This bread is made with homemade oat flour and buckwheat flour (by grinding rolled oat and buckwheat). For binder, 2 tbsps. ground psyllium husk is used to replace 2 tsps. xanthan gum. The bread comes out soft but more crumbly. It is best served fresh from oven.

• water (500g | 2 cup + 2 TBSP)
• yeast, fresh (20g | 2 1/5 TBSP) or active dry yeast (8g | 2 3/4 tsp)
• honey (50g | 2 1/3 TBSP) or maple syrup (50g | 2 1/5 TBSP) or their combinaction
• buckwheat flour (300g | 2 1/2 cup)
• corn starch (50g | 5 1/2 TBSP)
• salt (9g | 1.5 tsp)
• caraway seeds (6.3g | 3 tsp)
• psyllium (40g | 1/4 cup + 1 tsp)
For Eggwash
• egg (1 pc)
• milk (15.2g | 1 TBSP)

This buckwheat bread requires only 4 INGREDIENTS: raw buckwheat groats, water, salt, and maple syrup!
It takes some time (appx. 32 hours), but the only things you need to do is soak and drain the buckwheat groats, blend them, and add salt, maple syrup, and seeds – about 10 mins. Everything else is just letting the buckwheat groats ferment :)
This buckwheat bread is FREE FROM GLUTEN, EGG, DAIRY, and YEAST! And NO-KNEAD too. It is super easy to make, and insanely delicious.

INGREDIENTS
(15cm x 9cm x 7cm loaf)
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
• 1 cup raw buckwheat groats (no buckwheat flour)
• ½ cup (120ml) water
• 1 tsp sea salt
• 1 tsp maple syrup (sub honey if not vegan)
Add-ins (optional)
• Pepitas
• Sunflower seeds
• Sesame seeds
(Standard loaf pan: 21cm x 11cm x 7cm)
• 2 cups raw buckwheat groats
• 1 cup (240ml) water
• 2 tsp sea salt
• 2 tsp maple syrup
1: Add raw buckwheat groats to a bowl and cover with water. Stir and (cover) then leave on the countertop for 6-8 hours.
2: Drain the buckwheat groats (no rinse). Add them with ½ cup water into a food processor, and blend well. Transfer the mixture into a bowl and cover with a tea towel. Let sit for 24 hours at room temperature.
3: Add salt, maple syrup, and desirable add-ins (such as pepitas, sunflower seeds, sesame seeds, etc). You can keep it plain, or add anything you like. Gently mix in add-ins, then transfer to a loaf pan. Bake at 175˚C/350˚F for 30-40 mins (for standard loaf pan 60-70 mins), until a toothpick comes out clean.
4: Let cool in the pan.
Slice, TOAST (golden crunchy edge), and enjoy with vegan (or not) cream cheese!

Buckwheat Flour Coffee Bread: gluten-free, oat milk
This gluten-free buckwheat flour coffee bread recipe is a delicious cake to have with your morning coffee or a mid-morning cuppa. What does a Buckwheat Flour Cake Recipe taste like? Buckwheat flour offers a slightly nutty, earthy flavour giving a more rich and more complex taste. When combined with coffee, chocolate or fruit it works well as a loaf cake or bread.
I challenged myself to bake two loaves, one with espresso coffee and one with a coffee bag. Once baked the difference was hardly detectable. As long as you make the coffee strong then the results will be the same. You could swap out the sugar for a sugar alternative, swap the eggs to make it vegan and add dairy-free butter. We love eating this with our morning espresso toasted with a little butter and chocolate spread for a touch of extra indulgence.
This Sue Maree P cake recipe would also work with other flours. You could bake this easy cake with regular plain flour, Spelt flour or your own favourite flour combination.

Strong Coffee - 50ml or 75ml
Oat Milk (or your preferred type) - 100ml
Buckwheat Flour - 200g
Eggs 2
Ground cinnamon - 1 tsp
Unsalted butter - 125g
Caster Sugar - 150g
Baking Powder - 1 tsp
Baking Soda - 1 tsp
Walnuts (roasted for 10 mins & chopped) – 50g

PREHEAT – oven 170˚C and line a loaf tin with baking paper.
ROAST – walnuts on a lined baking tray for 7-10mins.
WHIP – butter and sugar together for 10 minutes until fluffy.
ADD - eggs one at a time.
WHISK – flour, baking powder +soda and spices until combined.
ADD slowly to liquid and mix until combined. Don't over mix.
FOLD in chopped walnuts – save at least 6-8 for the top.
ADD the decorative walnuts to the batter (if you remembered to save some.
BAKE for 40 minutes in a fan-forced oven, check it's ready with a skewer to ensure the middle is cooked

110g (1Cup) Oatmeal Flour
2tbsp Psyllium Husk Powder
¼ tsp Salt
210 ml Warm Water
1 Tsp Apple Vinegar
1Tsp Active Dry Yeast
1Tbsp Olive Oil
1Tbsp Mediterranean Spices (optional)
Sesame Seeds for sprinkling on top (optional)
➤Preparation :
• put oatmeal flour, psyllium husk powder, active dry yeast, salt, and Mediterranean Spices (optional) in a bowl and mix it all together.
•Add warm water, olive oil, and a tsp of apple vinegar and mix well. Leave the dough to soak for 20 minutes.
• Form the dough into a ball and divide it into 6 smaller balls (It will be better to oil your hands a little, as the dough is sticky and this is the easiest way to make balls).
• Dip the ball into the sesame seeds and put in a prepared muffin pan (sesame seeds must be on top)
•Bake for 35 minutes on 200°C ( 392F )
