[簡易湯種(燙種)]Utane Method
材料:(可做出約90g燙種)
Ingredients (for about 90g Utane dough)
1.高筋麵粉40g Bread flour
2.95度以上熱水50ml Above 95C Warm water
[黑麥麵包]Bushman Bread
材料: Ingredients
1.高筋麵粉 150g Bread flour
2.全麥麵粉 80g Whole wheat flour
3.雞蛋 50g Egg
4.牛奶 40g Milk
5.水40g Water
6.黑糖蜜 50g Molasses
7.黑糖 25g Brown sugar
8.鹽 1g Salt
9.可可粉 5g Cocoa powder
10.黑麥芽粉 8g Dark malt powder
11.簡易燙種 90g Utane dough
12.即發酵母4g Instant yeast
13.無鹽牛油 25g Unsalted butter
14.粟米粉 少許Cornmeal

Graham Cracker Crumbs
This simple skill video demonstrates a good method & formula for a homemade graham cracker crumb(s) preparation. This item can be used for lining baking pans for cheesecakes, pies, tarts etc… This mixture can also be mixed or blended with cookie crumbs to create other taste profiles as well as being used as a “sprinkle” or ice cream ingredient. In some cases, you can apply this method exclusively to cookie crumbs without graham crackers.

The Best New York Baked Cheesecake from Scratch (2021) - You'll Love It!
This is THE best New York baked Cheesecake recipe you'll ever try -- hands down! This was one of my best-selling cakes and so popular by the slice. This recipe is for a medium to heavy density mouthfeel but it’s not too rich! I demonstrate how to make the Graham Cracker Crust as well. If you have a base crust already you can skip ahead to just making the cheesecake batter at 7.02minutes. All recipes in metric and US measurements.

METHOD & RECIPEs
Use a 9” or 10” round springform pan (both will work)
Graham Cracker Crust Recipe
125g (1 1/4cups) Plain flour
65g (1/2 cup) Wholewheat flour (or wholemeal flour)
20g (1/4cup, scant) Wheat germ
1t Baking Soda
½ t Salt
1t Cinnamon
125g (1.1 sticks or 4.4oz) butter, softened
50g (1/4 cup) Brown sugar
10g (1 1/2teaspoons) honey
Preheat oven to 180°C or 350°F.
Bowl - Mix dry ingredients together
Mixer with paddle – beat butter, brown sugar, and honey on medium speed until pale and fluffy, scraping down sides of bowl.
Reduce speed to low. Add the flour mixture and mix until combined.
Spread cookie crumbs into springform pan and press evenly across base until compacted.
Bake until light golden brown for 15-20min. Cool completely. Wrap springform pan with aluminium foil.
Cheesecake Batter Recipe
675g cream cheese
285g sour cream
215g white sugar (caster or granulated)
15g plain flour
75g heavy cream (also called fresh cream, pouring cream or whipping cream)
1T vanilla essence (or seeds from one vanilla pod)
2 eggs, whole
4 egg yolks (save egg whites for an omelette or macarons!)
Preheat oven to 150°C or 300°F.
Mix flour into sugar by sifting or use spoon so all the flour lumps are gone.
Mixer with paddle - Beat cream cheese and sugar mixture until smooth and creamy. Scrape often. Add sour cream, beat and scrape bowl.
Add eggs, 1 at a time, beat and scrape bowl well. Add vanilla & cream, mix well and scrape bowl. Pour mixture into cooled crust.
Bake in a boiled water bath for 2 hours or until the middle looks like a tight drum. Turn off oven and rest cheesecake for 1hr, no opening the oven! Take out, remove foil and chill for at least 4 hours or overnight.

