How To make Breton Apple Pie
-By Nick Malgieri 1 c Unsalted butter
1 c Sugar
1 tb Dark rum
1 ts Vanilla
4 lg Egg yolks
2 3/4 c Unbleached all-purpose
-flour Apple Filling (recipe -follows) Egg wash of 1 egg beaten Dash salt Butter 10- or 9-inch springform pan. Line bottom with parchment or wax paper cut to fit. Cream butter until light. Slowly add sugar, beating until mixture lightens. Beat in rum and vanilla. Add egg yolks, 1 at time, beating until mixture is very smooth and light. Beat in flour until absorbed, without overmixing. Place 1/2 dough in pan and press with fingertips evenly over bottom of pan and out 1 inch up sides. Spread Apple Filling over dough. Flour remaining dough and press into 10- or 9-inch disk on cardboard or tart pan bottom. Slide dough over filling and press into place, making sure sides are straight and even. Brush top with egg wash. Trace lattice pattern on top with fork tines. Bake at 350 degrees 40 to 45 minutes, until deep golden and slightly risen. Cool briefly in pan, then unmold onto rack to cool. Makes about 8 servings. Like the classic gateau Breton which uses a cross between a pound cake and a pastry dough-this dessert lightens a rich dough with a cooked apple filling. Try substituting pears or a compote of slightly underripe peaches or apricots for the apples. Apple Filling 2 pounds Golden Delicious apples 1/2 cup sugar 3 tablespoons butter 2
tablespoons lemon juice 2 tablespoons dark rum Peel, core and slice apples into large saucepan. Add sugar, butter, lemon juice and rum. Cook, covered, until apples exude juices. Remove cover. Reduce heat and cook until juices evaporate. Cool before using. Note: To freeze, chill cake. Wash pan and line with plastic wrap. Ease cake into pan, right side up. Double wrap with plastic wrap. Label and freeze. -----

Apple Pie Bites

Serves: 2 | Makes 12 apple pie bites
Ingredients:
4 raw apples chopped (600 g)
1 cup rolled oats (96 g)
1 cup applesauce, unsweetened (250 g)
2 tsp lemon juice
1/2 tsp vanilla powder
2 tsp Ceylon cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cardamom
Directions:
1.) Preheat the oven to 350 degrees. Place chopped raw apples on a baking sheet lined with parchment paper and cook for around 15 minutes until soft. Remove and let the apples cool to the touch.
2.) In a large bowl, add cooked apples. Smash apples gently to break them down slightly and release a small amount of liquid. Stir in the remaining ingredients.
3.) In a muffin tin lined with parchment cupcake liners or a silicone pan, separate the batter into 12 cups.
4.) Press each one down to secure the bites stick together.
5.) Bake for twenty minutes. Remove from the oven and let cool completely before removing from the pan.

I'd like to share with you my favorite Breton plum pie recipe. It's just world's best pie with plums. Every year when the first plums are ripe it is always the first thing i'm making with them.
Breton plum pie recipe:
20 Oz (600 g) Plums
5 Oz (150 g) Unsalted butter
1 1/2 Cup (180 g) All purpose flour
1/2 Cup (100 g) Granulated sugar
1 pc Egg
3 pcs Egg yolk
1 tsp Vanilla sugar
1/2 tsp Baking powder
1/3 tsp Salt

Grated Apple Pie Recipe From 1898 - Old Cookbook Show
This recipe shares a common history with many early apple pies going back to the 1600s in England. You can see similarities to a recipe we did from Robert May's 1685 cookbook 'The Accomplished Cook': This pie recipe is a cross between an apple pie and a custard pie with a meringue topping, and is closely related to Marlboro Pie.
Grated Apple Pie.
Beat together until light and creamy the yolks of 3 eggs and ½ cupful sugar, then stir in 1 cupful of freshly-grated apple, mix well, then add ¼ cupful sweet thick cream, add also the grated rind of I small lemon, a few grated almonds, and seeded raisins may be added if desired, but the pie is nice without them.
Line a flat pie plate with rich pastry, pour in the apple mixture, and bake in a moderate oven until light brown, then spread with a meringue made of the whites of the 3 eggs beaten stiff and 6 level table. spoonfuls sugar added. Brown lightly. Serve cold.

Recipe:
1 egg
6 ounce of sugar (180 gram )
6 ounce of milk ( 180 gram )
5 tablespoons vegetable oil or coconut oil
1.5 teaspoon baking powder
11 ounce of flour (320 gram)
Fruits (apricots and strawberries) or any other fruits based on your choice
Bake 45-50 minutes at 350F or 180C
