Pilaf is a dish with a fascinating history. It has spread around the world from its origins in the middle east and inspired, it’s said, diverse rice based dishes from paella to biryani. Elsewhere made with rice, Armenian pilaf is made with bulgur.
For Taline Sarian, pilaf is a staple meal. Her mother and grandmother used to make pilaf for her, and she loves it because it’s easy, and also very healthy. This simple recipe has all the hallmarks of Armenian cuisine, and yet can still be made on a weeknight. Taline shared her recipe with us.

tomato paste (01 TBS)
pepper paste ( 01 Tbsp.)
onion -50 gm
mix bell pepper - 150 gm.
sundried tomato - 50 gm
3 nose garlic
salt pepper
dry mint 20 gm
olive oil
First wash the bulgur rice well and put in the sterner
take the fan and keep it on low flam and add some olive oil.
add onion garlic and 3 cooler bell pepper.
cook little.
add tomato paste and pepper paste.
cook little.
add little water.
add bulgur rice.
mix well.
add water check the water level.
cook the rice halfway.
cover for 10 minutes
keep on low flame.
mix again.
cover for 10 minutes
this food is made from Turkish.

???? PILAF INGREDIENTS
2 tablespoons extra virgin olive oil
1 onion finely chopped
¼ cup tomato paste
1 vine ripe tomato finely chopped
¼ green pepper finely chopped
1 ½ cups fine bulgur wheat
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
1 can chickpeas rinsed and drained
3 cups chicken broth
1 tablespoon parsley finely chopped
INSTRUCTIONS
1. Heat the olive oil in a large stockpot over medium heat. Add the onions and cook until soft and translucent, about 5-7 minutes.
2. Stir in the tomato paste, chopped tomatoes and green peppers, and continue to cook with the onions until fragrant, about 2-3 minutes.
3. Add the bulgur, cumin, salt and pepper, and stir to combine until the bulgur is completely coated in the tomato paste, about 2-3 minutes.
4. Add the chickpeas on top along with 3 cups of chicken broth or water and stir to combine. Remove from heat, close the lid and allow the bulgur to absorb the liquid for 10 minutes. Open the lid and fluff with a fork.
5. Serve with chopped parsley and fresh vegetables, if desired.

BULGUR PILAF // One Pot Meal // Simple Vegan Recipe
This recipe is adapted version from @refikaninmutfagi , my favourite Turkish chef.
One pot meal, simple to make filing, nutritious and very delicious.
Served with yogurt (vegan version) and pickles, good fresh and even better as leftovers, try it!
Ingredients:
2 cups ground bulgur
2 medium onions
2 small carrots
5 cloves garlic
2 tbsp hot red pepper paste
1 medium tomato
1 medium zucchini
400 g boiled black beans
500 - 600 ml water
1 tbsp dried mint
1 tsp dried thyme
1 tsp oregano
1 tsp salt
1 tsp ground black pepper
fresh parsley
plant based yogurt
pickled cucumbers

Bulgur pilaf (pilau) recipe for easy dinner
A quick recipe for healthy dinner - bulgur pilaf / pilau
Ingredients
2 Tbsp. Olive Oil
2 Cups Extra Extra Coarse Bulgur
1 Tbsp. Butter
4 Cups Chicken Stock
½ Tsp. Salt
Suggestions for serving
Plain yogurt
Cucumber
Mint
Mix finely chopped mint and cucumber with plain yogurt, and serve near pilaf.
1 Place olive oil in a saucepan, add bulgur. Roast for 1 minute and add butter. Add salt and chicken stock.
2 Cook on low heat for 15 minutes until water has been absorbed.
3 Set aside to rest for 10 minutes before serving.
