How To make Bo's Chocolate Chip Cheesecake
24 oz Cream cheese,
-broken into pieces 4 Eggs, separated
2 T Vanilla extract
-(do not use artificial -vanilla) 1 c Sour cream
1/4 c Brown sugar,
-or to taste 1 lb Chocolate chips
1 lb Graham cracker crumbs
1/2 c Butter, melted
Preheat the oven to 325 degrees F. PREPARE THE BATTER: Place the egg yolks in a food processor for 5 seconds, then add the cream cheese and beat until smooth. Add the brown sugar and vanilla and process for several minutes, or until the batter is very smooth. Beat the egg whites and fold into the cheese mixture. Set aside. PREPARE THE CRUST: Soften butter and combine with graham cracker crumbs. Mix until fully blended, e.g. they will form a ball when squeezed in your hand or by a spoon. Pat the crust into the sides and bottom of a springform pan about 9 inches in diameter. Spread a generous layer of chips on the bottom of the pan, and then pour the batter into the pan. Add another generous layer of chips to the top of the cake. Place the filled pan into the preheated oven. Baking time will vary from about 30 minutes to 2 hours. Cooking time depends on whether you want a soft, gooey "New York" style cheesecake (shorter) to a fluffy "souffle"-like cheesecake (longer). The longer you cook it, the fluffier it gets. When the cake starts to rise like a souffle, start checking to see if it is done. It will just about double in volume, and should not flow over the sides of the pan. If the cake shimmers like Jello when shaken, it is done. Alternatively, if a knife inserted comes out clean, the cake is overcooked: the knife should be very lightly coated with batter. NOTES: * A truly decadent chocolate chip cheesecake -- This recipe came to me from a friend of mine, Bo (pronounced "boo") Ture Ahlberg, who would occasionally (read "whenever we could persuade him") bring it into work. * 4 (8 oz) pkgs cream cheese, softened
* 1 cup granulated sugar
* 1 tsp vanilla extract
* 1 cup sour cream
* 3 large eggs
* 1 egg yolk
* 12 Oreos (roughly chopped)
WHITE CHOCOLATE GANACHE
* 8 oz white chocolate melting wafers
* 1/2 cup heavy cream
* 10 Oreos for decorating

1. Make the crust by placing 35 whole Oreos into your food processor and pulsing the cookies on high speed until they crumble down to a fine crumb.
2. Then pour in 5 tablespoons of unsalted melted butter into the food processor as you continue to pulse the cookies. This will ensure evening mixing.
3. Now dump the Oreos crumbs into a 9 inch springform pan. Then evenly press the crust on the bottom and up the sides of the pan.
4. To set the crust, place the pan in a baking sheet and bake at 350 degrees Fahrenheit for 8 minutes.
5. In the meantime, add 4 (8 ounce) packages of room temperature cream cheese and 1 cup of granulated sugar to a stand mixer. Make sure to use good quality cream cheese here. It will result in a super creamy and rich cheesecake.
6. Using the paddle attachment, turn the mixer onto high speed. Beat the cream cheese for about 5 minutes scraping down the sides of the beater bowl every other minute. This will ensure a clump free cheesecake!
7. Now add 1 cup of sour cream 1 teaspoon of vanilla extract. Turn the mixer on high speed and beat again for 2-3 minutes.
8. Bring the speed down to low and add 3 eggs and 1 egg yolk (one at a time). A good way to know when to add each egg is when you longer see yellow streaks from the yolk. Then scrape down the sides of the bowl.
9. Now roughly chop 12 Oreos with a knife and add it to the cheesecake batter. Mix on low speed until combined. You want to avoid over mixing the batter or your cheesecake might crack on top.
10. Now preheat your oven to 250 degrees Fahrenheit and pour the cheesecake batter into your Oreo crust. Bake on the center rack for 1 hour and 30 minutes. Once it’s done, turn the oven off and let the cheesecake rest until it completely cools down. Do not open the oven for a few hours. This can cause your cheesecake to crack as well.
11. Once the cake has cooled to room temperature refrigerator for 3-4 hours.
12. Then you can decorate it however you want. I made a white chocolate ganache. To make this, just pour 1/2 cup of boiling heavy cream over 8 ounces of white melting chocolate wafers and mix it until smooth. Then let it cool and thicken before pouring over the top of the cheesecake.
13. At this point I just went ahead and completed the decoration with a piped border of heavy whipping cream and halved Oreos.
