Sourdough Bread with Instant Yeast Recipe
I tried making Sourdough Bread with Instant Yeast!
Ingredients:
300 grams All Purpose Flour
234 grams Water
60 grams Sourdough Starter
6 grams Salt
3 grams Instant Yeast
The same recipe on both dough.
My Method:
1.)Combine flour, water, levain, and instant yeast rest for 30 minutes
2.) Add and mix in the salt rest for 30 minutes
3.) Perform Stretch and Fold and dough rested for 30 minutes
4.) Perform a Coil Fold on a square container:
1st Coil Fold rested for 30 minutes
5.) Bulk Fermentation is completed in 2 hours!
6.) Shape and place it into the banneton
7.) Place into the fridge for 30 minutes
8.) Score the dough and I did #samedaybake (Preheated) 500F with lid on for 20 minutes and 450F with lid off for another 20 minutes.

Easy Overnight Focaccia Tutorial (uses instant yeast)

This is my VIRAL focaccia recipe! So many people say they've had success using this method and recipe to make focaccia at home. They are also shocked by how incredibly simple it is!
The secret ingredient for this recipe is time. You don’t spend much time actually mixing/handling the dough, but it does spend a considerable amount of time slowing rising in the fridge. This adds to the flavour and the consistency of the focaccia and I promise it’s worth the planning ahead!

Measurements:
500g bread flour
420ml slightly warm water
4g (1 teaspoon) instant yeast
15ml (1 Tablespoon) extra virgin olive oil plus more for pan + to top bread
5g (1 teaspoon) honey
10g (2 teaspoons) fine sea salt
Baking tray dimensions:
9x13inch (23x33cm) metal baking tray
Proof in fridge for 18-48 hours before placing dough in tray to proof for another 2 hours at room temperature before baking.
Bake at 220C/430F on bottom rack of oven for 18-22 minutes, or as long as it needs to reach a deep golden brown. Baking at the bottom of the oven helps to ensure the bottom of the focaccia crisps up. If you have a gas oven with heating element at the bottom, then bake in mid to upper rack.

Does Mixing Salt & Yeast Have a Negative Effect on Fermentation?
Does salt actually harm yeast? Will mixing them make your bread not rise or rise too slowly? The answer to both of those questions is – no. If you have watched any of my videos you would have noticed that I always mix my dough in pretty much the same order – liquid, yeast, salt, other ingredients like sugar, etc., then mix to dissolve fully, and only add the flour last before mixing to a dough.
I never questioned this method as this is the way I was taught in the first and only baking class I ever attended. It worked there, so why would I change it, right? And that must be the issue with this misconception – a beginner is shown or told something, and they believe it because someone who knows better than them said it.
Fortunately, I had a good teacher who set me on the right track from the get-go. And because I never encountered any issues, I simply thought that this was common practice. Also, mixing dough this way makes the most sense to me as all ingredients are fully dissolved before kneading.
You can find a video on my channel in which I show and explain exactly how salt affects bread dough and fermentation, so I will not go over it again here. But in short – salt slows down fermentation and helps with controlling it. It draws moisture though the cell walls of yeast essentially dehydrating it through osmosis. This is a necessary evil since a controlled fermentation is what we need when making bread.
Saying that, the simple act of mixing salt and yeast in water does not cause such extreme osmosis that the yeast gets dehydrated and dies instantly. Ok, if you’d mix an unreasonably large amount of salt with yeast and leave them to sit together for an unreasonably long time, then perhaps. But we are making bread and we do not use more than 2.5% salt in any recipe, so we should not encounter any issues.
