1/2 c Warm water; (110 - 115 degre
1 1/4 c Mashed cooked butternut squa
1 c Warm milk; (110 - 115 degree
2 Eggs; beaten
1/3 c Butter or margarine; melted
1/3 c Sugar
1 ts Salt
7 c All-purpose flour; 7 to 7-1/
Recipe by: TASTE OF HOME - OCT/NOV 95 In a mixing bowl, dissolve yeast in water; let stand for 5 min. Add squash, milk, eggs, butter, sugar and salt; mix well. Gradually add 3-1/2 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured board; knead until smooth and elastic, about 6-8 min. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into three loaves; place in greased 8x4x2" loaf pans. Cover and let rise until doubled, about 30 min. Bake at 375 degrees for 25-30 minutes or until tops are golden. Remove from pans to cool on wire -----

Butternut squash bread!
We live in a small farming community. And don't have access to fancy stores like Whole Foods, Trader Joe's to find butternut squash puree. So we do ours the old fashioned way.
1 medium butternut squash. Wash, then slice in two. Scrape out the seeds and strings and bake on a large cookie pan skin side up, on lined with parchment paper. 425 degrees for 1 hour. Allow squash to cool, then remove skin and smash up squash to puree in a stand mixer or food processor.
Now the mixing of ingredients can begin.
You will need a mixer or stand mixer and a bakers sprayed 9x5 loaf pan.
1 3/4 cup AP flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground nutmeg
2 tsp cinnamon
1/2 cup vegetable oil
3/4 cup granulated sugar
1/2 cup brown sugar
2 large eggs- room temp
1 tsp vanilla extract
1 1/2 cup of butternut squash puree
1/4 cup orange juice
Preheat oven to 350 degrees to bake bread.
Bakers spray the loaf pan and set aside.
Whisk all the dry ingredients in mixing bowl.
Add all the wet ingredients and mix to combine.
Pour into baking pan and bake uncovered for 60 to 65 mins. Until cake tester or toothpick comes out clean. Allow bread to cool before removing from pan and slice. We love to eat our bread with a slather of butter! It's so tender and moist. It's delicious y'all.

Butternut Squash Bread
1 ¾ c. flour
1 t. Baking soda
½ t. Salt
¼ t. Nutmeg
¼ t. Cloves
¼ t. Ginger
1 ½ t. Cinnamon (I used about 3 t .I LOVE cinnamon. ????)
½ c. canola oil (or coconut oil, or butter)
¾ c. sugar
½ c. packed brown sugar
2 large eggs, room temperature
1 ½ c. butternut squash puree*
¼ c. orange juice (I used pineapple juice, but you can also use water!)
Preheat oven to 350 degrees F. Grease a 9x5 loaf pan or muffin tin.
Combine dry ingredients.
Combine wet ingredients.
Add dry to wet.
Pour into prepared pan.
Bake loaf pan for about 60-65 minutes or until toothpick comes out clean or until the top feels springy to the touch.
For muffins, bake about 20 minutes.
*To make Butternut Squash Puree: Cut squash in half lengthwise, scoop out seeds, sprinkle cut sides with salt. Set cut side down on baking pan. I lined my baking pan with foil, which isn’t necessary, but makes clean up easier. Pour some water in pan (about ¼-½”). Bake at 350 degrees F. for about 1 hour or until fork tender.

Butternut Squash Bread with Prunes
This festive holiday bread will be made with California prunes and butternut squash as the stars of the show. It is a nutritious breakfast or snack that brings both fruits and veggies to the table in a delicious way. The prune puree decreases the oil needed in this recipe, and it also substitutes the added sugar completely. The flavors are complemented with other holiday ingredients like cinnamon and walnuts. The bread will also have prune pieces throughout for a nice texture. Plus, the base is part flour and part oats for added fiber and nutrients. This bread provides at least 3g of fiber per serving. I'll also show how to bake a large loaf, and then smaller loaves to wrap and gift to family and friends for the holidays.

Banana Butternut Squash Bread
Bread Mix Ingredients
- 3 Cup of All Purpose Flour
- 1 Cup of Sugar
- 2 Cup of Butternut Squash (Chopped)
- 1 Cup of Banana (2 Bananas, smashed)
- 2 teaspoon of Baking Soda
- 2 teaspoon of Cinnamon
- 1.5 teaspoon of Baking Powder
- 1/2 teaspoon of Nutmeg (if you like savory taste, then make it to 1 teaspoon)
- 1 teaspoon of Salt
- 2 Eggs
- 3/4 Cup of Oil
- 2 teaspoon of Vanilla Extract
Mix them well and pour the batter into bakeware
Meanwhile, preheat the oven to 350F
Additional Toppings
- 1 Cup of Pine Nuts (or any other nuts are fine)
- 1 Cup of Dark Chocolate
Put those toppings on top of the batter and press them well, so they won't burn during the baking process :)
Now bake it for 55 mins (50 mins if you want it to be more moist)
