How To make Beef Chunks Cooked In Coconut Milk
3" cube fresh galingal OR
12 slices dried galingal
2 Sticks fresh lemon grass OR
2 tb Dried sliced lemon grass
6 Dried red chillies
2" stick cinnamon
14 Cloves
4 oz Red bell pepper
4 oz Shallots or onions
1" cube fresh ginger
2 Cloves garlic
12 Fresh/dried curry leaves OR
4 Dried bay leaves
8 Fresh/dried kaffir lime
Leaves OR a 3 X 1/4" strip Of lemon peel 3 pt Coconut milk
2 lb Stewing beef, cut into 1-2"
Cubes 1 tb Salt
If you are using fresh galingal, peel and coursely chop it and set it aside. If you are using dried galingal, combine it in a cut with 4 tablespoons of water. If you are using fresh lemon grass, cut of the straw-like top, leaving about 6" of the bottom. lightly crush the very bottom and set it aside. If you are using dried lemon grass, put it into the water along with the galingal. Crumble and break the dried red chillies and cinnamon into enough water to cobver and add them to the dried galingal and dried lemon grass if you are using them. Also put in the cloves. Soak the spices for 30 mins. Cut the red pepper coarsely inot dice, discarding all the seeds. Peel and coarsely chop the shallots/onions, ginger and garlic. In an electric blender, combine the soaked spices and their liquid, the frsh galingal (if you are using it), the chopped red pepper, shallots, ginger and garlic. Blend until smooth. Into a wide, preferably non-stick pan put the paste from the blender, the fresh lemon grass (if using), the curry leaves and kaffir lime leaves (or lemon rind). Stir the coconut milk well until smooth and pour that in as well. Bring to the boil, stirring occasionally. Turn the heat to medium and cook the sauce for 15 mins, stirring now and then to prevent curdling. Put in the meat and salt and bring to the boil again. Reduce the heat to medium. Cook, uncovered for 1 hour, stirring occasionally. Turn the heat up to medium-high and continue to cook, stirring now and then for a further 30 mins or until the sauce becomes thick and brown and the meat tender. This is now called KALIYO DAGING, if you continue to cook until the sauce dissappears its called RENDANG DAGING.

Kerala Beef Roast is a traditional styled ethnic dry curry dish very popular in Kerala. Keralites favorite Nadan Beef Varattiyathu! Also called Beef Ularthiyathu. If anyone asks me what would be best with beef then I would tell them – “Beef Roast”. This mouth drooling Malabar Style Beef Roast is unique with pressure cooked beef roasted dry with coconut flakes and other spicy seasonings. The roasting process takes about 15 to 20 minutes. But I would say the more you roast the more tastier beef roast you get. This Beef Roast dish is so simple to make and goes really well with a side of thoran (vegetable dish) and some buttermilk curry (yellow moru curry) to go over matta rice.
This dish also goes perfect with appam, tapioca, puttu, pathiri etc.

Ingredients :
750 gms Beef (washed & cut into small cubes)
For the Masala Paste :
25 to 30 (60 gms) whole Shallots
1 medium sized (75 gms) Onion - roughly chopped
2 inch Ginger (20 gms)roughly chopped
15 cloves (25 gms) Garlic medium sized
2 tbsp Coriander Powder
1 tbsp Kashmiri Red Chilli Powder
1 tbsp Garam Masala Powder
1 tsp Turmeric Powder
½ tsp Pepper Powder
1 tsp Fennel Seeds (saunf)
½ tsp Cumin Seeds
100 ml Water
Other ingredients :
5 to 6 tbsp Coconut Oil (use as per your diet restrictions)
3 nos Green Chillies (slit in the middle)
2 to 3 sprigs Curry Leaves
½ Salt (or as per taste)
200 ml Water
For roasting :
5 to 6 tbsp Coconut Oil (use as per diet restrictions)
½ tsp Mustard Seeds
2 sprigs of Curry Leaves

