2/3 C Shortening
2 C Brown Sugar
2 Eggs
3 C Flour
1 C Nuts -- finely chopped
1/2 Tsp Baking Soda
1 Tsp Salt
1 Tsp Baking Powder
1 Tsp Vanilla
Cream sugar and shortening. Add eggs, nuts, sifted flour with soda, salt and baking powder. Chill in roll, slice and bake at 350 degrees for 10 to 12 minutes.

200g - 1 1/4 cups plain (all-purpose) flour
1 tsp bicarb soda
1/2 tsp. salt
125g - 1/2 cup unsalted butter, softened
90g - 1/2 cup caster sugar
110g - 1/2 cup brown sugar
1 large egg
1 tsp Vanilla extract
100g - 1/2 cup semi-sweet chocolate chips
100g - 1/2 cup butterscotch flavoured morsels
30g - 1/2 cup pretzels, roughly chopped
Instructions:
Cookies
Preheat the oven to 180°C/350°F. Line 3 baking sheets with parchment paper.
Add the flour, baking soda and salt into a small mixing bowl. Use a whisk to combine.
Add the softened butter, brown sugar and granulated sugar into a large mixing bowl and mix using an electric hand mixer until pale and creamy, about 3 minutes. Add the egg and vanilla and mix on low speed until well combined.
Sift in the flour mixture. Use a spatula to mix in until incorporated. Stir in the chocolate chips, chopped pretzels and butterscotch flavoured morsels. Mix until evenly distributed.
Use a cookie sized scoop or heaping tablespoon, drop the dough onto the prepared baking sheets. To get nice neat looking round cookies, roll the cookies in the palm of your hands. Place onto prepare baking tins, spacing the dough balls 5cm/2 inches apart. Bake one sheet at a time for 10 minutes or until the edges are slightly golden. The cookies will look really soft and under done but as they cool they will firm up. This is what gives them their chewy texture. If you want to go the extra mile, you can add chocolate chips and chopped pretzels to the just baked cookies as soon as they come out of the oven to add extra flavour!
Notes
Cookies can be stored in an airtight container for up to three days.
To freeze the dough: place the tray of cookie dough balls in the freezer for 2 hours. Then take off the sheet and transfer to a large zip lock bag. To bake the frozen cookie dough balls, add an extra 5 minutes to your baking time.

My Favourite Butter Cookies – Happy New Year to all my dear Subscribers and Friends! I hope to bring you more wonderful treats recipes. I do understand cookie recipes are very easy with simple few ingredients. However, the precision of ingredients and method used will result in the outcome you desire. So here is my favourite version of butter cookie recipe. Enjoy!

FAQ: Why my cookies flattened while baking in the oven?
It might be due to the butter's condition. The consistency is very important if you're piping these cookies. Solution: You can fold in 1 or 2 tbsp of flour, then check if the consistency is slightly thickened. Do not over add the flour. Another way is after piping, you can pop them into the fridge for about 30min, just to hardened it a little, then bake it. If you find after adding 1 or 2 tbsp of flour is comfortable you can bake it straight away.
Ingredients:
this recipe yields about 20-22 cookies
113g (1/2 cup) unsalted butter, softened
60g (1/4 cup+1 tbsp) fine sugar
¼ tsp salt
1 egg yolk
1 tbsp heavy cream
1 tsp vanilla extract
125g (1 cup) cake flour
16g (2 tbsp) cornstarch
Piping tip: 1M
Instructions:
1. Preheat oven at 170°C/340°F.
2. In a large bowl, add the room temp (or softened) butter. Add sugar and salt. Mix them using a spatula so that the sugar the fly out. Then switch to an electric mixer. Mix until creamy, pale and fluffy.
3. Add the yolk, cream and vanilla extract. Mix till combined.
4. Sift the cake flour and cornstarch in 2 batches. Fold in using a spatula. Sift the remaining dry ingredients until the flour disappear.
5. Transfer the dough into a piping bag. I am using 1M tip. Double up the piping bag if yours is thin like mine. A thin piping bag will cause breaking of the bag. Also it will ease your piping.
6. Bake in preheated oven at 170°C/340°F for about 15-18 min. For 15min, the cookies might be softer than 18min bake, so it really depending on how crispy you desire your cookies to be.
7. Let it cool completely.
8. Cookies are ready to serve.

