Cinnamon Braid Bread - Estonian Kringle
Easy recipe for rich and buttery Estonian kringle, a mouth-watering cinnamon braided bread. Soft interior, crusty top, perfect for breakfast or holidays.The smell in the house while baking is divine. Give this a try, you will love it.
Ingredients:
2 1/4 cups (280g) all-purpose flour
1/2 tsp (2g) salt
3/4 cup (180ml) lukewarm milk
1 tbsp (15g) sugar
15 g fresh yeast (1 envelope active dry yeast)
2 tbsp (30g) melted butter
1 egg yolk
Filling
1/4 cup (50g) softened butter
4 or 5 tbsp (60-75g) sugar
3 tsp (9g) cinnamon
3 tsp grounded almonds, optional
Directions
1. In a medium bowl stir fresh yeast with sugar until it liquefies. Stir in the lukewarm milk and then add the egg yolk and melted butter.
2. In a large bowl whisk together the flour and salt. Pour the milk mixture over the dry ingredients and start kneading it until it pulls away from the edges of the bowl. Give the dough the shape of a ball. Sprinkle oil onto a clean bowl, place the dough and cover with plastic wrap. Let it rest for about 1 hour at room temperature (warm space) until doubled in size. I usually put the bowl near my oven hob so the warmth get to it. It helps the dough rise very well.
3. While the dough rises, whisk together the butter with sugar and cinnamon for the filling. Set aside.
4. Preheat the oven to 400 F (200 C). Line a baking sheet with parchment paper.
5. On a floured surface, using a rolling pin roll the dough to a rectangle of about 18x12 inches. (I've made it smaller but it would have been better to make it of 18 inch).
6. Spoon the cinnamon filling over top (keep about 1 tbsp of the filling for the end), spreading evenly, leaving a clean 1/2-inch border around the edges. Sprinkle the almonds over the cinnamon filling. Roll up the dough and using a sharp knife, cut the log in half lengthwise leaving one edge uncut for about 1/2 inch.
7. Start braiding the two pieces, trying to keep the open layers exposed so the cut ends remain on top (this is what makes this bread effect).Pinch the ends together and form a wreath.
8. Transfer it to the prepared baking sheet. Brush the wreath with the left cinnamon filling.
9. Bake for 20-25 minutes until golden brown. For the last 10 minutes you can reduce the oven temperature to 180 C (350 F).
10. Serve it warm as it is or with your favorite topping. It is gorgeous.:)

Chicken Bread
Recipe in English:
Ingredients:
Dough:
-Maida (Flour) 2 cups
-Khameer (Yeast) instant 1 & ½ tsp
-Cheeni (Sugar) 1 & ½ tsp
-Namak (Salt) 1 tsp
-Doodh (Milk) room temp ¼ cup
-Oil 5-6 tbs
-Pani (Water) warm 5-6 tbs or as required
Chicken filling:
-Makhan (Butter) 2 tbs
-Pyaz (Onion) Chopped 2 tbs
-Maida (All-purpose flour) ¼ cup
-Doodh (Milk) 1 cup
-Kali mirch powder (black pepper powder) ½ tsp
-Namak (Salt) ½ tsp
-Chicken Boiled & shredded 1 & ½ cup
-Dhania (Green coriander) 2 tbs
-Shimla mirch (Capsicum) 2 tbs
-Zaitoon (Olives) 2 tbs
Assembling:
-Chicken filling
- Anda (Egg) 1+ Doodh (Milk) 1 tsp
- Kalonji (nigella seeds) as required
- Safed til (sesame seeds) as required
Directions:
Dough:
-In bowl, add all-purpose flour,instant yeast,sugar and salt,mix well.
-Make a well,add milk and gradually add oil and mix it with the help of hands.
-Add warm water (as required), mix and knead well until all ingredients are combined.
-Take dough,punch and knead it again and grease the dough with oil.
-Cover and leave the dough for 1 & 1 ½ hour in a warm place.
-Knead dough again,cover and rest again for 30 minutes.
-Bread dough is ready.
Chicken filling:
-Boil the chicken with salt and black pepper powder, shredded and set aside.
-In wok,add butter,let it melt then add onion and sauté little.
-Add all-purpose flour and sauté until its color changes.
-Remove from heat,add milk,whisk continuously to avoid any lumps formation.
-Bring back on heat,add black pepper powder, salt and mix it.
-Add boiled and shredded chicken,green coriander,capsicum,olives and mix well.
-In filling, you can use vegetables or mince (any of your choice).
Assembling:
-Roll out the dough into a rectangular shape with the help of rolling pin.
-Place the filling in the center of the dough.
-Make slits/cuts with the help of knife on both of the longer sides.
-Start bringing the top most slit ends across from each other alternately.
-Keep going, remember to alternate,left to right and right to left.
-Put dough in a baking tray, apply egg-wash,sprinkle nigella and sesame seeds then bake in a preheated oven at 180 C for about 20-25 minutes.
-Serve hot.
(Egg-wash means to beat an egg with a tbs. of milk then brush it all over your bread)

-Chulhay sa hata ker doodh shamil karein aur musalsal whisk kertay rahein ta ka koi lump na banay.
-Chulhay per dubara rakh ker kali mirch powder aur namak dal ker mix ker lein.
-Chicken boiled & shredded,hara dhania,shimla mirch aur zaitoon dal ker ache tarhan mix ker lein.
-Filling mein apni marzi ki sabzian ya qeema bhi shamil ker saktay han.
Assembling:
-Dough ko rolling pin ki madad sa rectangular shape may bail lein.
-Filling ko dough ki center mein rakh dein.
-Dough ki dono sides per knife ki madad se slits/cuts laga lein.
-Ab ek ek ker ka slit ends ko ek dosray per alternatively overlap ker lein.
-Left sa right aur right sa left overlap ker lein.
-Dough ko baking tary per rakh ker egg sa wash ker len,kalonji aur safed til sprinkle ker len aur preheated oven mein 20-25 minute kliya bake ker len.
-Garam serve karein.

Christmas Wreath - Christmas Braided Bread
I am glad to share with you this beautiful Christmas Wreath - Christmas Braided Bread that is a great appetizer idea you can prepare for Christmas this year. It looks quite impressive and appetizing and even though it might look difficult to prepare it is actually quite easy and forgiving. This wreath consists of a simple yeasted dough, filled especially for Christmas with a green, white and red filling. Therefore, I chose a spinach pesto, cheddar cheese and red pepper for the filling but feel free to use whatever fresh herbs you like best for the pesto, like basil or parsley, different types of cheese and for a a more spiced appetizer sprinkle with red chili pepper flakes.

2 tbsp (30g) olive oil
For the filling
