How To make Brisket Dinner
5 lb Brisket; trimmed
1 Lg Onion; chopped
1 Lg Carrot; chopped
2 ts Salt
1 Bay leaf
1 1/2 ts Thyme
1 c Water
1 lb Small boiling onions; peele
6 Med Carrot; cut in 1/4-inch
Cut brisket in half or roll to fit into Crock-Pot. Add chopped onion, chopped carrot, bay leaf, thyme, salt and water. Cover and cook on low 8 to 10 hours. When meat is done, lift gently from stock. Support underneath
with a spatula and keep warm. Add small onions and carrots to stock in Crock-Pot. Cover and cook on high 1 to 2 hours. Remove vegetables from broth with a slotted spoon and arrange around the meat.

Brisket Gumbo | Leftover Brisket Recipes
What do you do with leftover brisket? GUMBO. This Brisket Gumbo has amazing flavor with a dark roux, holy trinity base of veggies, Okra, and of course BRISKET!
Ingredients
- 1 cup vegetable oil
- 1 cup flour
- 1 cup onion (diced)
- 1 cup celery (chopped)
- 1 cup bell pepper (chopped)
- 4 cups beef stock
- 1 Tablespoon Cajun seasoning
- 1 cup brisket (chopped into 1 inch cubes)
- 1 cup okra (chopped)
- White rice
- Green onion
- File Powder
Recipe:
- Add 1 cup of oil to thick pot. Heat to shimmer (400 degrees)
- Add 1 cup flour to oil and stir until dark brown (8-10 minutes)
- Add onion, celery and bell pepper to pan and saute until soft (3-5 minutes)
- Add 4 cups of beef stock and tablespoon of cajun seasoning
- Chop brisket into 1 inch cubes (1-2 cups)
- Chop Okra (1 cup)
- Add brisket and Okra to pot, simmer for 30 mins
- Pour gumbo into bowl, add rice, add chopped green onion and file powder to garnish

P.S. I’m not sure I mentioned this in the video, but feel free to trim as much or as little fat from the brisket, before searing, as you’d like. Just use a sharp knife to slice off any excess fat that you don’t want. Some briskets are fattier than others.

9-11 lb Whole Beef Brisket (point AND flat)
1/4 cup Neutral Oil
1 cup Red Wine
4 medium Onions, Julienned
4 Celery Stalks, Chopped
2 medium Carrots, Chopped
2 Fennel Bulbs, Julienned
2 Leeks, Cleaned and Sliced
8 Garlic Cloves, Whole
Kosher Salt TT
Braising Liquid...
1.5 cups Tomato Puree
1/2 cup Red wine vinegar
1.5 tbsp Paprika
2 cups beef stock
3 tbsp honey
Herb Sachet (“bouquet garni”)...
1 bundle Fresh Thyme
10-12 Black Peppercorns
2 Bay leaves
Finishing Sauce…
1/ 2 cup Red Wine
1 small bundle Fresh Thyme
Flavor Bundle - Carrots, Celery, Shallot - equal parts to fill bundle.
2 cups Liquid from finished braise, strained
