1/2 c Soy sauce 1/2 c Cooking sherry 1 tb Lemon juice 1 Clove crushed garlic 1/4 c Salad oil Brush trout with lemon juice inside and out to preserve freshness before refrigeration. Place 2 trout, 10 to 12 inch fish, in shallow baking dish; pour marinade (recipe follows) over fish. Let stand for one hour. Place on grill and cook until done, approx. 15 minutes. The drained marinade should be used for basting during cooking. MARINADE: Use hand mixer to blend all ingredients well. -----

How to Grill Whole Trout
Putting fish on the grill strikes fear to the heart of any pitmaster. With a little bit of preparation you can grill fish that won't stick to the grill. This is one of my favorite combinations for whole trout and I'm sure you will like it too. We picked the bones clean, but had a little left over that we added to a salad the next day. Absolutely amazing.

Today we show you how to make a delicious pan seared steelhead trout recipe using a cast iron skillet on the Weber Kettle Grill. Full recipe is below!

MANGO JALAPENO SALSA: 1 large mango 2 tbsp ginger 2 scallions 1 small red or yellow pepper1 jalapeno Juice of 1 lime Pinch of salt and pepper
Combine all ingredients in a bowl and let set in fridge until time to serve.
PAN SEARED STEELHEAD TROUT 1 filet of steelhead trout cut in half Melted butter Cajun Seasoning
Prepare your grill for direct cooking. Place cast iron skillet on grill and let warm up (be careful to not let the pan get too hot).
Prep trout by brushing on melted butter and add your favorite seasoning. Brush a small amount of butter on the cast iron skillet and add fish flesh side down on skillet. Let cook for a minute or two then flip and sear the other side. Trout is done when flesh flakes with a fork.
Serve over coconut milk and fresh mint, garnish with the mango jalapeno salsa. Serve immediately.
