RECIPE DESCRIPTION:
Ingredients
FOR THE POTATO BASKET
Potatoes 4 Large, peeled
Black pepper 2 Teaspoon
Salt 1 Teaspoon (to taste)
Cornstarch 2 Tablespoon
Cooking spray 2 Tablespoon
FOR THE STUFFING
Chickpeas 1⁄2 Cup (8 tbs), boiled
Sprouted green gram 1⁄2 Cup (8 tbs), boiled
Onion 1⁄2 Cup (8 tbs), finely chopped
Red bell pepper 1⁄2 Cup (8 tbs), finely chopped
Green bell pepper 1⁄2 Cup (8 tbs)
Date tamarind chutney 1⁄4 Cup (4 tbs)
Coriander mint chutney 1⁄4 Cup (4 tbs)
Sev 1⁄4 Cup (4 tbs)
Directions
GETTING READY
1. Preheat the oven to 350 degrees F.
MAKING
2. For the potato basket: In a bowl, place a small holed shredder and shred about 3 potatoes. Once done, take the big holed shredder and shred the last potato into the same bowl.
3. Using both squeeze out excess water from the shredded potatoes and remove into another bowl.
4. In the above squeezed potato mixture add black pepper, salt, corn starch and mix until well combined.
5. To make the baskets, take a 12 cup, cup-cake tray and grease the cups with some cooking oil. Using a tablespoon, spoon the shredded potato mixture into the greased cups.
6. Once done, using two fingers, make a well in the center and spread it towards the edges to make the shape of a cup. Bake this in the preheated oven at 350 degrees F for 30 minutes or until golden brown and crisp.
7. After 30 minutes, remove the tray and using a fork gently remove the potato baskets and set them on a plate.
8. For the stuffing: Take the baked potato baskets one at a time and stuff it with 1/2 teaspoon each of the following ingredients of chick peas, sprouted green gram, onion, red bell pepper, green bell pepper, date tamarind chutney and coriander mint chutney.
SERVING
9. Serve these stuffed potato baskets garnished with sev.

Potato Birds Nest With Stir Fry Chicken Recipe By SooperChef

Stir Fried Chicken in Potato Nest
Ingredients:
3 K&N’s Tender Brest
4 Potatoes
3 TBSP Corn Flour
1 Egg
¼ cup Onion
1 cup Bell pepper (Julienne)
¼ cup Tomato (Julienne)
¼ cup Mushroom (Sliced)
¼ cup Cauliflower
2 tbsp Ketchup
1 tbsp Garlic, chopped
1 tbsp Brown sugar
½ tsp Black pepper
2 Tbsp of Soy Sauce
¼ cup of Water
2 Tbsp of Oyster Sauce
2 tbsp Chili sauce
Salt to taste
2 tbsp Vegetable Oil
1- Cut the potatoes very thinly julienne form and put them into a bowl then add egg, cornflour and mix it well.
2- Now take a strainer and put these thinly sliced potatoes into the strainer in nest shape.
3- Next, take a pan, add cooking oil, and let it hot. Then put this strainer into hot oil and fry for 3-4 mins. Take out the potato nest from the strainer and fry it again without strainer till light brown.
4- thaw the K&N’s Tender Brest as per Instructions on the pack and slice.
5 - In a large skillet over high heat, add the oil and allow it to get hot. Add the K&N’s Tender Brest and let it cook for a few minutes, remove the chicken to a plate and set aside.
6- Add a touch more oil to the hot skillet and add the garlic, saute for about a minute and add in the ketchup, soy sauce,chili sauce, black pepper, salt and oyster sauce. Whisk together with water.
7-Now add the prepared K&N’s Tender Breast slice back in and cook it for about a minute or two then add vegetables and cook until the sauce thickens. Serve immediately in the Potato nest.

Cooking Time : 20-25 mins
Serve: 2-3

ٹماٹر(لمبائی میں کٹے ہوئے) 1چوتھائی کپ
مشروم سلائسیز 1چوتھائی کپ
گوبھی 1چوتھائی کپ
کیچپ 2کھانے کے چمچ
لہسن(چوپڈ) 1کھانے کا چمچ
براؤن شوگر 1کھانے کا چمچ
کالی مرچ آدھا چائے کا چمچ
سویا ساس 2کھانے کے چمچ
پانی 1چوتھائی کپ
اوسٹر ساس 2کھانے کے چمچ
چِلی ساس 2کھانے کے چمچ
نمک حسبِ ذائقہ
کھانے کا تیل 2کھانے کے چمچ
ترکیب:
ایک باؤل میں لمبائی میں باریک کٹے ہوئے ٓلو، انڈہ اور گوبھی ڈال کر اچھی طرح مکس کر یں۔
اب ایک چھاننی لیں اس میں میرینیٹ کئے ہوئے آلو گھونسلے کی شکل بنا کر چھاننی میں ڈالیں۔
ایک پین میں کھانے کا تیل گرم کر یں اوراس میں میرینیٹ کئے ہوئے آلو 3-4منٹ فرائی کرلیں۔
اب اس چھاننی میں سے آلو کا گھونسلا (Potato Nest)نکال کر گرم تیل میں ڈال کر مزید 2-3منٹ فرائی کریں۔
پیکٹ پر دی گئی ہدایات کے مطابق K&N's TendeBrestنرم کر لیں اور لمبے پیسیسز میں کاٹ لیں۔
پھر ایک بڑے پین میں تیز آنچ پر کھانے کا تیل گرم کر کے K&N's TenderBreast کے لمبے پیسیز کو ایکسے دو منٹ کے لئے پکا لیں اور چکن نکال کر ایک سائیڈ پر رکھ دیں۔
پھراسی برتن میں کھانے کا تیل گرم کریں اوراس میں لہسن ڈال کرتھوڑا سا پکائیں ۔
اب اس میں کیچپ، سویا ساس ، چِلی ساس ، کالی مرچ، نمک، اوسٹر ساس اورپانی ڈال کر اچھی طرح مکس کریں۔
پھراس میں فرائی کیا ہوا چکن ڈال کر تیز آنچ پر2منٹ کے لئے پکائیں۔
اب اس میں پیاز، گوبھی، ٹماٹر، مشرومزاور شملا مرچ ڈال کر تھوڑی دیر پکا لیں۔
تیار کئے ہوئے آلو کے گھونسلے (Potato Nest)ڈال کر ہرے پیاز کی گارنش کر کے سرو کریں۔
