Todays Recipes
Focaccia Bread
dough:
1 3/4 cups warm water
2 1/4 tsp active dry yeast
3 tsp sugar
5 cups flour
1 tbsp salt
1/2 cup + 2 tbsp olive oil
topping
3 tsbp olive oil
1 tbsp rosemary
3 tbsp parmesan cheese
White Bread Loaf
Makes 2 Loaves
Mix 2+3/4 C of warm water with 1.5 Tablespoons of active dry yeast and 1 Tablespoon of sugar. Allow to sit for about 5 minutes until bubbly. Add in 1/4 c of honey 2.5 tsp salt and 1/4 C of either butter/oil. Finally add in 5-6 cups of flour kneading for 8-10 minutes.
Place dough into greased bowl for one hour.
Divide dough in half, shape into 2 loaves and place in greased pans. Let rise one more hour until it has reached the top of the pan or just above.( it will rise more in the oven)
Bake at 350 for 30 minutes until golden brown.
Let sit for 5 minutes before removing from pans and brushing butter on the crust.
Cheeseburger Soup
2 pound ground beef
1 cup chopped onion
1 cup shredded carrots
1 cup diced celery
1 teaspoon dried basil
1 teaspoon dried oregano flakes
4 tablespoons butter
4 cups chicken broth
3 cups diced potatoes
3 Tbsp all purpose flour
2 cups of Velveeta type cheese cubed
2 cups Shredded Cheddar
1/2 cup sour cream
1/2 cup heavy cream
salt + pepper to taste
French Toast Bake
Fill a 9x13 greased pan with cubed bread, add 2 cups diced fruit
and 4 oz cream cheese, cubed
Mix together
8 eggs
1.5 cups milk
1 tsp vanilla
1/2 - 3/4 cup maple syrup
1/2 tsp salt
Pour Mixture over the bread, fruit and cream cheese. Bake at 350 for 1 hour
Pie Crust
2.5 cups AP Flour
1 cup cold butter
1/2 tsp salt
6-8 Tbsp cold water
Meat Pie
2.5 lbs meat(beef, venison, maple pork sausage etc.)
2 cups chunky mashed potatoes
1 apple, diced small
1 tsp sage
1/2 tsp thyme
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
1/2 tsp pepper
1 heaping Tbsp flour
1/2 cup beef broth
Bake meat pie at 425 for 40-45 minutes
Hand Pies
Roll out pie crust, cut into desired shape, fill with jam and place top crust over sealing with water. Crimp edges and make slit in center, brush with egg wash. Bake at 400 for 15-20 minutes
Chicken and Cheesy Rice
3 chicken breasts, cut into bite-sized pieces
1 medium onion chopped or 1 tsp onion powder
4 tablespoons butter
1 tsp garlic powder
3.5 cups chicken broth
1 ½ cups jasmine rice
1 tsp salt
1/2 tsp pepper
Add 1 cup of parmesan cheese once cooked
Saute chicken with butter, add the rest of the ingredients, set instant pot to manual on high and pressure cook for 8 minutes, remove lid and add cheese.
Granola Bars
1 cup peanut butter, 1/2 cup maple syrup, 1 tsp vanilla, 1/4 tsp Chinese five spice, 2.5 cups sprouted oats. Top with white chocolate chips.
Glazed Pork Loin
Spread jelly or jam of choice over pork loin and bake at 350 until internal temp registers 145. Top with more jelly/jam
Crispy Parmesan Potatoes
choose small potatoes, slice in half. Toss potatoes with olive oil and butter, season with salt + pepper and parmesan cheese. Line a baking sheet with parchment paper, cover with parmesan cheese. Place potatoes cut side down on cheese and bake at 350 for 20 minutes or until potatoes are fork tender
Carrot Fries
peel and slice into fries, coat with olive oil, paprika, salt + pepper. Bake at 400 for 15-20 minutes.

