How To make Blueberry Cake
2 tb Cornmeal
2 c All-purpose flour
1 1/2 ts Baking powder
1 1/2 ts Baking soda
1/4 ts Salt
1 ts Ground cinnamon
1 ts Ground cloves
1/2 c Port wine
1/4 c Canola oil
1 Egg
2 Egg whites
2/3 c Low-fat buttermilk
1 tb Vanilla extract
3 c Blueberries
Preheat the oven to 350 F. In a large mixing bowl, combine all the dry ingredients and set aside. In a small saucepan, reduce the port over medium heat to 1/4 cup. Cool to room temperature. Add the port and remaining ingredients, except the blueberries, to the dry mixture, one at a time, stirring constantly, until combined and smooth. Gently fold in the blueberries. Lightly spray or wipe a 7 x 11-inch glass baking pan with vegetable oil. Pour the batter into the pan with and bake for 45 minutes, or until a toothpick inserted in the center comes out clean. When blueberries are not in season, I replace them with the same amount of frozen blueberries...and just make sure to bake it a little longer as frozen blueberries may require extra baking time. We eat my Blueberry Cake for breakfast as well as desserts (with a bit of whipped cream) & a lot of extra fresh blueberries! Enjoy my recipe! Tracy

Ingredients:
1 3/4 cup (225 g) all-purpose flour
1 tbsp baking powder (14g)
1/2 tsp coarse salt (2g)
1/2 tsp (2 g) ground cinnamon (optional) or 1 tsp finely grated lemon zest
1 large egg at room temperature
3/4 cup (145 g) granulated sugar
1/4 cup (60 mL) non-flavour oil (or melted unsalted butter or melted coconut oil)
1/4 tsp vanilla bean paste (or up to 1 tsp pure vanilla extract)
1/2 cup (125 mL) whole milk at room temperature (3.8% or 4% fat)
2 cups (12 oz or 340 g) fresh or frozen blueberries
(If your blueberries are sour, sprinkle a tbsp of granulated sugar on them just before adding them to the batter.)
For vegan or other options, you can substitute 1 egg for:
1/4 cup silken tofu
Or
1/4 cup banana
Or
1/4 cup apple sauce
*1/4 cup = 4 tbsp = 60 mL
For serving:
Powder or icing sugar
Fresh blueberries
Cream (whipped)
*Frozen blueberries may require extra baking time of 5+ minutes.
Bake in preheated oven at 350F or 180C for 40-45 mins. Baking time may vary depending on the type of baking pan (dark or light in colour, glass or ceramic...)...frozen or fresh berries as well as the amount of berries..:so please check the cake at 35 mins and adjust accordingly. Lemon Blueberry Buttermilk Cake
Ok guys, I did a lot of testing to figure out how to get those dang blueberries to stay in the cake and not all sink to the bottom! This lemon cake is tart, tangy and ohhhh so moist and then dotted with those sweet blueberries and frosted with cream cheese. Bring this cake to your next summer BBQ and be the star of the party!

Lemon Blueberry Cake Ingredients ►
13 oz (368.54 g) cake flour
12 oz (368.54 g) granulated sugar
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
8 oz (226.8 g )unsalted butter (softened)
8 oz (283.5 g) buttermilk (Or regular milk with 1 Tbsp white vinegar added)
3 oz (85.05 g) vegetable oil
3 large eggs (room temperature)
2 Tbsp lemon zest
2 Tbsp fresh lemon juice
2 tsp lemon extract
2 Tbsp AP Flour (for dusting blueberries)
3 cups blueberries (You can use frozen but don't thaw them)
Cream Cheese Frosting Ingredients ►
16 oz (226.8 g) cream cheese (room temperature)
8 oz (226.8 g) unsalted butter (room temperature)
1 tsp lemon extract
1/2 tsp salt
32 oz (447.62 g) powdered sugar (sifted)

Blueberry cake recipe
• 2 cups of PLAIN FLOUR
• 1 cup CASTER SUGAR
• 1/2cup OIL (VEGETABLE OR SUNFLOWER)
• 1 cup MILK
• 2 EGGS
• 2 tea spoons BAKING POWDER
• Blueberries
Use the same size cup for all ingredients.
1. Mix eggs with sugar until smooth. Fold in flour and baking powder. Add oil and milk and mix well.
2. Grease tin ( at least 20cm wide x 20cm x 10cm -- deep) and pour the mixture in. Put the blueberries on the top.
3. Bake at 180°C for 45 minutes (check with a cake tester/skewer if it is ready, if not then add extra time).

How to Make Blueberry Lemon Cake
Full Recipe:
Stop everything and make this cake if you love blueberries! This cake is beyond moist, with the perfect zing from lemon zest and juice. I divided my buttercream into two batches; one is flavored with a blueberry reduction while the other is all lemon. I'm not sure if my meager description is doing the cake any justice but it was soooo good! I really loved it as a naked cake because the cake itself is soo tasty it really doesn't need a lot of frosting, you don't want to mask the flavor with too much sugar.

Simple Blueberry Cake Recipe
INGREDIENTS:
2 Medium Eggs
1 cup Granulated Sugar (200g)
2 tsp Baking Powder
2 cups All-Purpose Flour (250g)
½ cup Sunflower Oil (125ml)
1 cup Milk (200ml)
1 cup Blueberries (150g)
icing sugar for garnish
METHOD:
Preheat the oven to 356°F/180°C.
Mix eggs with sugar until smooth. Fold in flour and baking powder. Add oil and milk and mix well.
Grease tin ( at least 20cm wide x 20cm x 10cm -- deep) and pour the mixture in. Put the blueberries on the top.
Bake at 180°C for 45 minutes or until an inserted skewer comes out clean.
The blueberry cake will remain soft for 2-3 days. Tastes great when served with ice cream on top.
Ideal choice for tea and coffee.