Biskut Butterscotch Chips (Butterscotch Chips Cookies)
Biskut butterscotch chips bukan sahaja sesuai dihidangkan ketika musim perayaan, biskut ini juga amat sesuai untuk dijadikan snek. Rasanya rangup dan mewah dengan keenakan rasa mentega yang telah diperangkan menjadikan biskut ini tidak kurang enaknya berbanding biskut coklat chips. Menghasilkan 40 ke 50 biji biskut.
Bahan Sos Butterscotch:
20 gm mentega
40 gm gula perang
40 gm krim (boleh pakai cooking cream, whipping cream, atau heavy cream)
1/2 st esen vanila
Sedikit garam
Cairkan mentega di dalam saucepan menggunakan api sederhana. Biarkan mentega sehingga keperangan. Kacau selalu.
Masukkan gula perang dan krim, kacau dan biarkan mendidih dan sos sedikit pekat.
Padamkan api dan masukkan esen vanila dan garam.
Kacau rata dan biarkan sejuk.
Bahan Untuk Biskut Butterscotch:
60 gm mentega
50 gm gula perang (kisar halus)
10gm gula kastor (kisar halus)
1 biji kuning telur
Sos butterscotch (80 gm)
20 gm tepung jagung
1/2 st baking soda
140 gm tepung gandum
40 gm cip butterscotch
40 gm cip coklat
Kacau sebati mentega,gula perang dan gula kastor menggunakan whisk atau hand mixer.
Masukkan kuning telur dan sos butterscotch dan kacau sebati.
Ayakkan tepung jagung, baking soda dan tepung gandum. Kaup balik adunan menggunakan spatula.
Masukkan cip butterscotch dan cip coklat. Gaul sebati.
Sudukan 1 sudu kecil doh dan susun atas dulang yang telah dilenser mentega/ alas dengan baking paper. Jarakkan 1 inch antara biskut.
Bakar dalam ketuhar yang telah dipanaskan dengan suhu 180°C @ selama 15 minit atau sehingga biskut masak.
Sejukkan di atas redai.

Butterscotch chips cookies is suitable not only to be served during festive seasons but also as a delicious snack to munch on. Its buttery and scrumptiously flavored with brown butter, these cookies are as delicious as the chocolate chips cookies.
Butterscotch Sauce Ingredients:
20 gm of butter
40 gm of brown sugar
40 gm of cream(cooking,whipping or heavy cream can be used)
1/2 tsp of vanilla essence
A pinch of salt.
Brown the butter in a saucepan over medium heat. Stir frequently. Then add in the brown sugar and cream. Let the mixture boil and slightly thickened. Turn off the heat and add vanilla and salt. Let the sauce completely cooled.
Butterscotch Chips Cookies Ingredients:
60 gm of butter
50 gm of brown sugar(finely ground)
10 gm of castor sugar (finely ground)
1 egg yolk
Cooled butterscotch sauce (80gm)
20 gm of corn flour
1/2 tsp of baking soda
140 gm of wheat /all purpose flour
40 gm of butterscotch chips
40 gm of chocolate chips
Mix butter,brown sugar and castor sugar until well combine.
Add egg yolk and butterscotch sauce and whisk to combine.
Sift in corn flour, baking soda and wheat/all purpose flour and fold in the dough by using a spatula.
Add in butterscotch and chocolate chips and mix well.
Scoop a teaspoon of the dough and drop it onto a greased baking pan/a baking pan layered with baking paper.
Leave 1 inch space in between the cookies.
Bake in a preheated oven at 180°C for 15 minutes or until the cookies are completely baked.
Let cool on a wire rack.
