Baked Chicken With Broccoli, Spinach And Swiss Cheese: Recipe

Ingredients:
1. 1/2 Of Chicken
2. 3 Cups Baby Spinach
3. 5 Cups Broccoli ???? Florets
4. 4 Slices Of Swiss Cheese (Low Sodium)
5. 1/4 Cup Diced Red Onion
6. 1/4 Cup Diced Red Onion ????
7. 1/4 Teaspoon All-Purpose Seasoning
8. 1/4 Teaspoon Parsley Flakes
9. 1/4 Teaspoon Thyme Leaves ????
10. A Sprinkle Of Parmesan Cheese
11. 1/4 Cup Diced Tomato ????
12. 2 Teaspoons Tomato Ketchup
13. 2 Cloves Of Minced Garlic ????
14. 2 Teaspoons Blended Seasoning
Instructions:
1. Clean And Wash The Chicken Thotoughly
2. Use A Knife And Make Cuts Acroos The
Chicken
3. Season The Chicken With The All-Purpose
Seasoning, Red Onion ????, Yellow Onion ????,
Thyme Leaves, Parsley Flakes, Diced
Tomato ????, Ketchup, Blended Seasoning.
4. Place The Chicken On A Poece Of Baking
Sheet, And Add The Rest Of The Ingredients
On The Chicken.
4. Sprinkle The Parmesan On The Vegetabkes,
And Add the Swiss Cheese On Top.
5. Wrap Thoroughly With The Baking Sheet,
Keep The Folding Up, So That The Liquid
Doesn't Leak Out, Wrap It A Second Time,
Just To Make Sure There’s No Leakage In
The Oven.
7. Now You Must Wrap In Foil Paper Twice,
With The Folding Up To Prevent Any
Leakage.
8. Pre-Heat Your Oven At 375*
9. Place It In The Oven, And Let It Cook For
1-1/2 Hours.

Broccoli and Cheese Egg Casserole -- Lynn's Recipes
Lynn demonstrates how to make a delicious Broccoli and Cheese Egg Casserole that is a great addition to a brunch. Would be perfect for Mother's Day.
½ cup red onion, finely chopped
1 cup mushrooms, finely diced
1-1/2 cups broccoli, finely chopped
1 can diced tomatoes, drained (14-1/2 ounce)
12 eggs
½ teaspoon salt
½ teaspoon black pepper
2 cups sharp shredded cheddar cheese
Preheat oven to 350°. Spray a 9x13 baking pan with cooking spray.
Whisk eggs in a large bowl. Stir in the chopped vegetables, tomatoes, salt, pepper and cheese. Pour into the prepared pan.
Bake at 350° for 45 minutes. Cool on a wire rack. Cut into squares and serve warm or hot. Refrigerate any leftovers.
Serves 12
This can be made the day ahead and baked the next morning.

Ingredients
4 tablespoons butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tablespoon AP flour
2 cups low sodium chicken or vegetable stock
1 tsp kosher salt
½ tsp black pepper
¼ tsp or ground nutmeg, optional
3 cups broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 cups half & half or milk or light or heavy cream
8 oz block grated cheddar cheese or 2 cups (mild, medium, or sharp )
Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in half & half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.
Serve with toasted crusty bread or in a bread bowl if desired.
