Fruit & Nut Biscotti
There's something extra delicious about a crunchy yet flavorful fruit and nut biscotti. Whether paired with coffee or eaten alone, this is the perfect breakfast treat. Plus, it's a really simple recipe that can be customized to your own preferences!

INGREDIENTS
- 2 tablespoons butter, room temperature
- 2 eggs
- 1 cup sugar
- zest of 1/2 an orange
- 1 tablespoon milk
- 1 tablespoon honey
- 1/8 tsp salt
- 1/4 teaspoon baking powder
- 2 teaspoon vanilla
- 1 + 3/4 cups flour
- 1 + 1/2 cups toasted nuts (I use sliced almonds)
- 1 cup dried fruit
DIRECTIONS
Cream the butter and eggs (you can of course use an electric mixer). Add sugar, zest, milk, honey, and a pinch of salt. Mix in baking powder, vanilla, and flour. Finish by adding nuts and dried fruit.
On a parchment- or Silpat-lined baking sheet, form two rectangles, 14 inches long and approximately three inches wide. Bake at 350 degrees for 25-30 minutes until lightly golden. Remove from oven and slide onto a cutting board and slice into one-inch pieces on a diagonal. Place back on baking sheets, cut side down, and bake at 325 degrees for 12-15 minutes longer, watching closely so they do not burn (check the bottoms for burning).
Remove from oven and cool on wire racks. Once cooled, the biscotti will be dry and perfect for dunking into a hot cup of coffee. This recipe can be adapted with different fruits, nuts, and flavorings.

Thin Almond Cranberry Biscotti Recipe【薄焼きアーモンドクランベリービスコッティ レシピ】

This twice-baked cookie is Italian tradition.
You can't stop eating the deliciousness of sour sweet and baked almond flavor.
The lightly sweet, crunchy, crispy and tasty one will become one of your favorite.

Ingredients: about 40 cookies (about 1/8 thickness)
bread loaf pan for the 1st bake 9.2×5.2× 2.7 in. by Wilton
3 Egg white
A pinch of salt
2/3 cup Sugar powder
1 tsp Vanilla extract
3/4 cup All purpose flour (King Arthur all purpose)
2/3 cup Almonds (Kirkland from COSTCO)
3/4 cup Dried cranberries (365 Organic Cranberries sweetened from Whole Foods Market)
Any oil for greasing the pan (I use olive oil.)

Ingredients
4 oz (113g) unsalted butter, softened
1 and 1/2 cups granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
3 eggs at room temperature
2 and 1/2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
4 oz semi sweet chocolate, chopped
1 cup (110g) chopped walnuts
Instructions
Preheat the oven to 325°F, 160 °C.
In a tabletop mixer that has been fitted with the paddle attachment beat the sugar, butter, salt and vanilla until combined and fluffy.
Add the eggs and beat until incorporated
In a mixing bowl combine the flour, cocoa powder, and baking powder. Whisk them all together.
Add the flour mixture to the mixer and beat on low speed until combined.
Add the walnuts and chocolate and mix until incorporated.
Lightly flour a work surface and transfer the cookie dough to the counter. Divide it into 2 equal portions. Roll each portion into a 12-inch log.
Place the logs on a baking tray that has been lined with parchment paper. Flatten the logs to about 3/4-inch thick. Sprinkle the top with granulated sugar.
Bake on the center rack of the preheated oven for about 35 minutes or until firm to the touch.
Transfer to a cutting board to cool for about 15 minutes.
Cut into slices and place them back onto the baking tray.
Bake for about 15 minutes at 325°F.
Cool completely and serve! Kali Orexi.
Notes
Biscotti will keep fresh in an airtight container at room temperature for 2 weeks.

Easy Biscotti with Cranberries and Pistachios
This is a cranberry biscotti recipe that will blow your socks off! As you prepare for the holiday season try out this tasty and colorful treat to go with your cup of coffee. It's a cranberry and pistachio biscotti that you will enjoy with friends and family. This is the video that will show you how to make a holiday biscotti that you will be proud of.
Ingredients:
1/4 cup extra virgin olive oil
3/4 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 eggs
1 3/4 cup flour
1 teaspoon baking powder
1/2 cup dried cranberries
1 1/2 cups shelled pistachios
Cream oil and sugar into a bowl.
Add extracts and beat in 2 eggs.
Mix dry ingredients (flour and baking powder) in a separate bowl and add slowly to your wet ingredients as you mix with a hand mixer.
Add cranberries and pistachios then mix with a spoon.
Cover and refrigerate about 30 minutes so that it is easy to form into a log before baking.
Bake for 30 minutes at 300℉, then cool for 10 minutes.
Slice into 1/2 inch slices, lay onto their sides on a baking sheet, and bake again for 8 minutes at 275℉.
Turn over and keep baking for 4 more minutes.
Cool and serve!

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
