How To make Biscotti D'Amaretti
3 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 cup butter or margarine
softened
1 cup sugar
3 eggs
2 teaspoons lemon peel :
finely shredded
1/4 teaspoon almond extract
1 pinch saffron if desired
1/2 cup almonds :
finely chopped,toast
1 egg white
Combine flour and baking powder. In large mixer bowl beat butter and sugar until blended. Beat in eggs, lemon peel, almond extract and saffron. Beat in flour mixture until well blended. Stir in almonds. Divide dough in half. Shape each portion into a 12x2x1-inch loaf. Place 6 inches apart on a lightly greased cookie sheet. Beat the egg white until foamy. Brush over tops of loaves. Bake in 375F oven 20 to 25 minutes or until light brown. Cool on cookie sheet about 1 hour. Cut each loaf diagonally into 1/2- inch thick slices. Lay slices, cut side down, on cookie sheet. Bake in a 325F oven 10 minutes longer or until dry and crisp. Cool on wire rack. These cookies are good made several days ahead and stored in a paper bag to soften slightly. To store longer, place in a covered container. Makes about 36 cookies.

Ingredients:
- 1 egg white (30 grams)
- 1/5 teaspoon salt
- 50 grams of sugar
- 110 grams of almond flour
- 30 grams of candied lemon peel
- 1/2 teaspoon lemon zest
Additionally:
- 2 tablespoons powdered sugar
- 2 tablespoons of sugar
Bake in preheated 350°F (180°C) oven / 16-18 minutes.

Here in Sicily, these almond cookies are super popular! I would safely say that almost every pastry shop carries them. It was so much fun to re-create such a traditional sweet that I’ve seen for years in bakery shops since I was a kid.
These almond pastries are super easy to make and you only need 3 main ingredients. They are soft and chewy and a great dessert idea.
RECIPE:
250 g peeled almonds (1 cup + 1/3 cup + 1/3 cup)
150 g powdered sugar (about 1 cup)
2 egg whites
Maraschino cherries (about 15 cherries)
1 g Vanillin or 1 tsp vanilla paste (optional)
Lemon zest to your taste (optional)

These Italian almond cookies (a.k.a. soft amaretti or amaretti morbidi) appear in my kitchen very often because they’re quick and easy to make, they taste delicious (especially if you love the almond flavor) and they require 3 basic ingredients (egg whites, almond flour, sugar), plus some aromatics and a pinch of salt.
In Italian, the word amaretti is derived from the word amaro, which means bitter. And so in order to get the true authentic taste of an amaretti, you must use ground bitter almonds or replace them with bitter almond extract. Luckily, most almond extracts have already bitter almond extract as their base because that’s what gives them their intense scent.

TIP: Use room temperature egg whites because they will whip up much faster.
