How To make Biscotti with Almonds/Orange/Chocolate
8 Ounces unsalted butter
2 sticks
1 1/2 Cups sugar
3 Tablespoons orange rind :
finely grated
2 Tablespoons vanilla extract -- pure vanilla
6 Cups all-purpose flour
1 Tablespoon baking powder
1 Teaspoon salt
6 eggs beaten
1/4 Cup amaretto
2 Cups almonds, blanched :
toasted,sliced
2 Cups chocolate chips -- or pieces
Preheat oven to 350 degrees. In an electric mixing bowl, combine butter, sugar, orange peel and vanilla; beat until light and creamy. Sift together the dry ingredients. With the mixer on slow, add dry ingredients to butter mixture and mix until thoroughly combined. Slowly add eggs and amaretto. Add almonds and chocolate just until combined. Remove dough to a floured surface and form into two flat logs about 4 inches wide and the length of your cookie sheet. Lay the logs onto buttered sheets and place on lower rack of the oven. Bake until lightly browned, about 45 minutes. Remove to a rack to cool. With a serrated knife, cut the loaves into half-inch slices, placing the cut slices flat oon the cookie sheet. To make crisp, return them to the lower rack of the oven and cook until golden, 15-20 minutes. Remove the slices to a wire rack to cool then store in an airtight container. Use a decorative tin for gift giving. NOTE: If the biscotti lose their crispness, repeat the crisping stage. Jo Anne Merrill, recipe from the San Diego Union 9/1/93

ALMOND, ORANGE, CHOCOLATE BISCOTTI (BISCOTTI DI MANDORLA, E CIOCCOLATA)
We think our almond, orange and chocolate biscotti are one of the best coffee biscuits ever! They are so delicious, packed with goodies and it is impossible to have just one. You will need a huge pot of coffee for theses. Made with almonds, chocolate, sultanas and with the citrus flavours they are so delightful, and perfect with coffee and even tea. Typically italian style they will impress everyone, from families to friends. This recipe is also great because it makes a large batch of almond, orange and chocolate biscotti. Try them today, you will not be disappointed. Almond, orange and chocolate biscotti
NGREDIENTS:
200grams x plain flour
200grams x self raising flour
250grams x dark chocolate (we used chocolate buttons for this)
250grams x almonds coarsely chopped
200grams x caster sugar
80grams x sultanas finely chopped
grated zest of two oranges
3 x eggs
1 x teaspoon vanilla essence
juice of one lemon
METHOD:
-preheat oven to 160 degrees celsius (320 degrees F)
-prepare baking trays with paper or grease the trays
-place all prepared dry ingredients into mixing bowl and mix for 1 - 2 minutes so that all these ingredients can blend evenly together
-once all dry ingredients are mixed then add the wet ingredients to the mix
-keep mixing till all the mix has blended together and formed the dough
-on a lightly floured surface turn the dough out and start to shape the dough into one large and even log and then cut the log into two even pieces
-place the two logs onto the prepared baking trays
-bake for 25 minutes or till golden brown and firm to touch
-allow the biscuit logs to cool on the tray at room temperature for at least two hours (you can even leave them overnight)
-preheat oven to 100 degrees celsius (210 degrees F)
-once logs are cooled start to slice them using a serrated knife evenly and place back on prepared baking trays
-bake in oven for 25 minute
-remove from oven and allow to cool on cooling racks
-serve with coffee!

Ingredients
¾ cup (150 g) granulated sugar (caster sugar)
½ cup (125 mL) vegetable oil
2 large eggs
2 tsp (10 mL) finely grated lemon zest
¾ tsp (4 mL) pure almond extract
¾ cup (120 g) whole raw almonds
½ cup (65 g) dried cranberries
1 ¾ cups (265 g) all-purpose flour (plain flour)
2 tsp (10 mL) baking powder
½ tsp (2 mL) fine salt
½ tsp (2 mL) ground nutmeg
1 egg whisked with 2 Tbsp (30 mL) water, for brushing
Directions
1. Preheat the oven to 325 F (160 C) and line a baking tray with parchment paper.
2. In a large mixing bowl, whisk the sugar, oil, eggs, lemon zest and almond extract together. Stir in the almonds and dried cranberries.
3. Sift the flour, baking powder, salt and nutmeg in a separate bowl, add this to the wet mixture and stir until completely blended. Shape the dough into 2 logs about 12-inches long, place on the baking tray and pat down to flatten (you can flour your hands to prevent sticking). Brush the logs with the egg mixture and bake for about 35 minutes, until a rich golden brown. Cool the logs on the baking tray a little bit, but so they are still warm to the touch.
4. Using a serrated knife, slice the logs into cookies just over ½-inch thick. Place these back on the baking tray, leaving just a little space between them (you may need a second baking tray) and return them to the oven to bake about 20 minutes, until lightly browned. Remove from the baking tray to cool completely.
