How To make Blueberry Orange Muffins
1 3/4 c All-purpose flour
2/3 c Packed brown
Sugar 1 tb Baking powder
1 tb Grated orange rind
1 c Milk
2 Eggs
3 tb Butter, melted
1 ts Vanilla
1 c Blueberries
In bowl, stir together flour, sugar, baking powder and orange rind. Whisk milk, eggs, butter and vanilla; stir into flour mixture just until blended. Fold in blueberries. Spoon into lightly greased muffin tins, filling three-quarters full. Bake in 400 degree F (200 C) oven for 20 to 25 minutes or until golden and firm to the touch. Makes 12 muffins. Per muffin: about 165 calories, 4 g protein, 4 g fat, 28 g carbohydrate.

Picked a basket of fresh sweet blueberries this morning and had to make these delicious muffins. I also took this opportunity to use the Orange + vitality essential oil from Young Living to give the muffins more of an orange essences.

I know. Lots of people call muffins a breakfast food, but with all the fat and sugar they can pack, aren't they really more like dessert? Not the muffin I'm going to make for you today. The trick is in smart ingredient swaps. Instead of oil, eggs, or milk, this muffin recipe calls for low-fat plain yogurt. Cornmeal adds a great texture, and the blueberries and orange bring a bright, sunny flavor. So good -- and good for you!

Because the muffin batter isn't made up of the traditional ingredients, it will be a bit different than what you're used to. Not to worry. In the video, I'll show you what the correct texture should look like and give you tips on how to work with it so it will be as tender as can be. Ingredients (for 6 muffins):
50g (3½ tbsp) – butter (soft)
190g (~1½ cup) – all-purpose flour
⅓ tsp – salt
70g (⅓ cup) – sugar
1 – egg
70g – milk
80g – orange juice (fresh-squeezed)
½ tsp – orange zest
¾ tsp – baking powder
For topping:
30g (2 tbsp) – melted butter
½ tsp – cinnamon
1 ½ tbsp – sugar
