Beer battered mushrooms with vegan tartar sauce
Battered mushrooms are an amazing comfort food, especially when they come with a vegan tartar sauce. They are very quick to make and a treat for the whole family. I've been craving them for ages, so I developed a recipe that's full in protein and uses much less oil than normal tartar sauces.
And it's all done using simple ingredients you might already have in your pantry. The only thing you might not have at home is nutritional yeast, but you should be able to get it in any health food shop, it's kinda a vegan staple.
I also wanted to created a recipe that, even though fried, still has some nutritional value. Tartar sauce is normally more or less made from oil. So I tried silken tofu as a base for it and added only a little bit of olive oil to it. It worked really well and is a healthier alternative to the traditionally made tartar sauce.
INGREDIENTS (2 portions):
Vegan beer batter:
• 250ml of beer
• 75g of flour
• 3 tsp garlic powder
• 2 1/2 tsp of salt
• Some black pepper to taste
Other ingredients:
• Breadcrumbs
• 300g white mushrooms
Vegan tartar sauce step 1:
• 300g silken tofu (drained)
• 2 tbsp nutritional yeast
• 4 - 6 tbsp olive oil
• 2 tbsp apple cider vinegar
• 3/4 tsp salt
• 1/2 tsp garlic powder
Vegan tartar sauce step 2:
Pickled gherkins (finely chopped)
METHOD:
Then add some breadcrumbs to a bowl.
Then mix together all vegan beer batter ingredients in a large bowl (using a fork or a whisk). Make sure there are no lumps.
Then dunk the mushrooms into the batter and afterwards roll them in the breadcrumbs until they are evenly covered.
Add plenty of oil to a pan and heat up. Fry the mushrooms in the pan until they are golden brown. Then place them on a kitchen towel to absorb the excess oil.
To make the vegan tartar sauce add all ingredients from step 1 into a blender and blend until you get a smooth cream - you can also use a whisk if you don't have a blender. Then pour into a bowl.
Step 2 is easy, just finely chop of a few pickled gherkins. Add them to the tartar sauce bowl and mix together.
Serve the beer battered mushrooms with a lemon wedge. Drizzle some lemon juice on top, dunk into the vegan tartar sauce and enjoy!

Basic Beer Batter Recipe ~Noreen's Kitchen Basics
Greetings! I have had so many requests to show how to make onion rings and to do that I have to start with a batter. My go to is a beer batter, but you can sub out club soda or plain flat water for the beer with out compromising the recipe.
This is super simple and super delicious and once you try this you are never going back!
This batter is perfect for anything! Fish, chicken, mushrooms, zucchini, onion rings! You name it! If you use this for chicken fingers, it will be just like Long John Silvers chicken planks. Toss a little of the extra batter into the hot oil for the crispy cruchies that LJS serves under all their fish and chicken!
I hope you will consider giving this a try and I hope you love it!
Happy Eating!

The Easiest Way to Make FRIED MUSHROOMS
Looking for an easy to make appetizer? Try these FRIED MUSHROOMS! These are extremely easy to prepare and you only need 6 or 7 ingredients... and that's including the spices.
To make it even better, you can serve these fried mushroom as a full meal either! Just add a side of mashed potatoes or a salad and you have a wonderful meat-less dinner on the table.
Fried mushrooms are best served with some sauce... my sauce of choice is always the classic tartar, but ranch or some other dressing would work great too.
