Buttermilk Drop Biscuits
Buttermilk Drop Biscuits
These buttermilks drop biscuits are quick and easy to put together as they require no folding, kneading or cutting. Just mix, drop, bake and enjoy! They have a tender and fluffy interior and a slightly crisp exterior. I love drizzling these with Lyle’s Golden Syrup after baking and enjoying them warm with butter and jam.
Makes about 6-8 biscuits
Ingredients
2 cups flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 tbsp cold salted butter
3/4 cup cold buttermilk
1/2 cup cold heavy cream
1-3 tbsp extra cream as needed
Lyle’s Golden Syrup or honey for drizzling
Directions
1. Preheat the oven to 425 degrees Fahrenheit and line a sheet pan with parchment paper or a silicone mat.
2. In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt to combine.
3. Grate cold butter on a box grater and add to flour mixture. Use fingers to work butter into the flour until the mixture resembles coarse sand.
4. Stir in the buttermilk and cream and gently combine until a soft dough forms. Add more cream as needed to bring the dough together. Do not overmix.
5. Drop the batter into about ¼ cup sized mounds using a cookie scoop or two spoons onto the prepared baking sheet- leaving space between them. This makes between 6-8 biscuits.
6. Chill in the fridge for 10 minutes, then remove and brush with a little more cream.
7. Transfer to the oven and bake until the biscuits are golden brown around the base and lightly browned on the surface, about 15-20 minutes.
8. Remove the biscuits from the pan and place onto a wire rack to cool slightly.
9. Drizzle with Lyle’s Golden Syrup or honey.
10. Enjoy warm ????
Tips
1. Ensure that butter, heavy cream and buttermilk are very cold.
2. These biscuits can be made just using buttermilk. If you don’t have heavy cream on hand, just brush the tops with more buttermilk or milk.
3. You can use a food processor to work the butter into the flour mixture. Just pulse until you get to the desired texture, then transfer to a bowl and stir in the wet ingredients.
4. If you live in a cold climate, you may not need to refrigerate after scooping onto the pan. If your room temperature is a bit warmer, chilling the dough will help the biscuits to retain their shape while baking.
5. These biscuits can be made sweet or savory by adding spices, dried fruit, nuts, cheese and herbs- so be creative!
