This homemade Chicken Pot Pie is homey, cozy and will warm you up. It's a show-stopping dish with a homemade flaky Pie Crust and loaded with juicy chicken in gravy and vegetables.

CHICKEN POT PIE INGREDIENTS:
►1 recipe homemade pie crust (2 disks) -
►4 cups cooked chicken, shredded
►6 Tbsp unsalted butter
►1/3 cup all-purpose flour
►1 medium yellow onion, (1 cup chopped)
►2 carrots, (1 cup) thinly sliced
►8 oz mushrooms, stems discarded, sliced
►3 garlic cloves, minced
►2 cups chicken stock
►1/2 cup heavy cream
►2 tsp salt, plush kosher salt to garnish
►1/4 tsp black pepper, plus more to garnish
►1 cup frozen peas (do not thaw)
►1/4 cup parsley, finely chopped, plus more to garnish
►1 egg, beaten for egg wash

EASY BLUEBERRY PIE - with a CHEAT!
Blueberry pie is one of the easiest pies to make! You don't have to peel or slice the fruit! If you're new to baking, start off trying this pie recipe. I also give you a cheat here to save time in the kitchen. For the steps in making a pie that are more difficult for new bakers, I slowed down a bit in the video to demonstrate what I'm doing so that the video is a good pie tutorial.

Ingredient List:
* 5 cups fresh blueberries (see NOTE below!)
* 1 cup sugar
* 1/4 cup flour
* 1/2 t. lemon zest
* 1 t. cinnamon
* Dash of salt
* Pastry for a double-crust pie
* 1 t. lemon juice
* 1 T. cold butter
* 1 egg
NOTE:
If you use frozen blueberries instead of fresh, use a 20 ounce bag. Thaw the berries first. And increase the amount of flour to 1/3 cup.)

INGREDIENTS
- 1 9-inch pie crust
- 6 cups blueberries
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tbsp lemon juice
- 1/2 tsp black pepper
For the streusel topping:
- 1 cup chopped pecans
- 3/4 cup flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 8 tbsp butter cut into ½-inch pieces
INSTRUCTIONS
For the pie:
- Preheat oven to 375°F.
- In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, and black pepper. Stir and slightly mash a few berries to draw out the juices.
- Pour into the prepared pie shell and top with the prepared streusel (instructions below). Spread streusel into an even layer and place in the preheated oven on a parchment-lined baking sheet.
- Bake at 375°F for 45 minutes, then lower the temperature to 350°F until the pie is bubbling throughout, an additional 30-45 minutes. Remove from the oven and cool completely to room temperature before slicing and serving.
For the streusel:
- In a medium bowl, combine the chopped pecans, flour, brown sugar, and cinnamon. Stir to combine and add the pieces of butter.
- Using a pastry cutter or hand, work the butter into the streusel to create a coarse crumb.

The top layer of pastry is in the form of cut out pastry stars, which makes a festive dessert for the 4th of July. Perfect on its own, but even better with a scoop of vanilla ice cream.

For the crust
125 g softened butter (voi)
1 dl granulated sugar (taloussokeri)
1 egg (muna)
0,5 dl flaked oats (kaurahiutaleet)
3 dl all-purpose baking flour (puolikarkea vehnäjauho)
1 tsp baking powder (leivinjauhe)
1/2 tsp salt (suola)
100 g Finnish sour cream (kermaviili)
On top
2-3 dl bill/blueberries (mustikat)
1 tbsp potato starch, especially if the blueberries are frozen (perunajauho)2 tbsp granulated sugar (taloussokeri)
Vanilla ice-cream or vanilla sauce (vaniljajäätelö or vaniljakastike)

1 stick of softened butter
0.4 cups granulated sugar
1 egg
3 tbsp oats
1.3 cups all-purpose baking flour
1 tsp baking powder
1/2 tsp salt
100 g Finnish sour cream
On top
1 cup bill/blueberries
1 tbsp potato starch especially if blueberries are frozen
2 tbsp granulated sugar
Vanilla ice-cream

Preheat oven to 440°F/225°C. Butter a pie plate (around 10 inches / 26 cm).
Mix the butter and sugar together in a bowl. Add the egg in and mix again.
Put flour, flaked oats, baking powder and salt in a separate cup and mix. Then add them in the bowl and mix quickly so that all is even. Last, whisk in the sour cream.
You now have a super sticky dough, awesome! Just scrape the dough onto to pie plate. Make the dough somewhat even base for the blueberries. Mix blueberries with starch and sugar. Put on top of the dough.
(You really need starch when you use frozen or defrosted blueberries because they have a lot of water inside them.)
Bake the pie for 25 minutes or until golden brown. Serve with vanilla sauce or vanilla ice cream. Blueberry pie is definitely most delicious immediately after baking!????
