How To make Bbq'D (Grilled) Cornish Game Hens
2 Cornish game hens (1 to 1
-1/2 pounds each) 3 tb Olive Oil
1/3 c Lemon juice
1 tb Coarsely crushed black
-pepper 1/2 ts Salt
1 Sprig fresh rosemary
-(Optional) 50 Briquets charcoal (about 3
-pounds) Split the hens lengthwise, rinse and pat dry. In a small bowl, combine olive oil, lemon juice, crushed pepper and salt. Place the hen halves in a plastic bag. Set the bag in a bowl. Pour the marinade over the hens. Cover and refrigerate for several hours or overnight, turning the hens occasionally. When the charcoal briquets are medium hot, arrange them around a drip pan in a covered grill. Just before grilling, add the rosemary sprig to the coals. Remove the hens from the marinade and place them, skin side up, on the grill over the drip pan. Cover the grill and cook the hen halves for 45 minutes or until done, basting occasionally with the marinade. Makes 4 servings. Posted by Stephen Ceideberg; August 6 1992.

Beer Can Chicken
A guest post by my son. He claims its the best way to do BBQ chicken. I agree, although I recognize there are many ways to make excellent BBQ'd chicken. He makes Beer Can Chicken once or twice a month this way. For leftovers, his wife uses the remaining chicken as an addition to salads she prepares for lunch throughout the week. Beer Can Chicken

Recipe: Ingredients
Whole Chicken 3-4 lbs.
BBQ rub bought or made
1/2 beer or 1/2 glass of wine or 6 oz. water or apple juice
olive oil - only enough to coat external parts of chicken
Directions:
Place coals on one side of grill. You are trying to achieve one side of the grill that is hot, while the other does not have a direct flame; Light grill, point is to achieve 350 degree temp overall. Wash chicken, dry with paper towels; spray or apply olive oil to dried chicken. Coat liberally to taste with BBQ rub. Sit chicken on top of beer can or on chicken sitter. Once grill is at 350 degrees, place chicken on indirectly heated side of grill. Once 45 minutes has passed or the chicken has browned to your liking (on the side facing the heat), turn and leave the chicken on the grill until 170 degrees internal temperature is reached. Quarter chicken, serve and enjoy.
