Raise your hand if you have already made this recipe 10 times? ????????♀️ This dish is so light on your wallet and when I first went vegan I was SHOCKED to find out that I could get a week full of groceries (breakfast, lunch, dinner, and a SNACK) for just $35. ???? Since I was in college at that time and I had to keep my expenses on the low low, I quickly realized that my main staples for a protein packed meal were going to be beans, quinoa, and oats so your girl Gabrielle got creative! ???????? These zesty balls are seriously sooooo flavorful and they are perfect as a burger patty as well. Dig in and enjoy my loves! ???? @onegreatvegan
INGREDIENTS:
Vegan Cheese or Cashew Parmesan (⅓ Cup)
Fresh Herbs or Micro Greens (¼ Cup)
BLACK BEAN + QUINOA ZESTY BALLS:
Cooked Black Beans (2 Cups)
Cooked Quinoa (2 Cups)
Rolled Oats (1.5 Cups)
Canned Chipotle Peppers or Sun Dried Tomatoes (⅓ Cup)
Red Onion (½ Onion)
Garlic (3-6 Cloves)
Green Onions (1 Cup)
Taco Seasoning (3 Tbs)
Steak Seasoning (2 Tbs)
Nutritional Yeast (½ Cup)
Smoked Paprika (1 Tbs)
Salt and Pepper to Taste
SMOKY SAUCE:
Soy-Free Vegan Mayonnaise @followyourheart or Hummus (1.5 Cups)
Italian Vinaigrette Dressing (⅓ Cup)
Jerk Dried Seasoning (2-3 Tbs)

Black Bean Breakfast Casserole:
1 c. oil-free hasbhrowns
1/3 c. chopped bell pepper
1/4 c. riced cauliflower
1/2 c. black beans (you can season these with some onion powder & paprika for more flavor if you prefer!)
1 container liquid JUST Egg*
1/4 tsp. kala namak (aka black salt)
1/4 tsp. garlic powder
+ green onions
Bake @ 375F for 45 mins.
*If you don't want to use JUST Egg, I would suggest using a recipe with tofu + chickpea flour such as this one: and add black beans to it!
Cilantro Lime Dressing
1/2 c. white beans
1/2 c. soaked cashews
1-2 cloves garlic (I used 1)
1/2 tsp. salt
1/2 tsp. garlic powder
Juice of 1 1/2 limes
Handful cilantro (use the stems too to avoid waste!)
1/2 - 3/4 c. water (start with less and add more as needed)
1 TBL chopped jalapeño (I subbed with pickled hot pepper rings)
Blend all & taste! Adjust seasoning as needed.
Black Bean Mango Salsa (I loosely followed this recipe)
I modified by using 1 tsp. lime zest + juice of 1 lime & omitted Frank's Red Hot sauce
I also subbed jalapeño with pickled hot pepper rings + added corn & tomato
You can serve this salsa with these oil-free tortilla chips!
Black Bean Taquitos:
I used the black bean filling from this video:
And baked at 375F for 30 minutes, flipping halfway through
Black Bean Brownies:
I modified this recipe by changing oil to almond butter, omitting baking powder & adding 1/3 cup walnuts.

Before we switched to a whole food, plant-based diet, we spent years trying to lose weight with things like portion control, calorie counting, etc. One of our favorite recipes to make while counting calories was a delicious black bean soup from one of Rocco DiSpirito’s cookbooks. It was a simple recipe and became a staple in our kitchen for several years.
When we made the switch to plant-based, I knew this recipe was one that we could pretty easily convert. Recently, we have started digging out some of our old cookbooks for inspiration, and we decided to try out our own version of the black bean soup. The original recipe was super simple because you used things like ketchup and salsa in it. We tested it out a few times and finally landed on our very own whole food, plant-based version!
