This easy Zucchini Bread Recipe is SO GOOD! This recipe has been passed down from generation to generation and it's delicious! It has a crispy crust and the interior is super moist with the best crumb. Grab it for a great snack and or wonderful for a simple grab 'n go breakfast! ✅Ingredients
• 1 cups all-purpose flour
• 1/2 cup whole wheat flour
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 2 teaspoons ground cinnamon
• 1/2 cup unsweetened applesauce
• 1 cup honey
• 1 large egg
• 1 teaspoon vanilla extract
• 1 cup grated zucchini
✅Instructions
00:00:23 - How to grate zucchini for zucchini bread
1️⃣ 00:00:16 - Preheat oven to 325 degrees F and lightly grease one 8x4 inch loaf pan.
2️⃣ 00:01:01 - In a large mixing bowl, stir together flour, wheat flour, salt, baking soda, baking powder, and cinnamon.
3️⃣ 00:01:25 - Pour in applesauce, honey, egg, and vanilla extract until combined.
4️⃣ 00:02:10 - Use a rubber spatula to fold in grated zucchini. Transfer to the prepared pan.
5️⃣ 00:02:39 - Bake 50-60 minutes until a toothpick inserted into the center comes out clean.

ZUCCHINI BREAD RECIPE
makes 2 loaves or 24 muffins
4 eggs (beat until foamy)
2/3 C oil
1 C sugar
2 C brown sugar
3 1/2 C grated zucchini (about 1 ½ lbs)
1 Tbsp real vanilla
4 C flour
1 ½ tsp salt
2 1/2 tsp baking powder
1 Tbsp cinnamon
1 C nuts
2 C Chocolate chips (optional)
Preheat oven to 350
In a medium bowl beat the eggs until foamy
Add the oil, sugar, brown sugar and vanilla – mix well
Add the zucchini and mix
In a large bowl mix the flour, baking powder, salt, and cinnamon, whisk
Add the wet to the dry and blend
Add the nuts (and/or chocolate chips)
Pour into two grease 8 1/2 x 4 1/2 loaf pans
Bake for 55 mins
** For Chocolate Zucchini Bread substitute ½ C flour for ½ C Cocoa.

Easy Zucchini Bread Recipe
2 cups of grated zucchini
3 cups of all purpose flour
2 1/4 cups white sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup of vegetable oil
3 teaspoons of vanilla extract
3 eggs
This should make enough batter to fill two bread pans!

You have to try this recipe out! This bread is so healthy packed full of fibre, which helps to CURB HUNGER. I would recommend 2 slices for breakfast for a healthy weight maintenance or weight loss. This bread keeps me satisfied till lunch!
In every slice, you are getting your vegetable, fruit, complex carbs and protein. Bread doesn't get healthier and more delicious than this. So try this out, make it on Zucchini Bread Day this Friday and share your bread picture with me on Instagram or Facebook.
NOTE (This recipe can be adapted for anyone):
- Zucchini is also know as Courgette. In Asia, you may also use Japanese Cucumber, which is very similar to zucchini.
- You may replace the Rye flour to any other flour of your choice: whole-wheat flour, coconut flour etc
- If you are a Vegan, you can replace the eggs with 1/2 cup of dairy-free yoghurt or silken tofu.
- As for the milk, any milk of your choice: dairy milk, almond milk, soya milk, rice milk etc.
