Flavor-Packed Chinese Cabbage Chow Fun Noodles

Despite the simple ingredients, stir fry cabbage vermicelli noodle is surprisingly delicious. This is my favorite noodle dish, no one of because I am a huge fan of vermicelli noodles. They have such amazing texture and taste. This recipe is quick, easy, and full of flavors. There is no excuse not to give it a try.
INGREDIENTS
280 grams (10 oz) of cabbage, julienned
200 grams (7 oz) of vermicelli noodles, soak in hot water for 15 minutes
2 tbsp of dark soy sauce (Amazon Link -
1/2 tbsp of oil to coat the noodles
170 grams (6 oz) of skinless pork belly, cut into strips
1-2 tbsp of oil to stir fry
4 cloves of garlic, sliced thinly
1/2 inch of ginger, sliced thinly
2 scallions, dice the white part and cut the green part into 1 inch long stalks
2 tbsp of red dried chilies, cut into short pieces, optional
4-5 pieces of Thai bird eye chilies, roughly diced, optional
2 tbsp of Sichuan Dou Ban Jiang, if you don't eat spicy food, use soybean paste (Amazon Link -

INSTRUCTIONS
Soak the vermicelli noodles in 2 liters of hot water for 15 minutes.
While waiting, julienne the cabbage; slice the garlic and ginger thinly; separate the white and green parts of the scallions; dice the white part of and cut the green part into 1-inch-long stalks; Julienne the pork belly into strips. You can use thick cuts of bacon for more flavors or skip the meat if you are vegan.
Optionally, cut the red dried chilies into short pieces and dice the Thai bird eye chilies.
Drain the noodles thoroughly and season them with dark soy sauce to get the desired brown color. Coat the noodles with vegetable oil to prevent sticking.
Turn the heat to high and heat the wok until smoking hot. Add oil and switch the heat to low. Saute the pork belly until golden brown, and a few tbsp of pork fat is rendered.
Add garlic, ginger, the white part of the scallions, red dried chilies, Thai bird eye chilies, and 2 tbsp of Dou Ban Jiang, and stir over low heat until the oil turns red. If you don't eat spicy food, replace the dou ban jiang with soybean paste.
Add the cabbage and stir over medium heat until the cabbage is welted.
Add the noodles along with 1.5 tbsp of soy sauce. Keep mixing over high heat for a few more minutes.
Before serving, toss in the green parts of the scallion and mix well.

RECIPE (2 servings)
INGREDIENTS:
1/2 small cabbage
5 green onions/spring onions
2 carrots
300g/11 oz noodles (preferably egg noodles)
4 tbsp oil
—sauce—
1.5 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce (regular or vegetarian)
3 cloves garlic grated
1 tsp sugar
2 tbsp water
METHOD:
1. Thinly slice cabbage, carrots and white part of the green onions/spring onions. Slice the green part into 2 inch thick pieces
2. Mix sauce ingredients in a bowl before hand. This will make it easier while stir frying
3. Boil water and cook noodles 2 mins less than the package instructions. The noodles will cook further while stir frying so it’s important to undercook them
4. Strain the noodles and dunk it into cold water or rinse them until they are cold. This helps making the noodles stop cooking immediately. Strain out excess water and coat in some oil to prevent it from sticking
5. Heat a wok/pan on high heat and add some oil. Add the carrots and stir fry for 1 min
6. Next add the cabbage and stir fry for 1 min
7. Next add the white part of green onion/spring onions and mix well
8. Spread the veggies around the wok/pan so they can get a light char. Once the veggies are done, set it aside
9. Next add some oil and stir fry the noodles for 2-3 mins on high heat. This enhances the taste and gives it a wok tossed flavour. Use chopsticks or tongs to mix the noodles so they don’t break
10. Once the noodles stir fried well, add the veggies and mix well
11. Pour in the sauce and stir fry for 2 mins. Taste and adjust salt if needed. Some noodle brands are saltier than others
12. Switch off the flame, add green part of green onions/spring onions and a few drops of sesame oil. Enjoy!

SUBSTITUTES:
• No scallions/spring onions?
Substitute with 1 small regular onion
• No oyster sauce?
Add 1/2 tsp soy sauce + 1/2 tsp sugar
• No dark soy sauce?
Skip it. It’s mainly added for colour. Your noodles will be a lot lighter without it

TIPS:
• It’s important to not add salt to the vegetables. If you add salt they’ll release too much water and turn soggy
• Stir frying veggies on high heat gives it a light char while keeping it crunchy at the same time
• Different brands of noodles have different levels of salt, adjust the sauce depending taste
• Use Chinese brands of sauces for an authentic taste. I use Lee kum kee sauces in this video

200 gr minced meat
1 large onion, diced
Salt
1 tablespoon butter
Grated nutmeg
2 cloves garlic, sliced
1/2 tablespoon butter
1 tablespoon olive oil
200 ml tomato puree
250 ml tomato juice
2 pinches sugar
1 tablespoon vinegar
8 tablespoons beef stock
1 teaspoon oregano
Salt & black pepper
500 gr white cabbage, cut into strips
2 tablespoons olive oil
1 clove garlic, sliced
Parsley, chopped
Parmesan, grated
Black pepper
• Heat a large frying pan on high heat.
• Add the minced meat to the pan and spread with a wooden spoon. But do not stir all the time. Let one side to brown, then stir again. You can also use pork, veal, or lamb.
• Add the onion, turn the heat to low and continue sautéing.
• Stir time to time for about 15 minutes. Minced meat will get perfectly brown, and onions will almost disappear in the pan.
• While cooking, add butter and salt to your taste.
• When cooked, add black pepper, and grate the nutmeg.
• Meanwhile, heat a wok pan, add the olive oil, and sauté the cabbage.
• While sautéing the cabbage, the heat should be high and pan should be large to have crunchiness.
• Add the garlic to increase the taste and continue to sauté.
• Cook the cabbage for around 5 minutes on high heat until they get a brown crisp.
• When cabbage comes to al dente stage take out to a plate.
• To the same pan add butter, garlic, and olive oil.
• Add the tomato puree and juice.
• To reduce the acidity, add sugar and vinegar.
• Add brown stock then season with oregano, salt, black pepper and simmer a bit.
• Pour some sauce to the minced meat and cook a little. If minced meat sticks to the pan, scrub the bottom with a spatula so you won’t waste any amazing flavour.
• Combine the cabbage with minced meat and transfer to the plate.
• Garnish with parsley, grate some parmesan, sprinkle some black pepper and it’s ready to eat.

Hungarian Cabbage and Noodles! Quarantine Cooking!
This Hungarian dish of cabbage and noodles is the ultimate comfort food! Cabbage and onions are sauteed in butter and bacon until caramelized and fragrant, and then tossed with egg noodles. With just a few simple ingredients you can have an amazing meal your family will love.
Cabbage and Noodles
1 head of cabbage
1 onion
6 to 8 slices of bacon
1/2 stick butter
1 pound bag of egg noodles (I use half bag)
Instructions
Cut bacon into pieces and fry in a large skillet until crisp. Remove bacon from skillet and add 1/2 stick of butter along with the fat rendered from bacon. Add chopped onion and cook until tender. Add chopped cabbage and cook until tender and caramelized. Takes about 15 to 20 minutes. In meantime cook egg noodles. I use half of a 1 pound bag which feeds about 4 to 5 people. If you use the whole bag you might want to use more butter. When the cabbage is ready add the egg noodles and mix everything together.
