How To make Beef Roll Ups
6 Slices Sirloin Tip Roast, Trimmed*
cut in wedges
Four Salt And Pepper 2 Carrots
1 Onion
1 Green Pepper
3 Slices Bacon :
uncooked
3 Tbsp Bacon Fat
Sauce:
2 tbsp Butter
2 tbsp Flour
1/4 tsp Salt
2 C Milk
1/2 C Mushrooms drained
1 tbsp Parsley :
minced
1 tsp Worcestershire Sauce
FOR THE BEEF:
Coat meat well with mixture of flour, salt and pepper. Cut each carrot into 3 pieces. Cut onion into 6 wedges and green pepper into 6 strips. Slice bacon strips into 3 pieces each. Place a piece of uncooked bacon, carrot, onion, and green pepper on each piece of meat, and roll up. Tuck under ends to keep begetaables inside the roll. Insert wooden picks through folded ends and through center of each roll. Melt fat in skillet. Slowly brown meat rolls on all sides Place meat rolls in casserole.
FOR THE SAUCE:
Melt butter; blend in flour, salt, and pepper. Heat until it bubbles. Remove from heat and gradually stir in milk. Return to heat and cook rapidly, stirring constantly, until sauce thickens. Add mushrooms, parsley and Worcestershire sauce. Pour over meat. Cover sasserole and bake at 350

I’ve always said that braising is my favorite cooking method and this beef braciole recipe just proves that to be true! It's delicious, you can make it in under 90 minutes and it is great served during the week to family or at a family gathering.

Ingredients for this Beef Braciole Recipe:
• 2 28-ounce cans of San Marzano Tomatoes
• 2-pound beef top sirloin roast
• 1 cup bread crumbs
• 1 cup grated parmesan cheese
• ¼ cup minced fresh parsley
• 4 finely minced cloves garlic
• 5 tablespoons olive oil
• sea salt and cracked pepper to taste
Serves 6
Prep Time: 25 minutes
Cook Time: 75 minutes
Procedures:
1. Add the tomatoes to a blender and blend on medium speed until smooth. Transfer to a medium size pot, season with salt and pepper and cook on low heat.
2. Next, slice the sirloin roast into 12 thin fillets and pound each of them out on a cutting board in between plastic wrap or a plastic bag until it is about ¼ thick. Season with salt and pepper Set aside.
3. In a medium size bowl mix together bread crumbs, cheese, parsley, garlic, 3 tablespoons olive oil and salt and pepper until combined.
4. Add a small amount of the bread crumb mixture to the center of 1 pounded beef fillet and spread it out across the beef fillet pressing it down into the beef. Roll up the beef to make a roulade.
5. Repeat until the beef and stuffing has all been used and truss each beef roulade with butcher’s twine or a tooth pick.
6. Next, add 2 tablespoons olive oil to a large pan over medium-high heat and sear the beef on all sides until golden brown, about 2 to 3 minutes per side.
7. Pour in the tomato sauce, add a lid to the pan and cook over low heat for 1 hour.
8. Remove the butchers twine, slice and serve.
Stuffed Beef Roll Ups Grilled On The Weber Kettle
With any cut of thinly sliced beef you can make some delicious Roll Ups. In this video I use some Chuck Steak, Herbed Goat Cheese, BBQ Flavored Almonds, and a selection of fresh veggies to build some Beef Roll Ups for grilling on the Weber Kettle.

INGREDIENTS
2 lbs thinly sliced sirloin tip steaks
1 yellow onion (sliced into strips)
1 green bell pepper (sliced into strips)
1 red bell pepper (sliced into strips)
2 cups colby jack cheese (shredded)
FOR THE MARINADE
½ cup fresh lime juice (about 4 limes)
¼ cup olive oil
6 cloves garlic (finely diced)
2 teaspoons salt
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon black pepper
½ teaspoon cayenne pepper
INSTRUCTIONS
Marinade the steak. Combine all of the ingredients for the marinade in a large zip top bag or other container. Add the steak to the marinade and stir well to be sure the marinade in covering all of the slices. Allow the steak to marinate in the refrigerator for at least 2 hours or up to 4.
Grill the vegetables. Preheat your grill to medium high heat (about 400 degrees F). Place the onions and peppers in a grill basket and grill for 5-6 minutes, or until the edges of the onions are starting to brown and the peppers begin to soften.
Assemble the roll ups. While the vegetables are grilling, remove the steak from the marinade and shake off any excess. Lay the steaks flat on a large work surface and top each with about 1/3 cup of the shredded cheese. Remove the vegetables from the grill (leave the grill on) and divide evenly among each of the roll ups. Roll each steak around the cheese and vegetables and secure each roll with a toothpick.
Grill the Roll Ups. Place each steak roll on the grill, seam side down, and grill for 3-4 minutes per side (about 12-15 minutes total.
Rest and serve. Remove from the grill and allow the steak rolls to rest for 4-5 minutes before serving with your favorite fajita toppings and sides.

Ground Meat Rolls | Retro Recipes
Ground Meat Rolls
24 ounces of ground meat
3 pieces of chicken breast
8 ounces of smoked bacon
3 pieces of white bread
8 ounces of cheese
3 ounces of smoked bacon
1 medium sized red onion
1 egg
1 tsp of dried red pepper spice
1 and a half tsp of mixed spices
Oil
Salt
Pepper
For today’s main course we recommend making the Ground Meat Rolls
The estimated duration for the preparation of this meal is about 70 minutes
Cut up a medium sized red onion into tiny pieces
Cut up 8 ounces of bacon and put it on a pan to fry
Take the ground meat, put it in a bowl and add mixed spices, and red peppers
Add one egg, and pieces of white bread, without the crusts
Add salt and pepper
Once the bacon is fried, add the red onions to the pan
After the onions are fried, add the mixture to the ground meat
Mix
Once you’re done mixing with a spoon, mix the ingredients by hand
Take the chicken breasts and cut them horizontally
Smash the chicken breast
Take the ground meat mixture and put it on a flat surface, on plastic foil
Even out the mixture and put the chicken breast on top of it
Add salt
Add mixed spices, and pepper
Over the ingredients add 4 ounces of ham
Grate some cheese and put it on top
Use the plastic foil on the bottom to roll the entire mix of ingredients in order to make a nice meat roll
Take a pan and spray it with oil
Put the meat roll on the pan and take out the plastic foil
Put oil on top of the meat roll as well
Bake for 30 minutes at 356 F
Take out the meat roll off the pan and cut it up in pieces
Take a plate and put lettuce leaves on it
Take your meat rolls and put them over the lettuce
Add your boiled potatoes alongside the meat rolls
Decorate with parsley and tomatoes
