Quinoa and Black Bean Chili
Enjoy a healthful, vegetarian meal packed with protein and flavor! In this hearty recipe, GOYA® Low Sodium Black Beans are cooked with onions, a medley of spices, rich tomato sauce, bell peppers and a hint of smoky chipotle. Once ready, the chili is mixed with GOYA® Organic Quinoa and corn, and garnished with fresh cilantro sprigs for an extra touch of flavor. This chili is good, and good for you, too!

Ingredients
1 cup GOYA® Organic Quinoa
1 tbsp. GOYA® Extra Virgin Olive Oil, divided
1 large onion, chopped
1tbsp. GOYA® Minced Garlic
1tbsp. chili powder
1tbsp. GOYA® Ground Cumin
1 tsp. GOYA® Oregano Leaves
1 can (8 oz.) GOYA® Tomato Sauce
2cans (15.5 oz. each) GOYA® Black Beans, or GOYA® Low Sodium Black Beans, drained and rinsed
½ large green pepper, seeded and diced
½ large red pepper, seeded and diced
1 tbsp. GOYA® Chipotle Peppers in Adobo Sauce, nely chopped
1 can (15.25 oz.) GOYA® Golden Corn, drained and rinsed
Fresh cilantro, chopped

Quinoa Sweet Potato Black Bean Chili – This recipe comes from my son, Luke, who has made this dish for us several times when he was visiting. It is always nice to have a couple of great cooks in the family (Carlo IV that means you also). It is a Quinoa chili.
When visiting they don’t mind pitching in and cooking dinner occasionally. This is one of those recipes that has been prepared by Luke. There’s nothing complicated in this recipe, everything is probably in your pantry right now. You should try this quinoa stew recipe.

Recipe:
Black Bean, Sweet Potato and Quinoa Chilli
Serves 4-6
1 tbsp olive oil
1 onion, chopped
5 garlic cloves, chopped
1 1/2 tablespoon chilli powder
1 tablespoon ground coriander
1 can chopped tomatoes
250g dried black beans
3 teaspoons chipotle paste
1 teaspoon dried oregano
2 teaspoons salt + more to taste
2-3 medium sweet potatoes cut into cubes
1/4 cup quinoa
sour cream, to top(optional)
spring onions, to top(optional)
Heat the oil in a heavy large pot over medium heat.s Add the onion and cook until soft and beginning to brown, 6-7 minutes. Add garlic, chilli powder, coriander and stir. Cook together for another minute.
Stir in the tomatoes with their juices, beans, chipotle paste and oregano. Add 5 tins of water and bring to a boil. Reduce heat to low, cover with lid and simmer until beans are flavourful, about 3hrs.
Half way through cooking, add the sweet potatoes, quinoa and salt. Place the lid back on and simmer for the remaining time, or until the beans are soft and tender. Add more water if the chilli becomes too thick. Season to taste with salt and pepper. Serve with sour cream and spring onion.
