8 Tortillas
2 tb Vegetable oil
1 Garlic clove, minced
1 md Onion, thinly sliced
1 md Green or red pepper,slivered
1 lb Beef steak, in thin strips
1 tb Chili powder
1 tb Lime juice
1 tb Pickled jalapeno peppers
1/2 ts Cumin
Ingredient notes:- Beef steak should be sirloin, flank, or round. Pickled jalapeno peppers should be chopped and may be omitted if not desired. Toppings for fajitas are a personal choice. SATURDAY NIGHT TACOS | Best Sirloin Fajitas On The Griddle ❤
These amazing hearty and delicious beef fajita tacos will get you addicted, they are the way to go any night, but they are our favorite on Saturday nights. Beef sirloin fajitas are known as beef skirt, and in spanish, it means belt because it is a long muscle found in the cows diaphragm area. I love this tender meat for grilling outdoors or for the griddle indoors, it cooks quickly and makes the best tacos. I season them well with garlic powder, onion powder, smoked paprika, ground cumin, salt and pepper. You can fill them with chopped lettuce and pico de gallo, or sauteed onions and peppers, and guacamole the way we love them, you can choose soft corn or flour tortillas, I love to put a few slices of Oaxaca cheese, melt it gently then fill them with my perfect fajitas, sauteed onions, bell pepper and guacamole then top them with my delicious green salsa, and Bam!!! what a feast!!
INGREDIENTS-----------------------
1 & 1/2 Lbs. Sirloin Fajitas (cut into pieces)
1 small onion (half moon slices)
1/4 purple onion (half moon slices)
1/2 orange bell pepper (slices)
2 large garlic cloves (finely minced)
1-2 Tbsp water(to create steam)
1/4 tsp meat seasoning (for onions and pepper)
Oaxaca cheese (as needed)
flour tortillas (as needed)
1 large lime
3 medium/small tomatillos
1 medium tomato
3 serrano peppers
1/2 tsp chicken bouillon
2 & 1/2 tsp garlic powder
2 & 1/2 tsp smoked paprika
2 tso onion powder
1/4 tsp ground cumin
salt as needed
pepper as needed
SALSA--------------
3 tomatillos
1 tomato
3 serrano peppers
1/2 tso chicken bouillon
SAUTEED ONION MIXTURE----------
1 small onion
1/4 purple onion
1/2 orange bell pepper
2 large garlic cloves
1-2 tsp water
1/4 tso meat seasoning
SEASONING----------------
2 & 1/2 tsp garlic powder
2 & 1/2 tsp smoked paprika
2 tsp onion powder
1/4 tsp ground cumin
salt as needed

--RECIPE--
▪1.5lbs/.7kg Top Sirloin Roast
▪250g/2 med-lrg red or orange bell peppers, julienned
▪125g/1lrg poblano, julienned
▪250g/1 white onion, sliced pole to pole
▪10-15g/4 cloves garlic
▪2g or 1tsp ground cumin
▪2g or 1tsp chili powder
▪2g 1tsp paprika
▪1g or 1tsp dried oregano
▪Lime, halved
▪1 bunch of fresh cilantro, chopped
▪High smoke point oil (avocado, canola, etc)
▪Salt
▪Pepper
Cut roast in half, then cut pieces in half horizontally so they’re thin (see video @:51). Salt generously with salt and pepper on both sides.
Preheat cast iron over high and add a lot of oil (4Tbsp or so). Dab any excess moisture from meat then place into hot pan. Press each steak into pan and allow to cook for 90 sec total on side 1. Flip and cook for an additional 60-90 sec. Remove beef from pan to rest.
Wipe out excess oil in pan and add peppers and onion followed by large pinch of salt. Stir to combine then cook for about 45-60 seconds, undisturbed. Stir and repeat 2-3 times until you’ve cooked the veg for about 5 min until softened slightly and beginning to char. Add spices and garlic and stir for a few seconds to take the raw edge off the garlic.
Transfer fajita veg mix to a bowl. Slice beef against the grain then add to fajita veg mix along with any resting juices, juice of ½ lime, and 1-2 pinches fresh chopped cilantro.
Reheat beef and veg in a pan over medium just to heat through. Place on fresh warmed tortilla and top with whatever you like. I use fresh tomatillo salsa, queso fresco, and fresh cilantro.
