Lentil Rice with Cranberries
Lentils and rice with cranberries is a Persian style aromatic dish that is so delicious, healthy and flavorful. It is adas polo with a cranberry twist, that you can make for dinner or lunch. Vegan (without optional ingredients - yogurt, honey), gluten free and so easy to make. It is packed with plant protein, fiber, antioxidants and healthy fats.

INGREDIENTS
1½ cups cranberries fresh, (or 3/4 cup dried cranberries soaked in water)
1 tbsp honey or maple syrup (for fresh cranberries)
2 tbsp orange rind organic, slivered (or orange zest)
1¼ cups lentils
3/4 tsp salt, adjust as needed
4 tbsp olive oil (including one tbsp for optional rice crust)
1 onion medium, thinly sliced
2 to 3 cloves garlic grated
1 tsp advieh (Persian spice mix or curry powder or substitute)
1/2 tsp cumin ground
1/2 tsp turmeric
1/4 tsp black pepper
1/2 cup carrot shredded
1¾ cups basmati rice white, rinsed,
1/2 tsp saffron (ground and dissolved in 2 tbsp hot water)
3 tbsp yogurt (optional for rice crust)
2 tbsp pistachios toasted, sliced
2 tbsp dates chopped (optional)

???? Extra virgin olive oil (I used Early Harvest Greek EVOO)
???? 1 cup black lentils, sorted and rinsed
???? 4 cups water, divided
???? ¼ cup Extra virgin olive oil, more for later
???? 2 large yellow onions, diced (4 cups)
???? 1 teaspoon kosher salt more to taste
???? 1 cup long-grain white rice, soaked in water for 10-15 minutes and then drained
???? black pepper
???? ½ to 1 teaspoon cumin
???? Parsley, for garnish
???? 1 large yellow onion cut in very thin rings

Recipe
750 gms mutton, 1 cup oil,1onion sliced, whole GARAM MASALA(9 pepper,5 cloves,5 cardamom,1 cinnamon stick,2 bayleaf and 1 tbsn cumin seeds..this have put along with sliced onion)
GRIND(1 inch ginger 1 pod garlic and 9 green chillies or acc to u)
3 cups basmati rice soak in water for 10 mins,4 1/2 cups of water,2 potatoes diced
DRY MASALA: 2 tbsn turmeric, 1 tbsn coriander pwd,2 tbsn Kashmiri red chilli pwd(less heat n give colour) 1cup Green lentils boil with little water for 5 mins n keep ready.1 tbsn salt for mutton and 1 tbsn salt when u add Rice.
First heat oil in a vessel or pressure cooker. Now put the slice onion with the above GARAM MASALA. mix n let it brown now add the mutton with 1 tbsn salt mix well till the mutton water dries a bit n change the colour. Now add up the GINGER GARLIC N CHILLI PASTE which we grinded. Now add 1 tomato chopped with the above DRY MASALA Turmeric, coriander pwd,Kashmiri red chilli pwd. Now mix n cook the mutton till done n oil floats up.
When mutton is cooked add the diced potatoes. Now simmer for 5 mins on slow flame.now REMOVE the masala in the big vessel. Now add RICE and the GREEN LENTILS mix now add the 4 1/2 cups of water,1 tbsn salt and cook on medium flame cover it with lid.when u see Rice has absorbed most of the water,Give a mix,cover the lid and cover the lid with the cloth.let it simmer on slow flame for 10 minute. When u off the flame don't open the lid..open after 5 mins.check the above clips.now ur PULAV is READY.

RECIPE: Lentils
INGREDIENTS:
1 1/2 cups onion, chopped
1 teaspoon olive oil
3 cups water
1 cup lentils, dry
1 1/2 teaspoons Kosher salt (or to taste)
INSTRUCTIONS:
1: Examine lentils. Remove any stones and debris. Rinse.
2: Heat oil in a saucepan over medium heat.
3: Sauté onion in oil until soft.
4: Add 3 cups water to the sautéed onions and bring to a boil.
5: Add lentils and salt to boiling water.
6: Return to a boil, then reduce heat to a simmer.
7: Simmer 25 - 30 minutes or until the lentils are tender.
NOTES:
You can easily double this Lentil recipe.
Sauté the onion in the same pot that you will cook the lentils in.
Add more water if the water dries up before the lentils are tender.
Delicious served over rice, couscous, quinoa, potatoes or yams.
You can use another type of salt if desired.
You can use these cooked lentils as a base for other lentil recipes such as a lentil patties or a lentil loaf.

