BLACK BEAN SOUP WITH SMOKED SAUSAGE & SWEET POTATOES: Savory Soup/Alaska from Scratch Cookbook
I'm calling this Black Bean Soup with Smoked Sausage & Sweet Potatoes, but the real name of this recipe is Black Bean Soup with REINDEER Sausage & Sweet Potatoes. I just don't have access to reindeer sausage where I live, and I'm guessing that may be the case for many of you who are watching. I came upon this recipe on my recent trip to Alaska. While visiting a close friend of mine, who now lives in North Kenai, I browsed through one of her cookbooks called, Alaska from Scratch. The photography in it was gorgeous. The recipes all looked scrumptious. And best of all, I loved the personal stories that were so beautifully woven throughout the book. It was written by Maya Wilson. She's a chef, a food blogger, and a food columnist. As soon as I returned home, I made one of her soups, and it was so good, I decided to contact her directly and ask her permission to share this recipe with you. I was so thrilled when she got back to me right away with a yes! So, if you happen to have some reindeer sausage in your freezer, pull it out, or just grab your favorite smoked sausage (beef, chicken, or turkey) and get ready to enjoy one of the most delicious and satisfying savory soups anywhere.
Black Bean Soup with Smoked (Reindeer) Sausage & Sweet Potatoes
1 lb. smoked sausage, sliced
1 onion, chopped
3 garlic cloves, minced
8 oz. sweet potatoes, peeled & chopped
2 tsp. chili powder
2Tbsp. ketchup
1 Tbsp. Worcestershire sauce
1/4 tsp. liquid smoke
salt & ground pepper to taste
1 (14.5 oz.) can chicken broth
1 (14.5 oz.) can fire roasted diced tomatoes
4 (15 oz.) cans black beans, drained & rinsed
1/4 cup fresh cilantro, chopped
juice of half a lime
Serve with:
corn chips
sour cream
more lime juice & cilantro
Heat large pot or dutch oven on stove with burner set to medium-high heat. Add in 1 Tbsp. cooking oil, then cook sliced sausage until browned. Add the onion and cook for 2 minutes, or until tender. Add the minced garlic and cook for 1 minute.
Toss the sweet potato in the pot and add the chili powder, ketchup, Worcestershire sauce, liquid smoke, and salt and pepper to taste. Stir until the sausage and vegetables are coated with the seasonings.
Pour in the chicken broth, tomatoes, and black beans. Stir, cover, and reduce the heat to medium-low. Simmer for 15 minutes, or until the sweet potato is tender.
Turn off the heat. Add the cilantro and lime juice. Taste for seasoning and add more salt as needed. Serve hot with sour cream, corn chips and more chopped cilantro, with lime wedges on the side.

▢2 tablespoons avocado oil
▢1 yellow onion diced
▢1 bell pepper diced
▢4 cloves garlic minced
▢1 jalapeño diced, seeds & ribs removed for less spice
▢1 teaspoon garlic powder
▢1 teaspoon onion powder
▢1 teaspoon smoked paprika
▢1 teaspoon cumin
▢1/4-1/2 teaspoon chipotle chili powder to taste
▢1/2 teaspoon pepper
▢1-2 chipotle peppers in adobo chopped, to taste
▢1 28-ounce can crushed tomatoes I used fire roasted
▢3 cups broth I used vegan chicken broth
▢1 tablespoon low sodium soy sauce or tamari for GF
▢3 15-ounce cans black beans drained & rinsed
▢1 lime juiced, plus more for serving
▢avocado, non-dairy yogurt, cilantro, tortillas for serving

How To Make Easy Spicy Black Bean Soup | Three-Bean & Barley Soup Recipe

A simple and healthy soup made with Organic Black Bean Soup Mix and everyday ingredients. It’s so delicious and packed with flavor and all kinds of nutritional goodness!
Prep Time: 8 hours | Cook Time: 50 min | Total Time: 8 hours 50 min | Servings: 4
INGREDIENTS:
• 2 tsp neutral cooking oil
• 1 yellow onion, peeled and diced
• 1 carrot, chopped
• 4 cloves garlic, peeled and minced
• 4 cups vegetable broth
• 2 cups organic black bean soup mix, soaked overnight (
• 1 tbsp chili powder
• 1 tbsp freshly ground cumin seeds (
• 1 tsp dried oregano
• 1 tsp smoked paprika
• 1/2 tsp cayenne powder optional
• 2 whole bay leaves (
• Salt and pepper to taste
• Green onions, sour cream, and lime wedges for serving
INSTRUCTIONS:
1. Rinse 2 cups of organic black bean soup mix. Cover with water and soak overnight.
2. Heat the oil in a soup pot over medium heat.
3. Add onions, carrots, and garlic. Cook, stirring frequently about 10 min.
4. Add the black bean soup mix. Season with chili powder, cumin, smoked paprika, oregano, and cayenne powder, and add a sprinkle of salt and pepper. Add bay leaves.
5. Pour in the vegetable broth and bring to a boil.
6. Reduce heat and simmer for 40 min.
7. Remove bay leaves and ladle the black bean soup into bowls.
8. Serve with chopped green onions, sour cream, and lime wedges.
