My Family Spaghetti Sauce Recipe
Spaghetti sauce is one of those staple Italian family recipes that gets passed down from generation to generation.
There really is no need to ever buy this pre-made because it’s incredibly easy to make and far better than anything from the store. Homemade food from scratch just tastes so much better.
Ingredients for this recipe:
• 3 tablespoons olive oil
• 3 peeled and medium diced white onions
• 10 cloves of finely minced garlic
• 1 cup cabernet sauvignon
• 2 pounds loose mild Italian sausage
• 2 pounds ground sirloin
• 109 ounces san Marzano whole peeled tomatoes
• 3 tablespoons dry oregano
• ¼ cup dry basil
• 1 ½ cups each grated pecorino Romano and parmigiana Reggiano cheese
• 3 tablespoons balsamic vinegar
• ½ cup chopped Italian parsley
• sugar to taste
• sea salt and pepper to taste
• optional ½ cup tomato paste
Servings 40
Prep Time: 15 minutes
Cook Time: 70 minutes
Procedures:
1. Add some olive oil to a very large pot over low heat and cook the onions until they are deep brown and caramelized, about 30 minutes.
2. Add in the garlic and cook for 3-4 minutes.
3. Deglaze with red wine and cook until the amount of liquid is reduced by one half, about 5-7 minutes.
4. Place in the sausage and ground sirloin and cook over medium heat until it is cooked throughout, there should be no pink, while stirring often to break up any large chunks.
5. While the meat is cooking crush the whole peeled tomatoes with your hands to bite size pieces.
6. Put in the tomatoes, oregano, and basil and cook over low heat for 30 minutes.
7. Finish by stirring in the cheeses, parsley, balsamic vinegar and adjusting the seasonings with salt and pepper as well as sugar, if it needs it.
8. Lastly, thicken it by stirring in tomato paste until it is to your desired thickness. This is optional.
9. Toss with cooked spaghetti and serve.
CHEF NOTES:
• To Reheat It: Add your desired amount to a medium size pot and cook over low heat until hot. You can also reheat in a microwave safe bowl until hot.
• To Store It: To store the spaghetti sauce cool it in an ice bath in your sink or transfer to a refrigerator and cool it uncovered until it is cold, about 3-4 hours. Cover it and keep it in there for up to 5 days.
• To Freeze It: This will also freeze well covered for up to 3 months. Thaw for 1 day in the refrigerator before reheating.
• Make Ahead: You can make this up to 2 days ahead of serving it. Keep it in the refrigerator until 1 hour before serving it and reheat it until hot in a pot.

1 onion
1 bell pepper

1 lb ground beef 80/20
1/2 lb sweet italian sausage
1/2 lb hot italian sausage
1 tsp worcestershire sauce
1/4 cup dry red wine
herbs de provence
red pepper flakes
salt/pepper/garlic/onion powder
2 pinches of sugar
fresh basil
2 tbsps tomato paste
1 package spaghetti
2 tbsps butter
parmesan cheese
fresh chopped parsley
Directions:
Begin by prepping your veggies. Heat large pot over medium heat and begin cooking your ground meat until no longer pink. Add in onion and pepper and sweat for 5 minutes. Season generously. Add garlic and incorporate. Next, add in tomato paste and mix to combine. Deglaze the pot with a bit of red wine or beef stock - bring to a simmer. Add in crushed and chopped tomatoes, along with tomato sauce. Add Worcestershire sauce and Mix to combine and begin seasoning to taste. Add sugar as needed to balance acidity. Add basil leaves and cover for 30-60 minutes on low - stirring occasionally. Cook pasta to package instructions, drain, and add 2 tbsps butter. (always salt pasta water). Add sauce to your noodles based on your preference and garnish with fresh parmesan and parsley.

INGREDIENTS
- 2 tbsp unsalted butter
- 1 medium onion, minced
- 1 small bell pepper, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 3 cloves garlic, minced
- 2 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp red chili flakes
- 1 lb ground beef
- 6 oz tomato paste
- 14 oz tomato sauce
- 28 oz diced tomatoes
- 1 lb spaghetti
INSTRUCTIONS
- In a 6-quart stock pot or saucepan, melt the butter over medium heat. Once the butter is melted, add the onion, bell pepper, salt, and black pepper. Sauté until the onion and pepper are softened and turning translucent, 4-6 minutes.
- Add the minced garlic, dried basil, dried oregano, and red chili flakes. Cook for 30 seconds and add the ground beef. Cook and break the beef into small pieces until it is fully browned, 8-10 minutes. Once the beef is cooked, add the tomato paste. Stir the paste into the mixture and allow the paste the cook until it darkens and starts to coat the bottom of the pan, 6-8 minutes.
- Once the paste has cooked, add the tomato sauce and diced tomatoes. To clean the containers out, use a small amount of water and pour it into the sauce. Stir and bring the sauce to a simmer. Once simmering, cover and cook for 18-20 minutes.
- While the sauce is cooking, prepare the spaghetti according to the package directions to reach al dente stage.
- When the pasta is al dente, turn the sauce to low heat and add the pasta directly to the sauce. Any residual water dripping off the pasta can be added to the sauce. Stir the pasta and sauce to combine and finish cooking the noodles for 2-3 minutes. Serve with freshly grated Parmesan cheese.

9 cups filtered water
2 T salt
3/4 lb. Thin Spaghetti
1.25 lb. ground beef
1 yellow onion
3 large garlic cloves
1 small green bell pepper
2 T onion powder
2 T garlic powder
1 T paprika
2 T all-purpose seasoning: BADIA COMPLETE SEASONING:
1 t Italian seasoning
Ground black pepper
1/4 cup water
2 t tomato paste
1 to 2 large beef bouillon cubes
3 T water
2 packs of sodium-free granulated beef bouillon
3 T filtered water
1 T unsalted butter
2 T ketchup
1 t yellow mustard
1/2 t red wine vinegar
4 large tomatoes or 6 Roma tomatoes (OR two 14.5 oz cans of tomatoes)
2 bay leaves: MORTON & BASSET BAY LEAVES:
2 to 3 T grated parmesan cheese
