How To make Biscotti Di Pignoli
2/3 c Pine nuts
1/2 c Butter
3/4 c Sugar
2 Eggs
2 tb Lemon juice
2 tb Lemon zest
2 c Plus 2 Tbs unbleached or
-all-purpose flour, 1 1/2 ts Baking powder
1/4 ts Salt
Place nuts in a shallow pan and bake in a 180C/350F oven for 6 to 8 minutes or until golden brown. Let cool. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, lemon juice and zest. In a bowl, combine the flour, baking powder and salt. Add to the creamed mixture, mixing until blended. Fold in nuts. Divide dough in half. On a greased and floured baking sheet pat out into two logs about 1/2 inch high, 1.5 inches wide and 14 inches long, spacing them at least 2 inches apart. Bake in the middle of a 170C/325F oven for 25 minutes or until lightly
browned. Transfer from the baking sheet to a rack. Let cool for 5 minutes. Place on a cutting board. With a serrated knife slice diagonally at a 45 degree angle about 1/2 inch thick. Lay the slices flat on the baking sheet and return to the oven for 10 minutes longer, turning them over once, to dry slightly. Let cool on a rack. Store in a tightly covered container. These cookies keep well. Makes about 3.5 to 4 dozen.

Ingredients:- (For 44 cookies)
1 pound of almond paste (454 grams)
2 cups granulated sugar (450 grams)
4 egg whites at room temperature
Zest of a lemon
1 cup or more of pine nuts (200 grams plus)
Directions:-
Step#1- In a food processor add the almond paste and pulse to a crumble.
Step#2- Add half of the sugar and pulse until well combined.
Step#3- In a separate bowl combine the rest of the sugar and egg whites.
Step#4- With an electronic mixer mix until gently whipped and white. Grate your lemon peel in and add the almond mixture, continue mixing till the dough becomes sticky.
Step#5- Place pine nuts in a shallow pan.
Step#6- Fill a small bowl with cold water, wet the palm of your hands with water, grab a small amount of dough, and form a ball. Roll in the pine nuts and place them on a parchment paper-lined cookie sheet.
I like to roll the top and bottom for extra pine nuts. The above-listed ingredients make about 44 cookies.
Bake at 325 degrees Fahrenheit for about 22 to 25 minutes.

Here in Sicily, these almond cookies are super popular! I would safely say that almost every pastry shop carries them. It was so much fun to re-create such a traditional sweet that I’ve seen for years in bakery shops since I was a kid.
These almond pastries are super easy to make and you only need 3 main ingredients. They are soft and chewy and a great dessert idea.
RECIPE:
250 g peeled almonds (1 cup + 1/3 cup + 1/3 cup)
150 g powdered sugar (about 1 cup)
2 egg whites
Maraschino cherries (about 15 cherries)
1 g Vanillin or 1 tsp vanilla paste (optional)
Lemon zest to your taste (optional)

[ASMR] ???????? Italian Pignoli Cookie Recipe: A Traditional Italian pine nuts Cookie.(Biscotti ai Pinoli)
Hi! Everyone! Today we're going to show you how to make a super quick and easy to make Italian dessert: Pignoli cookies.
Pignoli is “pine nuts” in English. But in Italian, pine nuts are called “Pinoli”, Pignoli is another word which means fussy people. But anyway, these cookies are super delicious and quick to make. They’re ideal for holidays or any special occasion.
These cookies are made of almond paste mixed with sugar and egg white, then coated in pine nuts. Totally gluten-free. They have soft, moist and chewy almond flavor inside, and crisp exteriors studded with pine nuts. They’re one of my favorite cookies.
This recipe is really easy. If you have a food processor, you can make it from start to finish in 30 minutes. Let’s bake it. ????

Italian Pignoli Cookies Recipe
☞ Yields: 8~9 cookies
✎ Ingredients
almond paste 110g
granulated sugar 55g
salt 1g
egg white 18~20g
pine nuts 80g
powdered sugar for dusting Q.S
✎ Instructions
1. Cut almond paste into small pieces and place them in a food processor, pulse until crumbly.
2. Add sugar and salt and pulse until mixture resembles a coarse crumb.
3. Add 1/2~2/3 egg white and continue processing until the dough comes together. If the dough is a little dry, add the remaining egg white. The dough will be thick and slightly sticky but shouldn't be running, you'll be able to roll it into balls between your hands.
4. Line a baking sheet with parchment paper.
5. Scoop up the dough and roll into a ball, about 19~20g each.
6. Roll the dough ball in pine nuts and toss well to coat. Then place balls onto a baking sheet.
7. Preheat the oven to 170C, bake for 20-22 minutes or until the nuts and surface of cookies are just starting to turn light golden, don't over bake.
8. Once baked, let cookies stay on the tray briefly for about 5 minutes, then dust with powdered sugar and transfer to a wire rack to cool.