Squid Ink Cheddar Sandwich Bread / Squid Ink Bread with a Bunch of Cheddar Cheese

◡̈ Ingredients (10 x 19 x 11cm Approx.Pan size)
80g Water (room temp.)
10g Squid Ink
270g Bread Flour
5g Instant Dry Yeast
35g Granulated Sugar
4g Salt
50g Milk
1 (53g Approx.) Egg
30g Soften Unsalted Butter
22 Sliced Cheddar Cheese
◡̈ How to
1. Dissolve the squid ink in water.
2. Mix the dry ingredients and add wet ingredients. Lightly mix it.
3. Transfer to stand mixer, knead it at low for 1~2 mins, medium for 3mins. And then add butter, keep kneading at medium for 12~13 mins.
4. Kneading at low for 1 min to finish, Put it in a container and let it first rise until it doubles in size. (28’C 80mins)
5. Dust flour on the work surface, roll the dough out 38 x 58 cm (triple the length of the pan), and put the sliced cheddar cheese in the middle.
6. Fold 1/3 and put the sliced cheddar, and fold 1/3.
7. Put the cheese, roll the dough, and pinch the all seam side.
8. Cover the lid and let it second rise until 1~1.5cm underneath the pan.
9. Bake it in a preheated oven at 180’C for 30~35 mins.

Fish finger sandwich for @stormzy #MERKY
Fish Finger Sandwich
Ingredients:
- 4 slices of white bread
- 8 homemade fish fingers (see recipe below)
- 6 tbsp tartare sauce (see recipe below)
- 50g (1¾ oz) iceberg lettuce, shredded
- 100g (3½ oz) pickled red onions (see recipe below)
Method:
1. Toast the bread slices to your preference, or not if you have fresh soft bread.
2. Spread tartare sauce on one side of each slice.
3. Layer fish fingers, shredded iceberg lettuce, and pickled red onions on two slices of bread.
4. Add an additional spread of tartare sauce on the remaining slices of bread and place them on top to complete the sandwiches.
Tartare Sauce
Ingredients:
- 200ml (¾ cup) mayonnaise
- 6 cornichons, diced
- 1 tbsp baby capers
- 2 shallots, finely diced
- A small bunch of dill, finely sliced
- Zest of 1 lemon
Method:
1. Combine all ingredients in a bowl. Mix well and set aside.
Pickled Red Onions
Ingredients:
- 1 red onion, thinly sliced
- 200ml (¾ cup) water
- 100ml (⅓ cup) apple cider vinegar
- 100ml (⅓ cup) red wine vinegar
- 1 tbsp salt
- 20 pink peppercorns
- 1 tbsp sugar
Method:
1. Combine all ingredients except the onions in a pot and bring to a light simmer.
2. Place the onions in a clean glass jar. Pour the hot pickling liquid over the onions.
3. Allow to cool. Tip: They're even better if made a day ahead. Store in the fridge once at room temperature; they'll keep for weeks.
Homemade Fish Fingers
Ingredients:
- 600g (1.3 lbs) white fish (like halibut, cod, or haddock), cut into 8 strips
- 2 eggs, beaten
- 200g (1⅔ cups) flour
- 200g (2 cups) panko breadcrumbs
- Salt, to taste
- Old bay, to taste
- Oil for frying (such as olive or peanut oil)
Method:
1. Season the fish strips with salt.
2. Dust them in flour, dip in the beaten eggs, and coat with panko breadcrumbs. Place them on a plate with some panko underneath to prevent sticking.
3. Heat about 0.5cm (⅕ inch) of oil in a frying pan. Fry the fish fingers for 3-4 minutes on each side until golden brown.
4. Remove from the pan and season with a bit more salt.

This one is a simple chives and cheese layer bread with supermarket filo pastry.
You will need:

Filo pastry 200 gr (or 5 sheets)
150 gr grated cheese (cottage cheese works best)
Bunch of chives
15-20 ml oil to brush
Cook on both sides on a low heat