My story with curry started in a Thai restaurant many many years ago. One taste of a Thai green curry and my taste buds were transformed forever. So the obvious next steps were to purchase some curry paste and coconut milk at the store, get some fresh veggies and attempt to make my own version at home. My excitement quickly shifted when I tasted my curry and was left a bit underwhelmed with the flavors and textures. But that first attempt wasn’t going to stop me from recreating the authentic flavors that I had tasted in the restaurant so over the years I continued to study up on curry and learn the proper techniques needed to create incredible tasting curry at home. In this video I’ll show you how to make a homemade curry paste in minutes and share a few key techniques needed to make three of my favorite styles of curries.

Kerala Nadan Varutharacha Beef Curry - Beef Coconut Gravy
Beef curry
Ingredients
Beef - 1 kg
Onion - 3 nos
Shallots - 2o to 23 nos
Garlic - 16 to 17 nos
Ginger - 1 nos
Green chilli - 3 to 4 nos
Curry leaves - 2 to 3 sprigs
Tomatoes - 2 nos
Grated coconut - 1 cup
Coconut pieces - 1/2 cup
Dry red chilli - 3 or 4 nos
Red chilli powder - 1 1/2 tbsp
Turmeric powder - 1/2 tbsp
Coriander powder - 1 tbsp
Garam masala - 1 tbsp
Pepper powder - 1 tbsp
Fennel seed - 1 tsp
Mustard seed - 1 tsp
Salt - 1 or 2 tsp
Oil - 3 or 4 tbsp
Method
Firstly, we have put the cleaned beef in a pan.
Then add the turmeric powder, red chilli powder, and coriander powder.
Then add garam masala, pepper powder and salt, mix them well.
Then, pour a sufficient amount of water over them and thoroughly mix them.
Then put some curry leaves on top of the beef mix.
Then place the beef curry pan on fire
Cover and cook till the beef becomes soft.
Remove the lid and check whether the beef is well cooked or not.
Remove from the heat and set aside
Heat oil in a pan add grated coconut and fennel seed .
Saute them well for few minutes.
Add some curry leaves and sauté them well.
Saute and roast them well until they become a light golden brown.
Remove from heat and set aside.
Then crush ginger and garlic ,keep aside.
The roasted coconut should then be grinded into a fine paste and set aside.
Heat oil in a pan. add mustard seed and allow it to crackle.
Add dry red chillies, chopped shallots and chopped onion.
Then add green chili, curry leaves and chopped coconut slices.
Saute them well for few minutes .
Then add crushed ginger and garlic mix,saute them well.
Add red chilli powder, coriander powder, pepper powder and garam masala.
Saute well until the raw smell disappears.
Then add the chopped tomatoes and saute them well.
Add the cooked beef, and combine them well.
Pour a sufficient amount of water over them and thoroughly mix them.
Cover and cook for 7 to 8 minutes .
Remove the lid and add the roasted coconut grinded mixture.
Mix them well and cook for a few more minutes.
Remove from the heat and set aside.
Serve the tasty chicken curry with boiled tapioca.

Tomato Beef Curry
1 packet Japanese Curry Roux
250g thinly sliced beef
2 large onions
2 tbsp butter
2 tbsp neutral oil
1 can whole tomatoes
2 tbsp ketchup
500mL water or stock (add more depending on consistency)
Salt & Pepper to season
1. Melt 1 tbsp butter and oil in a heavy duty pot.
2. Caramelize the onions on medium-low heat stirring constantly. This should take around 30 minutes.
2. Once the onion has caramelized, add the beef and cook until it gets color.
3. Add tomatoes and water to deglaze the pot. Scrape the bottom of the pot.
(Alternatively, add pureed tomatoes if you prefer a smoother consistency)
4. Once the mixture comes to a rolling boil, add the curry roux packet in. Mix to combine.
5. Add ketchup and finish off with butter. Serve with white rice. Enjoy!
