Easy Cheesy Chicken and Broccoli Casserole
Ingredients
6 - 8 chicken tenderloin pieces, Uncooked
1 10 oz package of frozen broccoli, thawed
1 can cream of chicken soup
1 cup sour cream
1 cup extra sharp cheddar cheese
2 - 3 tablespoons of milk
1 sleeve Ritz crackers, crushed
Salt & Pepper to taste
Directions
1. Preheat oven to 350F
2. Place chicken in an 8x8 baking dish. Season with salt and pepper. Place broccoli on top of chicken. Season with salt and pepper.
3. In a small bowl, stir together soup, sour cream, cheese and milk. Season with salt and pepper to taste. Pour over chicken and broccoli. Top with ritz crackers.
4. Bake for 30-40 minutes until bubbly in the center.

Broccoli Casserole with Ritz Crackers
This classic broccoli casserole with Ritz crackers uses a unique herbed cheese blend to create a creamy sauce that balances well with the buttery cracker topping.

INGREDIENTS:
2 packets (around 800 g) frozen broccoli, thawed and dried;
1 tsp minced garlic;
150 g (5 oz) herbed processed cheese;
½ cup full-fat cream;
1 cup sharp cheese, shredded;
1 cup ritz crackers, crumbled;
⅓ cup melted butter.

BROCCOLI CHEESE CASSEROLE
Preheat oven to 325 degrees F.
Lightly oil a 9 X 9 baking dish. Set aside.
1 cup sour cream
1 cup shredded white cheddar cheese or substitute with sharp cheddar cheese (save 1/4 cup for Casserole topping)
1 cup shredded Colby Jack cheese (save 1/4 cup for Casserole topping)
1 (10.5 ounce) can condensed cream of mushroom soup, undiluted
1 (6 ounce) can french-fried onions, divided
2 (16 ounces each) frozen broccoli florets, thawed
1. In a 3 to 4-quart sauce pan, combine sour cream, condensed soup, 3/4 cup of each shredded cheeses, and 1-1/2 cups onions. Stir over medium-heat until cheese begins to melt, about 4-5 minutes. Remove from heat.
2. Stir in thawed broccoli florets until well coated.
3. Evenly pour into prepared baking dish.
4. Bake, uncovered, until bubble, 30-35 minutes. Sprinkle with the remaining two cheeses and onions. Bake until cheeses are melted, 10-15 minutes.
Tips: Store CASSEROLE airtight in refrigerate up to 2 days. Warm in microwave until desired warmness.

Broccoli Casserole

Ingredients
1/2 cup mayonnaise
1/2 cup plain yogurt
1 1/4 cup shredded sharp cheddar cheese
1/3 cup blue cheese dressing
2 eggs
1/2 teaspoon salt
1 1/2 teaspoon fresh ground black pepper
Flavor Pack from Ramen
6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
12 ounces sliced mushrooms, Sauteed in 1 tablespoon butter
1 package chicken flavored Ramen noodles, broken up
Directions
Preheat oven to 350 degrees F.
In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.
