1 1/2 yellow sweet onion, chopped
1 lb ground beef
3 cups diced tomatoes
1/2 cup chili seasoning
14-16 ounces chili or kidney beans
14-16 ounces black beans
Dash of sugar
Dash of coriander
Dash of cinnamon
1 bottle of beer
Chop onions and cook in olive oil until soft. Add in beef and cook until brown. Stir in rest of ingredients and let simmer until all combined. Add more seasoning as needed.
CHILI SEASONING
Cayenne
Chili powder
Onion powder
Cumin Paprika
Amounts depend on taste. Mix together until combined.

THE BEST AWARD WINNING CHILI | AND JALAPENO BUTTERMILK CORNBREAD | Cook Clean And Repeat
Jenn's Smokey 4 Pepper Chili
3 Poblano Peppers
3 Anaheim Peppers
2 Red Bell Peppers, chopped
2 Jalapenos, chopped
2 Onions, chopped
1 Whole Head of Garlic, minced
3 Pounds Ground Chuck
1 Pound Jimmy Dean Italian Sausage
12 oz. Bacon
12 oz. light beer (or extra broth)
1 1/2 cups Chicken Broth
2 cups Tomato Sauce
12 oz. Can Tomato Paste
2 Cans Kidney Beans
2 Cans Pinto Beans
2 Tablespoons Chili Powder
1 Tablespook Chipotle Chili Powder
2 Teaspoons Garlic Powder
2 Teaspoons Cumin
2 Teaspoons Salt
2 Teaspoons Pepper
2 Teaspoons Paprika
1 Teaspoon Cayenne Pepper
Brown Paper Bag
Directions:
Preheat oven to 400 degrees. Roast Poblano and Anaheim peppers for 20 minutes. Place into paper bag and fold closed. Let steam for 10 minutes. Peel, de-seed and chop peppers.
In large pot, fry bacon until slightly crisp. Remove from pot and reserve 2 tablespoons of bacon grease. Saute' onion, peppers, and garlic until onions are becoming translucent. Remove from pot. Set aside.
In same pot, brown ground chuck and Italian sausage. Once meat is browned, return peppers and onions to pot, along with roasted and chopped peppers.
Add remaining ingredients. Stir. Bring to a simmer over medium heat, Then, reduce to low/simmer and cook for at least 2 hours. The Chili will get thicker and silkier the longer it simmers.
Top with cheese, sour cream, tortilla chips!...and especially Jalapeno Buttermilk Cornbread! Enjoy!
Jalapeno Buttermilk Cornbread
1 1/2 cups Yellow Cornmeal
1 Heaping Tablespoon Flour
1 Cup Buttermilk
1 Teaspoon Salt
2 Eggs, Beaten
1 can Creamed Corn
2 Tablespoons Pickled Jalapeno
1 Medium Onion, chopped
1/4 Cup Melted Butter
10 oz. Cheddar Cheese
Mix all ingredients and pour into greased 9x13 ban. Bake at 350 for one hour.

The Super Bowl is here and we’re making my Wheat Beer Chili with Mexican Chocolate, the popular chili recipe we made on the food truck. There are lots of chili’s out there and I tried hard to make mine a unique chili recipe. This is a super easy chili recipe with a few things that make it super unique and flavorful. Mexican chocolate gives the chili this awesome mole flavor and the wheat beer adds a nice balance to the richness. If you’re looking for Super Bowl party recipes, this chili is a must. I make my chili with no beans but it's a delicious sweet and spicy chili that was a big hit on the cart. You will see Cholula Hot Sauce featured throughout this recipe. Homemade CHILI Recipe | Simply Mama Cooks

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
