1 c Whole bran cereal 1 c Milk 1 Egg 1/4 c Oil 1/4 c Honey 1 1/4 c Whole wheat flour; unsifted 2 ts Baking powder 1/4 ts Baking soda 1/2 ts Salt Preheat oven to 400 F (hot). Grease muffin tins. Stir bran cereal and milk together in a bowl. Let stand a minute or two. Add egg, oil, and honey. Beat well. Stir remaining ingredients together until well mixed. Add to liquid mixture and stir only until mixed. Put into muffin tins. Bake about 20 to 25 minutes or until lightly browned. • 1½ cups 100% all bran cereal • 1 cup buttermilk • 1/3 cup coconut oil melted • 1 large egg • 2/3 cup brown sugar • 1/2 teaspoon vanilla extract • 1 cup all-purpose flour • 1 teaspoon baking soda • 1 teaspoon baking powder • 1/2 teaspoon salt
✅Instructions
00:00:53 - What kind of bran cereal to use for muffins
1️⃣ 00:00:44 - Preheat oven to 450 degrees Fahrenheit. Lightly spray a muffin pan with nonstick spray or line with paper cups.
2️⃣ 00:00:53 - In a medium sized mixing bowl soak bran cereal and buttermilk for about 10 minutes until it gets all soggy.
3️⃣ 00:01:30 - Add in melted coconut oil, egg, brown sugar, vanilla extract, flour, baking soda, baking powder and salt. Stir thoroughly. This mixture will be very thick.
4️⃣ 00:02:34 - Divide the batter equally among the 12 muffin cups, filling almost all the way full.
5️⃣ 00:02:57 - Bake in the preheated 450 degree oven for 5 minutes. Without opening the door, reduce the heat to 350 degrees and let the muffins continue baking another 8 to 10 minutes. Remove from the pan and cool on a wire rack.
