How To make Beef and French Fries
8 tb Oil
2 lg Potatoes, matchstick cut
Can use frozen 1 md Onion, thinly sliced
2 Garlic cloves, minced
10 oz Sirloin steak, thin slice
2 ts Cornstarch
3 ts Water
1 ts Sugar
2 ts Fish sauce, Nuoc Mam
Pepper, lots 1. Pour 6 tablespoons of the oil into a flat skillet, add the potatoes and
fry until brown. Drain the oil and set potatoes aside to drain on paper towels. 2. Fry the onion and garlic in oil, then add the beef and fry for about 1 minute or until meat is browned but not tough. 3. Mix the cornstarch, water, sugar and fish sauce in a small bowl, blending well. Add this to the beef and stir..add more water if needed to make a light not too thick sauce. 4. Fold in potatoes or...remove the potatoes to a serving dish then spoon beef and sauce over the potatoes. 5. If you like, sprinkle with lots of black pepper.

McDonald's Original Beef Tallow French Fries
Adapted From:
Ingredients:
2 large russet potatoes
¼ cup white sugar
2 tablespoons white corn syrup (Karo)
2 cups hot water
6 cups Crisco shortening
½ cup beef tallow
Salt to taste
Instructions:
1. Peel the potatoes and cut them into shoestrings.
2. In a large mixing bowl, combine the sugar, corn syrup, and hot water. Stir to dissolve the sugar. Place the potatoes into the bowl of the sugar-water and refrigerate for 30 minutes.
3. While they’re soaking, heat the shortening in a large dutch oven or stock pot until the temperature reads 375°F.
4. Drain the potatoes then carefully dump them into the fryer. Mix so the fries do not stick. After a minute or so, transfer the potatoes to a paper towel–lined plate. Let them cool for 10 minutes in the freezer.
5. While they’re cooling, add the beef tallow to the hot shortening and bring temperature back to 325°F.
6. Add the potatoes and deep-fry again until golden brown. Again, mix to keep them from clumping. Remove and place them in a large tray or bowl, sprinkling generously with salt and tossing to mix the salt evenly. Serve hot and enjoy!

How to Cook Perfect French Fries like in a restaurant!
#shorts Making French fries is certainly not rocket science but there are a lot of elements to consider in thriving for perfection. Firstly you want large oval shape potatoes for the best cuts. You want the right size, 1 centimetre or just under half an inch is the optimal size. Smaller and they will be too crisp with more oil, larger they will be too moist and mushy in the centre. You don't have to use a ruler, it's just a guideline, a little less or more won't make any difference. For the oil, you can't beat the taste of beef dripping, but for healthier reasons it's best to use vegetables oils, I like Canola, peanut, sunflower oils. You can use the one you like, but the secret is that it has to be fresh. You can use it several times but the older it gets the faster it will reach smoking point resulting in darker fries with less crisp. Use a large pot and never fill the pot to more than half full. Use a good deep fryer that contains a large quantity of oil, otherwise make them in small batches to avoid the oil cooling down too quick once you add the fries. I have included a chili salt recipe to bring them to another level, but if you're a purist at heart, then simply use a fine salt.
You can also blanch the fries then refrigerate or freeze for later use. But if you want them straight away, let them cool down before the second fry. #shorts

Ingredients
2 large russet potatoes
1/3 cup sugar
3 tbs light corn syrup
2 cups hot water
6 - 12 cups canola oil (depending on the size of your fry pot)
1/4 cup Wagyu beef tallow per 6 cups of oil
Fine sea salt
Directions
In a large bowl, mix the sugar, corn syrup and hot water until sugar is dissolved. Peel potatoes and slice 1/4 think using mandolin or food processor with a french fry blade. Place cut potatoes in the sugar water solution and refrigerate for 30 minutes.
Heat oil to 375°. Drain the potatoes and fry for 90 seconds. Remove fries from hot oil, drain on paper towels, and refrigerate for 10 minutes. Carefully add Wagyu beef tallow to the hot oil. Add partially cooked fries back to the hot oil and cook for 5 - 7 minutes until golden brown. Drain on paper towels and sprinkle with fine sea salt. Bet you can't eat just one.

CHEESE LOADED CHEESE FRIES (2 SERVINGS)
Beef mixture:
1 tbsp olive oil
2 cloves of minced garlic
500g minced beef
120g diced fresh tomatoes
120g yellow onion
Seasoning blend:
1 tsp cumin
1 tsp garlic powder
1/2 tsp black pepper
1 tsp dried oregano
1/2 tsp salt
1 tsp paprika
1 tsp red pepper flakes
2 tsp tomato paste
Cheese sauce:
3 tbsp butter
3 tbsp all-purpose flour
360ml milk
130g cheddar cheese
1 tbsp hot sauce/buffalo sauce
salt (if needed)
