INGREDIENTS:
250G GREEN BEANS, TRIMMED AND CUT INTO THREE
A GENEROUS SLUG OF GROUNDNUT/RAPESEED OIL
2 TSP MUSTARD SEEDS
A WHOLE DRIED RED CHILLI
A PINCH OF ASAFETIDA
1 TBSP OF SPLIT BENGAL GRAM/ URID DAL
15 FRESH CURRY LEAVES
50G CASHEW NUTS
A LARGE HANDFUL OF UNSWEETENED DESICCATED COCONUT
SEA SALT TO TASTE
½ TEASPOON JAGGERY OR SOFT BROWN SUGAR
THE JUICE OF SMALL LIME
METHOD
TOAST THE CASHEWS IN A HOT DRY PAN AND SET ASIDE. TOAST THE COCONUT TILL PALE GOLDEN TOO – KEEP YOUR EYE ON IT AS IT GOES FROM GOLDEN TO CHARRED RATHER QUICKLY.
HEAT THE OIL IN A WOK OR PAN AND ONCE IT’S SMOKING, THROW IN BENGAL GRAM/URID DAL. AS SOON AS IT BEGINS TO COLOUR, SPRINKLE IN THE MUSTARD SEEDS. ONCE THEY BEGIN TO SPUTTER, ADD THE ASAFETIDA, DRIED RED CHILLI AND CURRY LEAVES. STIR IN THE GREEN BEANS AND CASHEWS, SEASON TO TASTE, POUR IN 30MLS OF WATER, COVER TIGHTLY AND COOK FOR 3 MINUTES.
REMOVE FROM THE HEAT, SCATTER OVER THE SUGAR, COCONUT AND SQUEEZE OVER THE LIME JUICE. MIX WELL AND SERVE HOT OR COLD.

Cashew Nut Salad

Ingredients:
1.5 cups of chicken thighs
0.5 tsp ginger paste
0.5 tsp garlic paste
0.5 tsp black pepper
Less than 0.5 tsp salt
0.5 tsp soy sauce
1.5 tbsp all purpose flour
1 tbsp corn starch
1 medium sized egg
2 small pieces of lemon
0.5 cup carrots
0.5 cup red onion
3/4 cup green pepper
3/4 cup red pepper
3/4 cup yellow pepper
3/4 cup cucumber
3/4 cup of tomato
3/4 cup cashew nut
3 tbsp sweet chili sauce
3 tbsp ketchup
1 tbsp soy sauce
1 tbsp sesame oil
Directions:
1. Cut chicken thigh and marinate in ginger paste, garlic paste, ground black pepper, chili powder, soy sauce, all-purpose flour, corn flour, egg and lemon juice. Let chicken rest for 15 minutes.
2. Cut carrots, onions, bell pepper, cucumber, tomato, lemon and cashew.
3. In a pan of hot oil, lightly fry cashew nuts and take out.
4. In the same pan, fry chicken until cooked.
5. In a pan with little oil, put vegetables, ground black pepper and mix and soften for 5 mins.
6. Add sweet chili sauce and sugar and take out of pan.
7. Mix cucumber, tomato and chicken together in a large bowl.
8. Enjoy!

Chicken fry ingredients :
250 gram chicken breast
1 tsp garlic and ginger paste
1 tsp soya sauce
1/2 tsp black pepper
1 tsp red chilli powder
1/2 tsp salt
1 tsp vinegar
1/2 tbsp tomato sauce
1/4 cup corn flour
Salad sauce ingredients:
1/2 tsp soya sauce
3 tsp tomato sauce
1/2 tsp BBQ sauce
2 tsp sweet chilli sauce
1/2 tsp black pepper
Vegetables :
Carrots
Broccoli
Green bean
Corn
Capsicum
Baby corn
Onion
(Cashew nuts)