Full written recipe for Cheesy tava paneer hot dog
Prep time: 15 minutes
Cooking time: 15 minutes
Serves- 12-14 hot dogs
For the paneer filling
Ingredients:
• Oil 1 tbsp
• Jeera (cumin seeds) 1 tsp
• Ginger garlic paste 1 tbsp
• Green chillies 2 nos. (chopped)
• Onion 3 medium sized (chopped)
• Capsicum 1 medium sized (chopped)
• Powdered spices:
1. Turmeric powder ½ tsp
2. Red chilli powder 1 tbsp
3. Coriander powder 1 tbsp
4. Pav bhaji masala 1 tsp
• Tomatoes 3-4 medium sized (chopped)
• Salt to taste
• Ketchup 2 tbsp
• Red chilli sauce 1 tbsp
• Garam masala a pinch
• Paneer 350 gm
• Fresh coriander 1 tbsp
Method:
• In a wok heat oil, add jeera and allow it to crackle, further add ginger garlic paste and chopped green chillies and sauté for a minute on medium flame.
• Add chopped onions and cook on medium high flame until they are translucent.
• Add capsicum and sauté for 1-2 minute.
• Lower the flame and add the powdered spices, mix well and cook for a minute.
• Increase the flame and add tomatoes, salt to taste, ketchup, red chilli sauce and garam masala a pinch, cook until the tomatoes are mushy.
• Add the paneer, mix gently & cook for 3-4 minutes on medium high flame, finish with some freshly chopped coriander leaves. Paneer filling is ready. Keep aside to be used as a filling.
For caramelized onions
Ingredients:
• Oil 1 tsp + butter 1 tbsp
• Onions 5-6 medium size (sliced thickly)
• Salt a large pinch
• Sugar a large pinch
Methods:
• Set a pan or wok on high flame, add butter & oil, further add thickly sliced onions, a large pinch add salt & sugar, stir lightly, let them sit and cook until the onions get some color.
• Do stir them in intervals but avoid too much stirring, and allow the onions to cook and get their own color. Keep the flame to medium high.
• Your caramelized onions are ready, keep aside to be used a topping in the hot dog.
For cheese sauce
Ingredients:
• Processed Cheese 250 gm
• Butter 2 tbsp
• Milk 50-100 ml
Methods:
• Set some water to boil in a vessel. Place a bowl on top to form a double boiler.
• Now add in the cheese, butter & some milk. Start whisking and let the cheese melt.
• Add the milk gradually & while whisking continuously.
• Once the cheese has melted completely & the cheesy dip has its thick consistency you can now serve it.
• You can store it in the fridge but the dip tends to solidify a bit. You can run it in the microwave oven for a few seconds and you are good to go.
Tip: If you have a microwave oven, you can avoid the double boiler method & add the cheese butter and milk in a bowl, whisk and give 30 second heat waves and mix until you achieve the right consistency to make the dip.
Assembly
Ingredients:
• Hot dog buns 6 nos.
• Butter 1 tbsp (For toasting hot dog buns)
• Masala Paneer filling
• Caramelized onions
• Cheese sauce
Methods:
• Take the hot dog bun and make a slit to divide in two equal halves like we do for vadapav.
• Set a pan on medium heat, add butter and toast the bun on both the sides until light golden brown in color.
• Now, spread a dollop of cheese sauce over the toasted hot dog bun and add the paneer filling, top it with some caramelized onions, and drop good amount of cheese sauce over the filling, close and the cheesy tava paneer hot dogs are ready. Serve them hot with some hot crispy fries and ketchup or any sauce of your choice.

