How To make Berry Best Fried Pies
1/2 cup sugar
1 tablespoon cornstarch
1/2 cup water
2 cups fresh OR frozen blueberries
DOUGH 2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
1/3 cup buttermilk
Cooking oil for frying
In a saucepan, combine sugar, cornstarch and water; add berries. Cook and stir over medium heat until the mixture comes to a boil. Cook and stir for 2 minutes; set aside to cool. Combine flour, baking soda and salt. Combine oil and buttermilk; stir into dry ingredients until mixture forms a ball. Roll on a floured board to 1/8-in thickness; cut into ten (10) 4-1/2 inch circles. Place 1 Tbps blueberry filling on each circle. Fold over; seal edges with a fork. In a skillet over medium heat, fry pies in 1/4 to 1/2 inch hot oil until golden brown, about 1 1/2 minutes per side. Drain on paper towels.

How to Make Fried Cherry Hand Pies
Fried Cherry Hand Pie - A delicious treat and huge upgrade to the supermarket variety's. A quick and easy crust that is no fuss and easy to roll out. The cherry filling is not just a sweet jam but packed with real tart cherries.
Crust - Makes 4 pies
1 cup flour
4 Tbls of frozen butter
1 large egg
Grate butter into flour and mix to combine
add beaten egg - stir
Add up to 5 Tbls of ice cold water - mixing after first 3
Additional water may be needed until dough comes together
knead briefly and cut into 4 equal pieces , wrap in plastic wrap and refrigerate at least 20 mins
Filling
1 1/2 to 2 cups of frozen tart cherries
1 Tbls of sugar
2 tsps of corn starch
pinch of salt
Sprinkle sugar over frozen berries in a microwave safe bowl
microwave 2 to 3 minutes until berries are thawed and juices released. Mixture should not be warm -but still cool
Strain juice and set berries aside
Mix in cornstarch to cool juice and microwave until bubbly and thicken approx 2 minutes Set aside
Assembly
Remove dough and roll out to approximately a 5 inch circle
place a tbls of thickend juice in center of dough and then place 6 to 8 cherries
Wet edges of dough with a egg wash or water
Fold over dough and seal well with fork or fingers
Complete the rest and let chill in refrigerator while you bring the oil to temp.
Frying
In a deep fryer or large pot heat appropriate amount of oil to 375 degrees Fahrenheit. (I use a large dutch oven)
fry pies until golden brown - 2 to 3 minutes max
drizzle with glaze (Powdered sugar, milk and vanilla)
