MoWino's Chicken Cacciatore - with a twist the MoWino way
A Road Less Traveled In The Kitchen! There is no reason that one must follow traditional recipes however they absolutely should inspire. MoWino learned many of her cooking skills from her Grandmother --who followed recipes perfectly. Many of conversational lectures when wee little Mo was in the kitchen with Gran evolved into collaborative artistry of mixing traditional with new and spontaneous spices as MoWino grew! This chicken cacciatore calls for boneless chicken, spicy chicken sausage and pepperoni! Spectacularly delicious -- but not my Grandmas' Cacciatore! That’s Amore – Live Life, Taste Life! Chicken Cacciatore
Ingredients
2 lbs boneless skinless chicken breast cut into chicken tender size (use chicken thighs if preferred)
1 onion, sliced
1 bell pepper, sliced
8 oz mushrooms, sliced
4 garlic cloves, minced
1 teaspoon dried oregano
16 oz canned tomato sauce
1 cup chicken broth
3 tablespoons capers
Directions
Season chicken with salt and pepper. Heat oil in a pan over medium high heat and sear chicken about 2 minutes per side (does not need to be cooked through, will finish cooking with the sauce). Remove and set aside.
Add more oil to the pan and sauté onions, bell peppers, mushrooms and garlic while scraping the bottom of the pan with your spoon or spatula. Season with salt and pepper and cook for about 5 minutes.
Stir in dried oregano, tomato sauce, chicken broth and capers and season with salt and pepper.
Return chicken back to the pan and bring to a boil. Cover and let simmer over medium low for 10 minutes.