Ingredients:
Chicken Filling:
-Kisan Sunflower Cooking oil 2-3 tbs
-Zeera (Cumin seeds) 2 tsp
-Adrak (Ginger) crushed ½ tbs
-Lehsan (Garlic) crushed 1 tbs
-Tamatar (Tomato) chopped 2 medium
-Pyaz (Onion) chopped 1 medium
-Hari mirch (Green chillies) 3
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp
-Dhania powder (Coriander powder) 1 tsp
-Garam masala powder 1 tsp
-Soy sauce 2 tbs
-Lemon juice 1 tbs
-Chicken qeema (Mince) 500g
-Hara dhania (Fresh coriander) chopped handful
Prepare Dough:
-Fine Atta (Fine flour) sifted 2 & ½ Cups
-Maida (All-purpose flour) sifted 1 Cup
-Namak (Salt) 1 tsp or to taste
-Dahi (Yogurt) ¼ Cup
-Water 1 & ¼ Cup or as required
-Kisan Banaspati 1 tbs
-Kisan banaspati 2-3 tbs
-Kisan banaspati ½ tbs
-Kisan banaspati ½ tbs
-Kisan banaspati 2-3 tbs
-Anda (Egg) whisked 1-2
-Mozzarella cheese grated
Directions:
Prepare Chicken Filling:
-In a wok add cooking oil, cumin seeds & mix well.
-Add ginger, garlic & mix well for 30 seconds.
-Add tomatoes, mix well & cook for 2 minutes or until tomatoes are soft.
-Add onion, green chillies, mix well & cook for 2-3 minutes.
-Add salt, red chilli powder, coriander powder, garam masala powder, soy sauce, lemon juice & mix well.
-Add chicken mince, mix well & cook for 3-4 minutes.
-Add fresh coriander & mix well.
-Mash the mixture with the help of masher & cook on high flame until it dries up (2 minutes).
-Let it cool completely.
Prepare Dough:
-In a bowl add fine flour, all-purpose flour, salt & mix well.
-Add yogurt, gradually add water, mix well & knead until dough is formed.
-Add ghee & grease the dough with it, cover & let it rest for 15 minutes.
-Add ghee in a tray & spread evenly with the help of brush.
-Grease hands with ghee,take a small dough (130g), make a smooth ball & place on ghee greased tray. Brush ghee over the dough balls, cover with cling wrap & let them rest for 10 minutes.
-Grease the dough mat with ghee, place a dough ball & with the help of greased hands spread evenly in round shape.
-Add & spread ghee then sprinkle flour on it & cut the dough in stripes with the help of cutter.
-Gather all layers together and stretch slightly then roll & twist the dough into a ball.
-Cover with a cotton cloth & rest for 15 minutes.
-Grease hand with ghee and press gently with both hands to spread the dough to make a paratha.
-Heat griddle, add ghee & let it melt.
-Place paratha and fry on medium low flame. Flip the paratha, add & spread whisked egg over it.
-Spread prepared chicken filling on one side, add mozzarella cheese & flip the other side of paratha over it. Press gently & cook from both sides until golden & crispy (makes 10).
-Serve with dahi, achar or salad!

-Wok may cooking oil daal kar garam karen.
-Zeera daal kar milayen.
-Ab adrak, lehsan daal kar 30 seconds tak mix karen.
-Tamatar daal kar mix karen or 2 minutes tak ya itna pakayen k naram hoajyen.
-Pyaz, hari mirch daal kar mix karen or 2-3 minutes tak pakayen.
-Namak, lal mirch powder, dhania powder, garam masala powder, soy sauce, lemon juice daal kara chi tarah mix karen.
-Chicken qeema achi tarah mix karen or 3-4 minutes tak pakayen.
-Hara dhania daal kar mix karen.
-Mixture ko masher ki madad se achi tarah mash karen aur tez ancch per sukh janay tak paka lein.
-Thanda ker lein.
Prepare Dough:
-Bowl may fine atta, maida, namak daal kara chi tarah milayen.
-Dahi or gradually pani daal kar mix karen or ghond ker dough tayyar ker lein.
-Ghee daal kar dough ko grease karen or dhak kar 15 minutes tak rest den.
-Aik try may ghee daal kar brush se spread karen.
-Dough k balls bana kar (130g) greased tray may rakh kar 10 minutes tak k liye dhak den.
-Dough mat ko ghee se grease karen, dough ball rakh kar hathon ki madad se phela len. Ab ghee daal kar phelayen or flour charak kar cutter ki madad se stripes kaat len.
-Layers ko gather kar k stretch karen or fold kar k paira bana len. Cotton cloth se dhak kar 15 minutes ka rest den.
-Hathon ko ghee se grease kar k dough ball ko phela kar paratha bana len.
-Tawa garam karen or ghee daal kar melt karlen.
-Paratha daal kar medium flame par senk len, paratha ko palat kar whisked anda daal kar phela len.
-Aik side par chicken filling or mozzarella cheese daal kar paratha ki dusri side ko is par flip kar den. Dono taraf se achi tarah senk kar utar len (makes 10).
-Dahi, achar or salad k sath serve karen!
