24 paper baking cups
Vegetable cooking spray
3 large eggs
1 cup finely grated carrots
1 (8-oz.) can crushed pineapple in juice, well drained
1 (8-oz.) container sour cream
1/2 cup finely chopped toasted pecans
1/4 cup vegetable oil
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon vanilla extract
1 (18.25-oz.) package white cake mix
1 (8-oz.) cans crushed pineapple in juice, undrained
1/4 cup sugar
2 tablespoons cornstarch
2 tablespoons butter
1/2 teaspoon vanilla extract

Carrot cake is my WEAKNESS ???? A super moist carrot cake, packed with juicy, plump raisins, topped with a thick and creamy cream cheese icing ???? I love it so much!
It’s super easy to make, similar to my carrot cake loaf cake with a few adjustments ????

All you need is????
For the cake:
2 large eggs, room temp
100g dark brown sugar
75g granulated sugar
50ml buttermilk
175ml vegetable oil
225g plain flour
1/2 tsp baking powder
½ tsp bicarbonate of soda
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
220g carrots (finely grated)
150g raisins
For the icing:
90g unsalted butter, softened
90g full-fat cream cheese
1 tsp vanilla extract
250g icing sugar, sifted
Tin size: 8x8”
Bake 160C (fan) 25-30 minutes or until a toothpick comes out clean
Make sure you let the cake cool before icing it ????

Buttermilk Carrot Cake Recipe
Delicious Carrot Cake Recipe!

My modified recipe:
Preheat Oven to 350 Degrees Fahrenheit
1 1/2 cups butter, softened
3 cups flour
2 1/2 cups carrots, grated
3 eggs, room temperature
1/3 cup buttermilk
1 teaspoon vanilla extract
2 1/2 cups granulated sugar (I opted out 1/4 cup granulated for cane sugar- completely optional)
2 tablespoons ginger, grated
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon or pumpkin spice
1 teaspoon salt
1) Cream together butter and sugar.
2) Beat in vanilla and eggs.
3) In a small bowl, mix together buttermilk and ginger. Set aside.
4) In a large bowl, sift together and combine all dry ingredients. (flour, baking powder, baking soda, cinnamon and salt)
5) Combine grated carrots into dry mixture.
6) Add 1/3 of dry ingredients to butter/sugar and mix.
Add half buttermilk and mix just till combined.
Half of remaining flour, mix.
Add rest of buttermilk, mix.
And finish off with the rest of the dry flour mixture.
Do not over mix as this will make your cake tough.
7) Butter and flour a 9x13 baking pan.
8) Add in batter, spread out evenly and bake for 60-70 minutes, or until a toothpick inserted comes out clean.
9) Toast up your shredded coconut on medium heat in a nonstick pan for a few minutes or until it's golden brown in color.
10) While the cake is still warm (not hot), spread icing on top and finish off with toasted coconut!
11) All done! I recommend to wait until cake has fully cooled before digging in so it doesn't fall apart. Enjoy ;)
Icing recipe:
1 cup cream cheese, softened
1/4 cup butter, softened
1 cup icing sugar, sifted
1) Cream together butter and cream cheese. Add vanilla.
2) Gradually beat in icing sugar until smooth!
