2 c Cooked or canned black beans -- (rinse & drained canned) 2 c Cooked rice 1 1/2 c Fresh cilantro 1/4 c Lime juice 3/4 c Oil 1/2 c Chopped onion 2 Garlic cloves; crushed Salt Freshly ground black pepper Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Here is a fun and creative thing that you can do with your rice and beans, if you are trying to use up the things you have in your cupboard. for this salad I used Red leaf salad radishes cucumbers Tomatoes Avocado Sunflower seeds brown rice and quinoa cooked together sprouted and cooked black eyed peas And served it with a homemade tahini dressing.
