Gluten Free Pecan Pie Bars with Oatmeal Crust
These Gluten-Free Pecan Pie Bars have a sweet crunchy topping, with a cinnamon maple filled gooey center, which sits on top of a hearty oatmeal crust!

Ingredients
Crust
* 2 cups finely ground oat flour*
* 1 egg
* ¼ cup coconut sugar
* 1/3 cup almond milk
* 1/3 cup melted butter or ghee
* 1/2 teaspoon cinnamon
* 1 dash nutmeg
Topping:
* ½ cup almond flour fine
* 2 cups pecan halves
* ½ cup maple syrup
* ½ teaspoon cinnamon
* 1 dash nutmeg
* 1 tablespoon melted butter or ghee

Pecan Pie Recipe
1 Cup Sugar
3 Eggs
1 Cup Corn Syrup
2 Tbs. Butter
1 tsp. Vanilla Extract
1 pinch of salt (omit if you use salted butter)
1 1/2 Cups of Pecan
1 Deep Dish Pie Crust
Mix sugar, eggs, and butter together.
Add salt, vanilla and pecans. Mix throughly.
Pour pecan mixure into uncooked Pie Crust.
Bake in a 350 degrees preheated oven for 60-70 mins. Until middle no longer jiggles.
Let cool on wire rack.

This chocolate oatmeal chocolate banana cake is one of the easiest desserts you can make, you need only 5 basic ingredients and 5 minutes of work. This oat cake is healthy, sugar free, and delicious.

Ingredients:
For the cake:
120g Rolled oats
1 cup (240ml) Milk, hot
2 Ripe Bananas (200g)
2 Eggs
3 tablespoons Cocoa powder
1 teaspoon Baking powder
For topping:
100g Dark chocolate
1/4 cup (60ml) Milk
Nuts of choice
Directions:
1. Make the cake: Preheat oven to 180C (350F). Grease a 8-inch (20cm) round pan and set aside.
2. In a large bowl, place rolled oats, pour in milk and allow to soak for 15 minutes.
3. In a separate bowl, mash bananas, add eggs and whisk until combined. Add cocoa powder, baking powder and mix until combined. At this stage you can add sweetener to make the cake a bit sweeter.
4. Pour soaked oats into the bowl with mashed bananas and mix until combined.
5. Pour the batter to prepared pan and bake for 25-30 minutes or until
6. Allow to cool for 5 minutes, then release from the pan and allow to cool completely.
7. Make the topping: chop the chocolate and transfer into a heatproof bowl. pour in hot milk, allow to sit for 1-2 minutes and mix until melted and smooth. Drizzle the chocolate over the cake.
8. Chop the nuts and sprinkle over the cake.
9. Serve and enjoy!

***Ingredients:
• ¼ cup raisins
• ¼ cup craisins
• 2 cups rolled oats
• 2 tbsp ground flaxseeds
• 2 cups Soy milk (or any other plant-milk)
• 2 cups All-purpose flour
• ½ cup coconut sugar (plus some more for sprinkling on top)
• 2 tsp baking powder
• 1 tsp Baking Soda
• ¼ tsp Sea Salt
• 1 tsp Cinnamon (plus some more for sprinkling on top)
• 3 tsp Hemp Seeds
• ½ cup mini chocolate chips
• 1 large apple of your choice (honeycrisp variety was used here) – it can be substituted for ¼ cup apple sauce
• 1 tsp Vanilla extract
• 1 cup water
***Instructions:
- Pre-heat the oven to 365 F
- Cover raisins and craisins with hot water and set aside
- Add oats, flaxseeds, and soy milk into a bowl, mix, set aside
- Add flour into another mixing bowl along with coconut sugar, baking powder, baking soda, salt, cinnamon, hemp seeds, chocolate chips, then whisk and set aside.
- Peel and grate an apple
- Add grated apple and vanilla to the oatmeal mixture, mix.
- Drain water from raisin-craisin mix and pat them dry, then roughly chop (not too small)
- Add raisin-craisin to the flour mix, then add oatmeal mixture, water and mix everything to combine
- Place parchment paper on to a baking sheet (11 inch by 11 inch)
- Pour batter onto a sheet
- Sprinkle with cinnamon and coconut sugar on top
- Bake for 35 minutes
- Let it cool for about 10 minutes before cutting into squares
- ENJOY!
