How To make Blintz Muffins
3 Eggs
2 tb Wheat germ
1 c Cottage cheese
2 tb Lecithin granules
3 tb Sour cream
1 tb Grated orange rind
2 tb Honey
1 ts Vanilla
1/2 ts Cinnamon
1/2 c Whole wheat pastry flour
sliced almonds for garnish In a mixing bowl or food processor, blend together the eggs, cheese, sour cream, honey, and vanilla. In another bowl, combine the pastry flour, wheat germ, lecithin granules, orange rind, and cinnamon. Preheat oven to 350 F. Grease 12 regular-size muffin cups, or 3 dozen minicups, or line with foil baking cups. Spoon the batter into the cups. Top each muffin with a few slices of almonds. Bake regular-size muffins for 25 minutes, minimuffins for 15 to 18 minutes.

1Pck Vanille Zucker
200ml Sahne
4 Eier
Bei 180° Ober-Unterhitze 15 min. vorbacken.
Mandelbelag:
300g Mandeln, gehobelt
180g Butter
130g Zucker
5El Milch
Bei gleicher Temperatur 12-15 min. weiterbacken.

➡️ ZUTATEN:
* 2 reife Bananen
* 120g Dinkel-Vollkornmehl
* 2 EL Mandelmus
* 4 EL pflanzliche Joghurtalternative
* 10 EL pflanzliche Milchalternative
* 4 EL Proteinpulver
* 2 TL Backpulver
* 1 EL Apfelessig
* 3 EL Dattelsirup/ Dattelpaste
* Prise Salz
* Zartbitter Schokolade/Schokodrops zum Verzieren
➡️ ZUBEREITUNG:
1. Bananen mit einer Gabel zu Bananenmus zerdrücken.
2. Alle trockenen Zutaten in einer Schüssel vermischen
3. In einer separaten Schüssel Bananen, Mandelmus, Joghurt, Milch, Apfelessig und Dattelsirup verrühren
4. Die trockene Mischung nach und nach hinzufügen und alles gut mixen
5. Den Teig in Muffinförmchen geben und mit Zartbitterschokolade (gehackt) garnieren .
6. Im vorgeheizten Backofen bei 200 Grad Ober- und Unterhitze für ca 30 Minuten backen.

Oh hi there! You must be wondering what else you can make with all that delicious mince meat you made a couple of weeks ago. Well behold, The Mince Pie Cupcake. A Christmas Crumbs & Doilies classic! And hopefully it will become one of your favourites!
For the pastry stars
110g plain flour
50g cold butter
Pinch of salt
1 tbs cold water
Demerara sugar and an egg
For the cupcakes
125g self raising flour
125g caster sugar
2 tsp mixed spice
1/4 tsp ground ginger
1/4 tsp bicarbonate of soda
65g caster sugar
60 light soft brown sugar
75g mince meat
3 tbsp brandy-soaked currants
100g browned butter, left to cool completely
40g soft butter
2 lg eggs
1.5 tbsp milk
For the buttercream
150g soft butter
340g icing sugar, sifted
Zest of an orange
2 tbsp brandy
2 tbsp orange juice