Step 1: Make a lentil and rice side dish
Make a lentil and rice side dish by sauteing 4 thinly sliced onions in 3 tablespoons of olive oil over medium heat. Mix in 2 cups of precooked lentils and 2 cups precooked rice. Season with salt and pepper.
Step 2: Make a lentil and rice salad
Make a lentil and rice salad by preparing 2 cups of rice according to package directions. Saute 1 diced onion, 2 garlic cloves, and a carrot in 1 tablespoon of olive oil. Add 1 1/4 cup of rinsed and drained lentils and 2 cups of chicken broth and bring to boil. Remove the cover and simmer for 15 minutes. Remove from heat, drain, and let cool.
Step 3: Add remaining ingredients
Add lemon juice, 1 tablespoon fresh thyme, kalamata olives, salt and pepper to taste, 1 tablespoon fresh parsley, 1 tablespoon fresh basil, and 1 tablespoon fresh rosemary. Top with 1/4 cup feta cheese and refrigerate covered for 2 hours before serving.
Tip
Fresh thyme can be substituted with 2 tablespoons of dried thyme.
Step 4: Make lentil and rice casserole
Make lentil and rice casserole by blending 3 cups of chicken broth, 3/4 of a cup of rinsed and drained lentils, 1/2 cup rice, 1/4 cup minced onion flakes, 1/2 teaspoon basil, 1/4 teaspoon oregano, 1/4 teaspoon thyme, and a 1/4 teaspoon garlic powder in a casserole dish. Bake for 1 1/2 hours at 300 degrees Fahrenheit, or until the lentils are tender. Sprinkle 3/4 cup shredded cheddar cheese on top of the casserole and bake for 10 more minutes. Garnish with parsley and serve.
Step 5: Make Lebanese lentil and rice pilaf
Make Lebanese lentil and rice pilaf by sauteing 1 medium chopped onion, 3 minced garlic cloves, 2 teaspoons of cumin, 3/4 of a teaspoon cinnamon, and a 1/2 teaspoon allspice in 2 tablespoons of olive oil.
Step 6: Add broth and lentils
Add 3 1/2 cups vegetable broth and 3/4 cup dried lentil and bring to boil. Simmer for 10 minutes with the cover on. Stir in 3/4 cup rice and return to boil. Reduce the heat and cook until the liquid is absorbed, about 15 minutes. Season with salt and pepper.
Step 7: Saute onions
Heat 2 tablespoons of oil in a large skillet over medium heat. Saute 2 large sliced onions until they begin to blacken, about 20 minutes. Transfer the pilaf to a plate and top with blackened onions. Place the cucumber rounds and 3 tomatoes quartered lengthwise around the plate. Add a dollop of yogurt and sprinkle with fresh mint. Enjoy!

In this video, we show you a delicious Mujadara Recipe. Mujadara is a very famous Middle Eastern Rice and Lentils dish with Caramelised Onions. This Mujadara Recipe is very easy to make and absolutely delicious. Mujaddara can be served on it's own with a side of salad and a yogurt dip. The Caramelized Onions are really what take this Mujadara Recipe to another level of deliciousness!
For the Mujadara Recipe, you will need:
1 and 1/2 cup rice (soaked for 20 minutes)
1 cup brown lentils (soaked for 20 minutes)
1/2 cup olive oil
2 medium-sized onions finely sliced
1 cinnamon stick
salt to taste
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp chili powder
1/2 tsp turmeric powder
1/4 tsp black pepper
4 cups water (including the reserved water from boiling the lentils)
1 tbs vinegar
fresh lemon juice
optional: pine nuts and fresh coriander for garnishing
