Mix together the oregano, garlic, lemon zest from 1 lemon, lemon juice and 1/4 cup olive oil. Sprinkle the lamb chops with kosher salt and pepper and add to the marinade, thoroughly coating. Allow to marinate in the refrigerator for 1 hour, and up to 6 hours.
Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
In the meantime, mix the flaky sea salt, rosemary and remaining lemon zest. Work the mixture with your fingers, releasing the oils from the zest and rosemary. Remove the lamb chops from the marinade and place on the direct heat side of the grill. Char on both sides and cook to an internal temperature of 125 degrees F for medium-rare, about 6 minutes. If the lamb chops become too charred, but the internal temperature is still low, move them to the indirect heat side of the grill to finish cooking.
Remove from the grill and let rest for 5 minutes. Sprinkle with the lemon rosemary salt before serving.

Grilling Lamb Loin Chops | Easy Charcoal Grill Recipes | BARLOW BBQ

GRILLED LAMB LOIN CHOPS RECIPE
1 pack of lamb loin chops
Your favorite seasoning or dry rub
???? NOTE lamb comes from one of three places: Australia, New Zealand, or America
Lamb from Australia and New Zealand is smaller and raised on 100% grass fed diet. The meat is leaner and may have a slightly more gamey flavor. A little more difficult on the grill.
Lamb from America is bigger and while they are also grass fed, lambs are fed corn for 30 days leading up to slaughter. This results in meat that is more fatty with more of a beefy flavor. Easier to grill.

If there is any moisture on the loin chops, pat dry with a paper towel. Season the chops with your favorite dry rub or seasoning. Set in the fridge for a few minutes or up to 30 minutes to let the seasoning set.
In the meantime, set up your charcoal grill for direct cooking over medium high heat. When charcoal is lit, dump it into the grill, and using tongs, spread the coals evenly across the bottom. Set your grill grate in place. Oil the grates with a paper towel or use some cooking spray (lightly!).
Place the loin chops on the grill over direct heat being sure to turn periodically to get an even sear on both sides. This won't take long, so be prepared to work quick. When the chops reach an internal temp of 125-130, remove from grill and let rest for 5 minutes. The internal temp will continue to rise during the rest (note: the ideal final temp should be around 135).
