Learn How to Make and Can BOURBON CHICKEN
This is one of my meals in a jar. These are great to have on hand when you are in a rush, emergency preparedness or just don't feel like cooking. So let me show you how I make and can bourbon chicken!
3 1/2 - 4 lbs. boneless chicken breast or thighs, cut into bite size pieces
1/2 c. apple juice
2/3 c. low sodium soy sauce
1/3 c. ketchup
2 T. apple cider vinegar
3/4 - 1 c. chicken stock
1/4 c. bourbon (optional)
1/2 c. brown sugar, packed
1 t. red pepper flakes
3/4 - 1 t. ground ginger
1 t. each of onion powder and garlic powder

Episode 111: Bourbon Chicken (without the Bourbon)
I love Bourbon Chicken, but it is not as easy to find in some places around the US. You can find it in most malls with a food court, but not in the ones near me. So - here is my go at Bourbon chicken - without the Bourbon and soooooo good! Ingredients for the sauce: 1/2 cup of water, 1/4 cup of apple or cranberry juice, 1/4 cup of chicken broth, 1/4 cup of reduced sodium soy sauce, 3 tablespoons of ketchup, 1 tablespoon of apple cider vinegar, 1/2 cup of light brown sugar, 2 tablespoons of sweetener (sugar, monk fruit or another alternate sweetener), 1/4 teaspoon of crushed red pepper, 1/4 teaspoon of ground ginger, 1/4 teaspoon of onion powder. Add 2 cups of mixed vegetables to sauce (broccoli, cauliflower, carrots). Ingredients for the chicken: 3 boneless breast or 6 chicken thighs, 1 tablespoon of canola oil, 1 teaspoon of garlic, 1/4 teaspoon of salt and 1/4 teaspoon of pepper (add more salt/pepper to your liking). After cooking chicken, add 1 tablespoon of minced garlic to saucepan before adding sauce.

A Bourbon Chicken Marinade Recipe to make your mouth water!
A Bourbon Chicken Marinade that would also make a great marinade for pork as well as chicken. I love using Bourbon for drinks, but combining it with food is another great way to put some Bourbon to work for you. Personally I love this on Chicken when grilling out, but feel free to experiment with this Bourbon Chicken Marinade recipe to see how well it works with other base meats.
Bourbon Chicken Marinade Full Recipe:
2 1/2 Pounds of Chicken Breast
3/4 Cup Low Sodium Soy Sauce
1/2 Cup Bourbon
1/4 Cup Worcestershire Sauce
1/4 Cup Water
1/4 Cup Veggie Oil (I used Olive Oil)
2 Tablespoons of Minced Garlic
3 Tablespoons Brown Sugar
2 Tablespoons Black Pepper
1/2 Teaspoon Ginger Powder
Directions:
1. Combine all ingredients into a bowl except for the chicken breast.
2. Pour marinade into a freezer back along with the Chicken.
3. Seal the bag and make sure marinade covers all of the chicken.
4. Let rest in refridgerator for at least 12 hours. (Perfect time to pour some Bourbon for yourself.)
5. Remove chicken from the bag.
6. Cook on a high heat grill (About 450 degrees) for a total of 25 minutes, flipping halfway through. Ensure chicken reaches at least 165 degree internal temperature before consuming.
7. Allow to rest for 10 minutes on a plate before slicing.

Oven Baked BBQ Chicken
Oven Baked BBQ Chicken
3-4 boneless chicken breast
1/2 teaspoon granulated garlic
1/2 teaspoon paprika
A splash of seasoning salt of your choice
1 cup of BBQ sauce of your choice
Make sure to rinse off your chicken. Then place them on a baking sheet lined with foil. I like to spray the pan with coconut oil or any oil of hour choice. Now, season the chicken with the granulated garlic, seasoning salt, paprika, and bbq sauce on both sides of the chicken. Place them in the oven on 425 degrees Fahrenheit for 21 minutes or until they have reached the internal temperature of 165 degrees. Once they are cooked, take them out and brush on some more bbq sauce on the tops with the left over bbq sauce from the 1 cup. Place back in the oven on high Broil for 5-10 minutes depending on how crispy you want the tops and edges of the chicken. When that broil is finished, take them out and add more bbq sauce to the tops of them if you want and enjoy!!
