How To make Blintzas
BLETLACH: (CREPES:
1/4 ts Salt
2 c Flour
1 c Water
3 Egg
FILLING:
1 lb Cottage cheese
1 Egg yolk
1 tb Sugar
Sift flour and salt. Beat eggs well, add water. Add flour gradually to eggs, stirring constantly, until batter is smooth and thin. Heat a small frying pan, Teflon makes life easy, and smear with a very thin coat of butter. When pan is hot, put in about 1/4 cup batter, tilt pan until it covers. Cook until
it begins to blister and is shiny. Turn out on table cloth. I always use one, but I Guess you can use paper towels. Continue until all the batter is used. Should make 10 or 12 circles. Mix the ingredients well. Now it's time to 'build your blintzas' as my daughter used to say. Put some filling off center on each circle. Fold the bottom up and the top down. Tuck in sides, or fold in, before you put the op down. Confused? Just try it, it's easy. At this point you can store them in the fridge, or freeze them. They freeze well. To finish, just fry them in a small amount of butter, until browned Great, served with sour cream. They are a bit complicated, but not really difficult. Howard, I am giving you the recipe for 24 because it is so easy and they freeze so well. Use well seasoned pans, 6". This should make about 50 pancakes. I guess the directions don't change when you change the ammounts. -----

Ingredients:
For the batter:
1½ cups (190g) flour
2 eggs
1½ tbsp sugar
Pinch of salt
3/4 cup (180ml) milk
1 cup (240ml) soda water (sparkling water)
2 tbsp vegetable oil
1 tsp vanilla extract
Filling:
11oz (310g) cream cheese/mascarpone or ricotta cheese for healthier version
2½ tbsp sugar
zest of 1 lemon
1 tsp vanilla paste
1/4 (40g) cup raisins
Butter for frying
Powdered sugar and syrup maple for topping
Method:
1. In a large bowl, mix eggs, sugar and salt. Add milk, soda water, oil and vanilla. whisk until smooth.
2. heat a nonstick pan over medium heat, pour in about 1/4 cup batter. Immediately swirl the batter around to coat bottom of pan. Cook the until the bottom is light brown about 1-2 min. Flip and cook the other side until light brown, about 30-60 sec. Repeat with remaining batter.
3. make the filling: in a medium bowl place cream cheese, sugar, lemon zest, vanilla paste and raisins. Mix well.
4. put 2 tablespoons of the filling on each Blintzes. Fold and roll.
5. melt 1-2 tablespoons over medium heat and fry until golden brown (optional).

Cheese Blintzes
Blintzes are paper-thin crepes that are filled with sweetened cheese and then pan fried until golden. They are traditionally served for Shavuot and sometimes other Jewish holidays, but anyone can enjoy them anytime of year!

Cheese Blintzes
Bruce demonstrates traditional Jewish stuffed pancakes. The batter is similar to that of a crepe, and the thin pancakes cook up in a matter of seconds. Each crepe is filled with an ample amount of farmers' cheese, cottage cheese, cream cheese, sugar and vanilla, then cooked to a golden-brown. Blintzes are traditionally served with sour cream, but are also excellent topped with home-made apple sauce. So good!

Ingredients
Batter Ingredients
1 cup Flour
1 tbsp Sugar
1 tsp Vanilla Extract
2 Eggs
1 cup Milk
1oz Melted Butter
1/4 tsp Salt Oil for pan
Filling Ingredients
17oz Ricotta Cheese
3.5oz Raisins
3.1oz Sugar Dash of Cinnamon
Directions
Mix all of the filling ingredients, cover with a plastic wrap and let sit in the refridgerator for 30 minutes.
Mix together ingredients for the batter – eggs, sugar, vanilla, butter and milk.
Add the flour and salt and mix until you get a uniform texture. (No lumps!)
Heat a pan over medium heat with a small amount of oil. Place about 2-4 tbsp of batter in your pan, and shape to the size of the pan with either a utensil or by holding the pan and gently tipping it to let the batter cover the bottom.
Cook your blintzes for about 2 minutes on each side or until golden brown.
Add your filling, roll your blintzes and enjoy!

Crepes have an endless supply of delectable uses! I've never actually ordered a blintz before and after making them myself, I'll be looking very carefully at cafe menus for them. I mean think of the possibilities with these things. So many fillings..so many toppings..so many different ways to make them golden brown and crispy! How to Make Savoury & Sweet Blintzes Video Recipe cheekyricho
Video Recipe and Cooking Demonstration For Home Made Sweet and Savoury Blintzes. You know those days when he wants savoury and you want sweet. This is the perfect compromise. 2 completely different dishes with the one recipe. Cook and serve them at once. Everybody's happy. How Perfect! Do give it a try, you will be glad you did.
INGREDIENTS:

300 grams cottage cheese (cheekyricho ricotta cheese is a good substitute youtube.com/watch?v=pEY_f28LmRs)
3 eggs
70 grams mascarpone cheese (cream cheese is a good substitute)
For Savoury you will need:
15 grams cooked chopped bacon
1 large spring onions sliced thinly on the diagonal ( keep a few for garnish)
a sprig of parsley coarsely chopped
Vege Salt and cracked Pepper to taste
For the Sweet:
1/2 banana sliced
20 grams honey
good pinch of cinnamon and the raspberry sauce.
For the Raspberry sauce:
75 grams frozen or fresh raspberries
1 teaspoon icing or confectioners sugar
1/2 teaspoon potato flour.
METHOD:
Raspberry sauce.
Combine ingredients and microwave on high power 20 seconds stir and cook a further 20 seconds on high. The fruit should be intact and and the sauce should be thickened to a spooning consistency. Set aside.
For the Cheesy custard base:
Combine both cheeses and eggs then divide mixture into two.
For the Savoury Blintze:
Mix the bacon, most of the spring onions, vege salt and cracked pepper with half of the cheesy mixture and lay some of the mixture onto your crepe. Fold it up like a fish and chip packet and lay in a lightly greased pan over medium heat. Place the lid on the pan and after a couple of minutes turn over to brown the other side. with a quinnelle of Marcarpone cheese and sprinkle of cracked pepper,remaining spring onions with sliced tomatoes(optional) serve immediately.
For the Sweet:
To the remaining cheese mixture add banana, honey and cinnamon. Place some on the crepe and roll up like a fish and chip packet and fry both sides, a couple of minutes until crispy brown. Serve with a quinnelle of mascarpone and sprinkle of icing(confectioners) sugar and warm raspberry sauce. Serve immediately. This dish is also perfect as a light dessert.
