Peach filling:
6 cups (750g) peeled and sliced peaches (if using frozen, weigh after thawing and draining)
1/2 cup (100g) granulated sugar
3 tbsp (45 mL) whipping cream
**Add the sugar and cream to a large sauté pan over high heat and stir with a wooden spoon until bubbling. Stir in the peaches and cook for about 8 minutes, stirring often, until all liquid evaporates and the sugar begins to caramelize on the pan slightly. Remove from the heat and cool completely before using.
Other Filling Options
Strawberry Rhubarb:
3 cups (750 mL) diced rhubarb
3 cups (750 mL) hulled and quartered strawberries
1 cup (200 g) granulated sugar
3 Tbsp (45 mL) tapioca starch or 2 Tbsp instant tapioca
Cooked fillings such as blueberry, raspberry or cherry:
4 cups (1L) fresh fruit
1 tart apple, peeled and coarsely grated (not needed with cherry filling)
1 cup (200 g) granulated sugar
1 Tbsp lemon or lime juice
2 1/2 Tbsp (24 g) cornstarch
**Cook the fruit with the sugar and lemon until simmering. Whisk the cornstarch with a little cool water and stir in, returning just to a simmer before cooling before use.

Тесто для лобиани чаще всего используется дрожжевое, мы сделали так же, просто чтобы воспроизвести полюбившийся вкус максимально точно, но это не обязательно, можно взять слоёное тесто, а можно просто смешать муку и воду, всё равно будет вкусно.
Фасоль взяли красную, замочили на ночь в подсоленной (1/2 ч.л. соли) воде, варили час с небольшим до полной готовности.
Из приведённых ниже количеств продуктов у нас получилось три довольно не маленьких пирога. Если честно, можно было сделать четыре, а то и все пять, если сковородка не очень большая. Тут нужен хороший глазомер или опыт)
Нам надо:
Для теста:
Мука - 450г
Дрожжи сухие - 6г (полпакета)
Соль - 1/2 ч.л.
Сахар - 1/2 ч.л.
Масло растительное - 1/3 стакана
Вода - 220-240 мл (сколько примет мука)
Для начинки:
Фасоль сухая - 350г (замочить, отварить)
Чёрный перец
Красный перец
Уцхо-сунели
Соль
Масло растительное - 3-4 ст.л.

✅Ingredients
• 1/2 cup butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1/2 cup milk
• 2½ cups fresh blueberries
• 1/4 cup granulated sugar, for topping
✅Instructions
1️⃣ 00:00:17 - Preheat oven to 375 degrees. Line a muffin tin with paper liners. Lightly grease paper liners with nonstick cooking spray.
2️⃣ 00:00:36 - In a large mixing bowl, use a hand mixer to cream together butter and sugar, about two minutes.
3️⃣ 00:00:53 - Beat in eggs until combined. Add in the baking powder, salt, and vanilla and mix briefly.
4️⃣ 00:01:17 - Add in half of flour, mix with hand mixer until just combined, then add in half of the milk. Scrape the bottom and sides of the bowl and add in the remaining flour and milk, mixing in between additions.
5️⃣ 00:01:55 - Add the blueberries to the batter and use a rubber spatula to gently fold them in.
6️⃣ 00:02:32 - Divide the batter up amongst the 12 muffins. Sprinkle 1 teaspoon of sugar atop each muffin.
7️⃣ 00:02:57 - Bake in the preheated oven for 30 minutes, until a toothpick inserted into the center comes out clean.
8️⃣ 00:03:07 - Let muffins cool for 5 minutes in the pan before removing them and transferring to a wire rack to cool completely.
